This environment lends our Beaujolais Villages its light structure and remarkable freshness. Vinification : Whole bunches of Gamay grapes are vinified according to a specific method known as the ''Beaujolaise''. Relatively short fermentation vatting periods are followed by several months of maturation in order to refine the wine's structure and enhance its aromatic profile. Tasting : This Beaujolais village is garnet red with ruby tinges. It has an alluring bouquet of red and black fruits. This Syrah is produced from carefully selected wines from the Mediterranean region, renowned for their intense fruit aromas and round structure. Vinification : This wine undergoes direct pressing before being vinified in temperature controlled stainless steel vats. It is aged during 6 months before being bottled immediately in order to preserve its fresh fruit Tasting : Clear and bright colour with red reflections. The nose has little berry notes. Palate: This is a full-flavoured wine with the classic characters of passionfruit, cut grass and hints of peach. These great varietal flavours are perfectly balanced with a clean and crisp feel and a zesty lime finish. Food: The clean, crisp characters of Sauvignon Blanc make it a perfect accompaniment to lighter style dishes particularly seafood and fresh pasta.. Notes: To get the best characters out of the Sauvignon Blanc varietal minimal input from the winemaker is necessary. The fruit was harvested in the cool of the night and then crushed so the juice could be clarified prior to fermentation. The fermentation occurred in stainless steel vats where a selected yeast strain was introduced to further enhance the varietal fruit flavours and aromas. Early bottling ensured the natural freshness of this was captured ready to be enjoyed. Tech: Alc 12.0%

The free run portions of Semillon and Chardonnay were used in this wine to maintain the light delicate floral fruit aromas.
