1 Bourbon Barrel Notes One of the most common questions I get asked is What other bourbons does yours taste like, and how long are you planning to age it? And my most common answer to that is, Give me 5-10 years and then I will let you know! Making whiskey is an incredibly interesting and complex journey, and we are still at the very start of that trip. As you can read below, each barrel we have bottled to date has been different from the others. Sure, there is a consistent pattern emerging as the whiskey going into the barrel is becoming more consistent. But with that we are also beginning to experiment with barrels of varying levels of char and length of time in the barrel. We learn something each time we bottle and apply it to the next barrel we fill. One thing I can tell you is that our goal is to create a very complex and flavorful whiskey, and I think we are on track. You can make the most money in whiskey by filling the barrels at the highest allowable proof (125) and bottling at the lowest possible proof (80). Basically that lets you water it down the most to fill as many bottles as possible. We are doing just the opposite. As we have progressed in this journey, you will see our proof of the whiskey going into the barrel hovering between proof. And our target bottle proof is between proof. We need only a little bit of dilution to adjust to bottle strength, and as a result, a ton of great flavor is captured. If you like the taste a little softer, simply enjoy it over a little ice or with a splash of water. We purposely let this barrel sit for an extra-long period of time and are pleased with its progression. One concern we have had with small barrels is over-oaking the whiskey and for sure that has not happened. We will see what happens with others as they come about! Produced ML and ML bottles. Barrel CHAR 3 We ran an experimental ferment using our regular grain ratios however instead of our normal GW yeast we used the MW malt whiskey style yeast. Half went into the new barrel as bourbon and the other half is still in a used bourbon barrel. If tasting side by side there are minor differences in the flavor profile. However in general the bourbon has a very similar taste to what we normally produce. Some good friends of ours wanted a number of little bottles for their son s wedding, so a few weeks prior to dumping this barrel we all sat around here at the distillery sampling whiskey. We had five barrels ranging from the youngest at 15-months to the oldest at 25-months. In a blind taste test it was this, the youngest, barrel selected. The original whiskey was one of our super clean cuts, taking the sweetest whiskey from two successive runs for this barrel. While young, it s excellent! Barrel #35 - Bottled on August 24 th, 2017 Barrel Filled on July 11 th, 2015 and stored in both store rooms Gallons in the barrel at Proof. Barrel #35 takes the new reign as our oldest bourbon ever to be released. Although we didn t label it as such, it does classify as our first ever straight bourbon and we are excited with how nice it tastes. There is certainly some excellent character in this warm, approachable whiskey, leaving a sugary fragrance in the empty glass. Cheers! Barrel #54 - Bottled on August 12 th, 2017 Barrel Filled on March 4 th, 2016 and stored in the back store room Gallons in the barrel at Proof. Emptied on August 10 th, 2017 after 526 days (17 months) in the barrel Gallons at Proof. Bottled at 88.3 Proof. Produced ML and ML bottles. This barrel was yet another experiment in that we put the whiskey in the barrel at a much higher proof than we normally do. Frankly there was little if any difference in

7 the taste of this one versus the others. Thought maybe there would be, so happy to see that it was consistent! Barrel #78 - Bottled on August 10 th, 2017 Barrel Filled on November 22 nd, 2016 and stored in the back store room. 5.3 Gallons in the barrel at Proof. Emptied on August 9 th, 2017 after 262 days (8 months) in a FIVE-GALLON barrel. 4.4 Gallons at Proof. Bottled at 89 Proof. Produced ML and ML bottles. This was the third of our 5-gallon barrel experiments which we are loving! There is a lot of discussion, pro and con, about using these very small barrels, but so far we are three for three with great results! We are planning to order more of these soon for further experimentation! Barrel #53 - Bottled on August 4 th, 2017 Barrel Filled on February 24 th, 2016 and stored in the back store room Gallons in the barrel at Proof. Barrel #47 was a 2 Char meaning that the level of char on the inside of the barrel was a little less than our standard 3 Char. For comparison, we did a 4 Char which we released on May 12 th (Barrel #49). Both produced very good whiskies with slight differences in the overall flavor. Barrel #73 - Bottled on July 1 st, 2017 Barrel Filled on August 27 th, 2016 and stored in the main storeroom. 4.6 Gallons in the barrel at Proof. Emptied on June 30 th, 2017 after 307 days in the FIVE GALLON barrel. 3.6 Gallons at Proof. BOTTLED AT BARREL STRENGTH. Produced ML bottles. Very similarly to Barrel #72 (see three batches below), this little barrel produced an awesome and rich flavor in a short amount of time. This one seems a touch lighter in color than Barrel #72, but still has a wonderful bourbon flavor which we didn t want to dilute either. Barrel #38 - Bottled on June 28 th, 2017 Barrel Filled on August 26 th, 2015 and stored in both the front and back room Gallons in the barrel at Proof. Emptied on June 27 th, 2017 after 672 days in the barrel Gallons at Proof. Blended to 89 Proof for bottling. Produced ML bottles and ML bottles. Our longest aged release to date, this whiskey has a rich mouthfeel and offers a complexity that the time provided. Our signature high-corn sweetness remains in the whiskey but a greater depth of flavor is certainly present! Barrel #50 - Bottled on June 16 th, 2017 Barrel Filled on January 13 th, 2016 and stored in the back room Gallons in the barrel at Proof. BOTTLED AT BARREL STRENGTH. Produced ML bottles. In the spirit of experimentation, we filled a few small, five-gallon barrels last summer to see what happens. In theory, the smaller the barrel, the faster the maturing process occurs. There is no doubt that after 9-months in this little barrel there is a huge difference. This whiskey is very dark and bears an incredibly deep taste from the barrel. As a result, we chose to bottle this at barrel strength. What a cool taste!!! Barrel #48 - Bottled on June 1 st, 2017 Barrel Filled on December 24 th, 2015 and stored in both the front and the back room Gallons in the barrel at Proof. Emptied on May 31 st, 2017 after 524 days in the barrel Gallons at Proof. Blended to 89 Proof for bottling. Produced ML bottles and ML bottles. Barrel #49 - Bottled on May 12 th, 2017 Barrel Filled on January 2 nd, 2016 and stored in both the front and the back room Gallons in the barrel at Proof. Emptied on May 11 th, 2017 after 496 days in the barrel Gallons at Proof. Blended to 88.8 Proof for bottling. Produced ML bottles and ML bottles. There was a little variance in this barrel as it was a Char 4 barrel meaning that the barrel was charred to a slightly higher degree than our normal Char 3 barrels. When compared side by side with a Char 2 and a Char 3 there was definitely a greater depth of the bourbon character in this one. Barrel #45 - Bottled on February 23 rd, 2017 Barrel Filled on November 11 th, 2015 and stored in both the front and the back room Gallons in the barrel at Proof. Emptied on February 22 nd, 2017 after 469 days in the barrel Gallons at Proof. Blended to 89.2 Proof for bottling. Produced ML bottles and ML bottles. Barrel #44 - Bottled on New Years Eve Day 2016 Barrel Filled on November 4 th, 2015 and mainly stored in the back storage room Gallons in the barrel at Proof.

Like barrel #42 below, which will be similar to many of the upcoming barrels, this whiskey was just as clean yet created a little more depth to the flavor with a little more time in the barrel. Barrel #42 - Bottled on October 29 th, 2016 Barrel Filled on October 7 th, 2015 and stored in the main storage room Gallons in the barrel at Proof. Emptied on October 29 th, 2016 after a little over a year in the barrel Gallons at Proof. Blended to 88.8 Proof for bottling. Produced ML bottles and ML bottles. One of those pleasant surprises what a great and super clean tasting whiskey! When we distilled this batch, we pulled it off the still at PROOF. As a result, this is what we consider a very tight hearts cut resulting in the purest whiskey from the entire run. With only a year of aging, the flavor and feel of the whiskey was fantastic. This particular cut of whiskey is how most of our barrels from this point forward were distilled. Looking forward to seeing how this progresses! Barrel #34 - Bottled on October 13 th, 2016 Barrel Filled on June 24 th, 2015 & stored in both areas Gallons in the barrel at Proof. Recipe 56.5% Corn, 28.2% Wheat, 8.5% Malted Wheat, and 6.8% Malted Barley. Emptied on October 12 th, 2016 at just short of 16 months in the barrel Gallons at Proof. Blended to 88.0 Proof for bottling.

11 Produced ML bottles and ML bottles. As you can tell with the mash recipe above, this one differed quite a bit from our standard high-corn mash. As an experiment, we created this batch as a Wheated Bourbon and it turned out great. Slightly different in the flavor as a result, but like our bourbon and our Old 51 Wheat Whiskey, a very sweet and pleasant taste! Barrel #32 - Bottled on September 28 th, 2016 Barrel Filled on June 18 th, 2015 & stored in both areas Gallons in the barrel at Proof. Emptied on September 27 th, 2016 at just over 15 months in the barrel Gallons at Proof. Blended to 88 Proof for bottling. Produced ML bottles and ML bottles. Compared to other barrels, there was very little loss to the angels share. Any loss is more than we like, but all in all this one wasn t too bad. We did side-by-side blind tasting versus barrel #30 (see notes below) and there was no difference. Very sip-able! Barrel #30 - Bottled on September 14 th, 2016 Barrel Filled on June 3 rd, 2015 & stored mostly in our regular storage room Gallons in the barrel at Proof. Emptied on September 13 th, 2016 at just over 15 months in the barrel Gallons at Proof. Blended to 87.3 Proof for bottling. Produced ML bottles and ML bottles. This batch is one of our standard bourbons if there is such a thing. Using our typical mash bill and aging process, after a 15-month aging it reduced the corn whiskey taste and brought forward a pleasant oak flavor. Barrel #31 - Bottled on September 2 nd, 2016 Barrel Filled on June 6 th, 2015 & stored in our regular storage room Gallons in the barrel at Proof. Emptied on September 1 st, 2016 at just under 15 months in the barrel Gallons at Proof. Blended to 87.3 Proof for bottling. Produced ML bottles and ML bottles. Yet another experimental younger whiskey. We took corn whiskey batches 29 and 33, combined them, and distilled them a 3 rd time. Just like barrel #33, produced a very clean whiskey with a lovely taste at a young age. Barrel #33 - Bottled on August 23 rd, 2016 Barrel Filled on June 20 th, 2015 & stored in our regular storage room Gallons in the barrel at Proof. Emptied on August 21 st, 2016 after 14 months in the barrel Gallons at Proof.

12 Blended to 85.2 Proof for bottling. Produced ML bottles and ML bottles. This was an experimental batch of bourbon using a very small cut of two successive batches of whiskey. The cuts were the sweetest part of the distillation, as we were interested to see how this would mature in the barrel. As anticipated, the flavor of this barrel is quite sweet and a little lighter than others. A cut like we did for this will rarely have the depth of other whiskies, however it also yields a very clean taste! Barrel #25 - Bottled on August 9 th, 2016 Barrel Filled on March 16 th, 2015 & stored in the front and the back of the building Gallons in the barrel at Proof. Recipe 80% Corn, 6.7% each Wheat, Malted Wheat, and Malted Barley. Emptied on August 7 th, 2016 after 16 ½ months in the barrel Gallons at Proof. Blended to 87 Proof for bottling. Produced ML bottles and ML bottles. Barrel #24 - Bottled on July 29 th, 2016 Barrel Filled on March 14 th, 2015 & stored in the front and the back of the building Gallons in the barrel at Proof. Recipe 80% Corn, 6.7% each Wheat, Malted Wheat, and Malted Barley. Emptied on July 28 th, 2016 after 16 months in the barrel Gallons at Proof. Blended to 87.3 Proof for bottling. Produced ML bottles and ML bottles. Barrel #26 - Bottled on July 21 st, 2016 Barrel Filled on March 20 th, 2015 & mainly stored in our regular storage room Gallons in the barrel at Proof. Recipe 80% Corn, 6.7% each Wheat, Malted Wheat, and Malted Barley. Emptied on July 20 th, 2016 after 16 months in the barrel Gallons at Proof. Blended to 85.2 Proof for bottling. Produced ML bottles and ML bottles. The whiskey that went into this barrel went through a unique journey. Due to equipment issues, the whiskey was distilled an additional time because there was a water leak in the cooling condenser during the regular spirit run. We ended up combining batches into this one to be sure it was a quality whiskey going in to the barrel. As a result we notice a bit of a lighter tone to the flavor in this barrel. Barrel #17 - Bottled on July 9 th, 2016 Barrel Filled on November 11 th, 2014 & stored in our production room Gallons in the barrel at Proof. Recipe 80% Corn, 6.7% each Wheat, Malted Wheat, and Malted Barley. Emptied on July 8 th, 2016 after 19 months in the barrel Gallons at Proof. Blended to 86 Proof for bottling. 13 An interesting note about this barrel is that I left it in our main production room, which, while production is running, gets quite warm. The room cools overnight, so this heating and cooling cycle increases the interaction of the alcohol and wood. This batch had a noticeably darker color and a very rich flavor something we hoped might happen by doing so. Hope you get a bottle while it lasts! As you can see by the starting and ending volumes, we lost quite a bit of product during the aging process, mostly due to a pinhole leak in the wood. This happens from time to time because oak is or was a living tree. Part of the fun of whiskey, and this is another great tasting batch! Barrel #19 - Bottled on May 13 th, 2016

The bourbon continues to age and pick up additional character with each one. We are leaving a couple of barrels to age even longer right now (barrels #17 & #18) and will see what they are like in comparison to what we are enjoying in this month range. The journey continues!!! Barrel #16 - Bottled on March 26 th, 2016 Barrel Filled on November 4 th, 2014 & stored in our main storage room Gallons in the barrel at PROOF Recipe 80% Corn, 6.7% each Wheat, Malted Wheat, and Malted Barley. Emptied on March 23 rd, 2016 after 505 days in the barrel (16+ months) Gallons at Proof Blended to 86.5 Proof for bottling Produced ML bottles and ML bottles. Once again this is our oldest barrel to date. As has been our goal, we intend to continue to age our bourbon longer and longer, each time learning something new about it. As this was a little lower in proof in the barrel, we also blended it a little lower in proof for the bottle. Enjoying the progress of each barrel! Barrel #14 - Bottled on February 16 th, 2016 Barrel Filled on October 1 st, 2014 & stored in our main storage room Gallons in the barrel at PROOF Recipe 80& Corn, 6.7% each Wheat, Malted Wheat, and Malted Barley. Emptied on February 13 th, 2016 after 500 days in the barrel (16+ months) Gallons at Proof Blended to 90.0 Proof for bottling Produced ML bottles and ML bottles. This is now our oldest barrel to date, and as they age for longer periods in the barrel, things keep changing for the better. I tend to get a little more of the sweet vanilla notes from the oak, and the complexity remains as well. We are pleased that our experiment of aging at a lower proof if coming along nice. We do not have to water down the whiskey as much to reach bottle strength, leaving a lot of flavor with each pour! Barrel #15 - Bottled on New Year s Day 2016 Barrel Filled on October 21 st, 2014 & stored in the main storage area Gallons in the barrel at PROOF Recipe 80% Corn, 6.7% Wheat, 6.7% Malted Wheat, & 6.7% Malted Barley. Emptied on December 31 st, 2015 after a little more than 14-months in the barrel Gallons at Proof Blended to 90.1 Proof for bottling Produced ML bottles and ML bottles.

15 Barrel #15 was another barrel with a small leak. Unlike other barrels however, this one leaked through the head of the barrel, most likely through a pore in the wood. Most of the time it happens between the staves in the wood, so this was unique for us. Part of the fun of working with natural things! Barrel #13 - Bottled on December 16 th, 2015 Barrel Filled on September 23 rd, 2014 & stored mainly in the production room Gallons in the barrel at PROOF Recipe Mixed Batches primarily with Corn, Wheat, Malted Wheat, & Malted Barley. Emptied on December 15 th, 2015 after nearly 15-months in the barrel Gallons at Proof Blended to 90.0 Proof for bottling Produced ML bottles and ML bottles. Barrel #13 is the oldest of our feints barrels released to date (see the notes below from Barrel #10). I continue to be very excited about the aging process and what happens when time is allowed to influence the whiskey. There is a lot going on sweet stuff! Barrel #8 - Bottled on December 2 nd, 2015 Barrel Filled on September 1 st, 2014 & stored in both parts of the distillery Gallons in the barrel at PROOF Recipe 80% Corn, 6.7% Wheat, 6.7% Malted Wheat, & 6.7% Malted Barley. Emptied on December 1 st, 2015 after 15-months in the barrel Gallons at Proof Blended to 90.2 Proof for bottling Produced ML bottles and ML bottles. Barrel #8 was our oldest release to date and I am very pleased with what the additional few months has done. You might notice that it seems odd that we bottled only a few 750 ML bottles and a lot of the small ones. Almost all of these small bottles are going to be wedding favors for some great friends later this month hope you are part of the wedding because it will be a great gift to receive!! Barrel #21 - Bottled on October 28 th, 2015 Barrel Filled on December 6 th, 2014 & stored in our back room Gallons in the barrel at PROOF Recipe Mixed Batches primarily with Corn, Wheat, Malted Wheat, & Malted Barley. Emptied on October 27 th, Gallons at Proof Blended to 88.8 Proof for bottling Produced ML bottles and ML bottles. Barrel #21 is a feints barrel but this was one of our higher proof in the barrel batches. Frankly it turned out very good which is why it was selected for an early release (just short of 11-months of aging). Barrel #7 - Bottled on September 30 th, 2015 Barrel Filled on August 23 rd, 2014 & stored in our main production area Gallons in the barrel at PROOF

16 Recipe 81% Corn, 5% Wheat, 7% Malted Wheat, & 7% Malted Barley. Emptied on September 29 th, Gallons at Proof Blended to 89.6 Proof for bottling Produced ML bottles and ML bottles. Barrel #7 is the second barrel going over 13 months in the barrel as the whiskey is able to get deeper into the barrel. I probably say it each time but the progress is exciting and we can t wait to open each new barrel as they are ready! Barrel #6 - Bottled on September 18 th, 2015 Barrel Filled on August 14 th, 2014 & stored in our main production area Gallons in the barrel at PROOF Recipe 83% Corn, 3% Wheat, 8% Malted Wheat, & 6% Malted Barley. Emptied on September 17 th, Gallons at Proof Blended to 89.0 Proof for bottling Produced ML bottles and ML bottles. This was another barrel that leaked a bit during storage and also dropped in proof slightly during aging. I thought we might release this barrel a month earlier but decided to let it sit a bit more while we let out some of the feints barrels as you can read below. I did notice a small improvement over that short period of time which is very encouraging as we intend to let many of our barrels get older! Barrel #12 - Bottled on September 3 rd, 2015 Barrel Filled on September 20 th, 2014 & stored in our back warehouse area Gallons in the barrel at PROOF Recipe Mixed Batches primarily with Corn, Wheat, Malted Wheat, & Malted Barley. Emptied on September 2 nd, Gallons at Proof Blended to 90.0 Proof for bottling Produced ML bottles and ML bottles. I continue to be very pleased with the progress of the whiskey in one year, and in particular with these feints runs like Barrel #12 was. Very, very sweet due in part to the corn and wheat (sorry, didn t intend the rhyme!) and I really love the color. One of these bottles is definitely headed home with me! Barrel #11 - Bottled on August 27 th, 2015 Barrel Filled on September 17 th & stored in our main production area Gallons in the barrel at PROOF Recipe Mixed Batches primarily with Corn, Wheat, Malted Wheat, & Malted Barley. Emptied on August 26 th, Gallons at Proof Blended to 90.6 Proof for bottling Produced ML bottles and ML bottles. What is interesting about this barrel is that it had a significant leak during the aging process, right behind one of the barrel rings. A loss of product is normal, but we lost

17 nearly 40% of this one because of the leak. And yeah, the evidence was on the floor below the barrel. Like Barrels #9 & #10, this was also a feints run that made the product and I am really excited about the flavor of the whiskey. What is great is that we learn something from each barrel we release which we can put to our future production. The experiment continues!!! Barrel #5 - Bottled on August 21 st, 2015 Barrel Filled on August 3 rd, 2014 & stored in our main production area Gallons in the barrel at PROOF Recipe 85% Corn, 2% Wheat, 4% Malted Wheat, & 9% Malted Barley. Emptied on August 20 th, Gallons at Proof Blended to 90.4 Proof for bottling Produced ML bottles and ML bottles. Barrel #9 - Bottled on August 9 th, 2015 Barrel Filled on September 6 th, 2014 & stored in our back storage area Gallons in the barrel at PROOF Recipe Mixed Batches primarily with Corn, Wheat, Malted Wheat, & Malted Barley. Emptied on August 8 th, Gallons at Proof Blended to 90.6 Proof for bottling Produced ML bottles. Just like Barrel #10, this was a feints batch which tends to produce a more vibrant flavor. This batch also has a very sweet taste noticeable right away. As with these other early releases, the whiskey at one year gives us some real exciting anticipation of what more time in the barrel will do. That is the real fun in all of this! Barrel #10 - Bottled on July 31 st, 2015 Barrel Filled on September 11 th, 2014 & stored in our back storage area Gallons in the barrel at PROOF Recipe Mixed Batches primarily with Corn, Wheat, Malted Wheat, & Malted Barley. Emptied on July 30 th, Gallons at Proof Blended to 88.4 Proof for bottling Produced ML bottles. This was an experimental batch produced which I have been look forward to since we put it in the cask. Made with feints, which are the products from each distillation that we do not keep as the finished product. Feints are added to each batch we run, contributing more flavor and alcohol, but over time we accumulate enough to warrant a stand-alone batch. Barrel #10 was such a batch, which tends to produce a more flavorful whiskey than a standard batch, and although it was not aged as long as our earlier releases, still offers a very sweet flavor. Barrel #4 - Bottled on July 16 th, 2015 Barrel Filled on July 10 th, 2014 & stored in our back storage area Gallons in the barrel at PROOF Recipe 83% Corn, 4% Wheat, 13% Malted Wheat

18 Emptied on July 15 th, Gallons at Proof Blended to 90.6 Proof for bottling Produced ML bottles. As you will notice with this recipe, this barrel was one of our non-barley experimental batches. I notice a fruitier aroma right away, reminding me of we tested our 100% Wheat Whiskey at nine-months in the barrel. Like Barrel #1, this went into the barrel at a higher proof than Barrels #2 & #3, and as a result requires a little more diluting to reach bottling proof. Oddly enough, I come away with the reminder of a good Canadian Whiskey. Bright, crisp, and clean. Probably because my Brother-in-Law, who is from Welland, Ontario, helped me fill it a year ago! Barrel #3 - Bottled on July 2 nd, 2015 Barrel Filled on June 28 th, 2014 & stored in our back storage area Gallons in the barrel at PROOF Recipe 82% Corn, 5% Wheat, 7% Malted Wheat, 6% Malted Barley Emptied on June 30 th, Gallons at Proof Blended to 89.8 Proof for bottling Produced ML bottles. When compared to the bottles from Barrel #2, I am finding a very slightly lighter taste. I do not think I am sensitive enough to recognize the 0.2 proof lower, so believe this to be a combination of the lower proof in the barrel as well as it being stored in a different location. Both Barrel #2 & Barrel #3 were originally produced from the same batches with the same recipe, so the difference is in the barrel proof and the aging location. Like Barrel #2, this is a wonderful, sweet bourbon! Barrel #1 Bottled on July 8 th, 2015 Filled on June 10 th, Gallons at Proof Recipe 82% Corn, 5% Wheat, 7% Malted Wheat, 6% Malted Barley Emptied on Independence Day Gallons at Proof Blended to 90.2 Proof Produced ML bottles. We expected to leave barrel #1 alone to age indefinitely but decided it was right and ready to go, and because we were selling out of the rest! This barrel sat in our production room throughout the aging process, experiencing hot days during production and then cooling overnight. Like the other barrels we enjoy the sweet flavor from the corn and wheat. Having been a bit higher proof in the barrel than the others, I get more of the candy-like taste as it is slightly more diluted to get to the finished bottling proof. Barrel #2 - Bottled on June 26 th, 2015 Our Very First Barrel!! Barrel Filled on June 27 th, 2014 & stored in the main production room Gallons in the barrel at PROOF Recipe 82% Corn, 5% Wheat, 7% Malted Wheat, 6% Malted Barley Emptied on June 24 th, Gallons at Proof

19 Blended to 90.0 Proof for bottling Produced ML bottles. We are finding it to have a wonderfully vibrant taste, especially for a one-year old whiskey. The color is a lovely deep red/brown and the sweet smell of the corn and wheat is immediately noticeable.
