The Nebbiolo biotype is the ancient Michet that has low production and small compact clusters with a high concentration of polyphenols. Vinification and ageing: The harvest takes place at the beginning of October. Fermentation and maceration with the skins for 10 days. The wine matures in large oak casks (capacity hectolitres) for 2 years

The age of the vines is approx. 60 years. Clover and other grasses are sown on the aisles between the rows of vines, only bordelaise poultice is sprayed. Vinification and ageing: The harvest takes place at the end of September. Fermentation with indigenous yeasts and maceration with the skins for approx days (30% in large oak casks, the rest in steel). The wines from the 5 different vineyards are then blended. Many vines are ungrafted as they resisted to phylloxera. Vinification and ageing: Brief maceration on the skins in steel vats, maturation in oak barriques for 18 months

During finishing in the bottle more complex and warm aromatics develop, such as slight notes of sweet spices and fruit in syrup Flavour: Rich in aromatics, fresh, mineral in the aftertaste Serving temperature ( C): Match with: n/a Average no. bottles/year: 5,000 Grape yield per hectare tons: 6.5 Notes: Vine training system: guyot. Vinification and ageing: Fermentation in steel tanks on the lees for five months. Approximately 20% of the wine ferments and is matured in barriques with bâtonnage for eight months.

This wine is part of a project, together with other seven estates, to provide humanitarian aid and to finance programs in the agricultural sector. Vinification and ageing: Each varietal is vinified separately with micro-vinifications. Maceration on the skins for approx. 5 days. Maturation in barriques.
