2 INTRODUCTORY SOMMELIER CERTIFICATE There are four levels of professional certification offered by the Court of Master Sommeliers and the Introductory Sommelier Certificate is the first level at which all applicants must start. The Introductory Sommelier Certificate Course and Examination is intended for students who are currently working within the hospitality industry, and who are seeking to broaden their theoretical and practical wine skills through a programme of independent study and preparation in the lead up to the programme. It is not intended for those seeking to embark upon a career within the hospitality industry. WHO SHOULD ENROL 4. Applicants who are currently working within the hospitality industry, and who have at least one year s practical hospitality experience. Applicants aged 18 or above who are currently working and residing within the Asia Pacific region. Applicants who are seeking to broaden their theoretical and practical wine service skills through a programme of independent study and preparation. Students who fail to meet the eligibility requirements may have their enrolment cancelled and fees refunded in full. INTRODUCTORY SOMMELIER CERTIFICATE COURSE AND EXAMINATION ELIGIBILITY Applicants must be working and residing within the Asia Pacific region and be aged 18 or above to be eligible to apply. Students who fail to meet the eligibility requirements may have their enrolment cancelled and fees refunded in full. RESOURCES AND PREPARATION The Introductory course is fast-paced and revision-based meaning that considerable study is required in advance of attending. At an absolute minimum, the expectation is that students will undertake at least six weeks of intensive study and preparation. Students who enrol gain access to the Court of Master Sommeliers web portal and course text book Sales and Service for the Wine Professional (4th Edition) by Brian K. Julyan MS. Students are also strongly encouraged to download the syllabus and service standards via our website and use these resources to help guide their studies. COURSE FORMAT The course component is held over the first two days of the Introductory programme. The lectures are presented by Master Sommeliers using PowerPoint presentations interspersed with wine tastings, plus a practical service demonstration. Sun April 7 Tues April 9, 2019 Sun Sept 15 Tues Sept 17, 2019 Fri July 26 Sun July 28, 2019 Time DAY DAY DAY Fees AUD$ (AUD$908 plus AUD$404 GST & Eventbrite processing fee) EXAMINATION FORMAT The examination is held on the morning of the third day of the Introductory programme. The examination is comprised of a multiple-choice theoretical paper plus a short elementary practical service test. The pass mark for each part of this examination is 60%. There is no tasting examination for Introductory level. 02
3 INTRODUCTORY SOMMELIER CERTIFICATE COURSE CONTENT Elementary practices in the vineyard and winemaking procedures. The grape varieties, origins, specific winemaking procedures and classifications for all the major wines of the world. The production, raw materials and flavours of spirits and liqueurs. 4. The technical skills of wine service. 5. The importance of social skills. 6. The fundamentals of matching wines with food. 7. An introduction to the skills of wine tasting. COURSE OUTCOMES Candidates who satisfactorily gain the Introductory Sommelier Certificate will be able to: Explain the factors which contribute towards the quality of wines. Describe the characteristics of the wines from the main wine producing countries of the world. Demonstrate an understanding of the wine classification and control systems in current use. 4. Interpret wine label terms. 5. State the basic ingredients and flavours of apéritifs, spirits and liqueurs. 6. Demonstrate an awareness of beers, saké and other beverages. 7. Demonstrate the correct service of wine and other beverages. 8. Demonstrate a basic competence in selling and matching wines with foods. 9. Identify the requirements of the Advanced Sommelier Certificate. PROGRESSING ONTO THE CERTIFIED SOMMELIER EXAMINATION Applicants who wish to sit for the Certified Sommelier Examination must first pass the Introductory Sommelier Certificate examination. Students who pass the Introductory Sommelier Certificate will then be eligible to proceed onto the Certified Sommelier Examination. Candidates who wish to apply for both Introductory and Certified are required to pay for both levels in full in advance of the course commencing. Successfully registering for the course and paying the examination fees does not guarantee a candidate s place on the Certified programme. Numbers for Certified are strictly limited. First priority will be given to candidates who have previously attained The Introductory Sommelier Certificate. A limited number of places will be made available on the day to candidates who rank highest on the Introductory programme. Candidates will be notified on the day if they are to be offered a place on the Certified programme. Ensuring you have registered for Certified in advance will ensure your place on the Certified programme, if you are amongst the top-ranking candidates on the day. Introductory candidates who do not rank amongst the top scorers on the day will have their fees for the Certified Examination refunded in full. If you wish to apply for both Introductory AND Certified, you will need to purchase Introductory through the Introductory event page, then register for Certified via the Certified event page. Please ensure you select the correct ticket category when making your purchase; either For students who have already achieved Introductory OR For students who have NOT already achieved Introductory. 03
4 INTRODUCTORY SOMMELIER CERTIFICATE CANCELLATION POLICY If an applicant for the Introductory Sommelier Certificate Course and Examination or Certified Sommelier Examination cancels enrolment up to 28 days prior to the day of the course (Introductory) or examination (Certified), the applicant will forfeit 50% of fees paid. Any cancellations received within 27 days of the course or examination in which an applicant is enrolled will forfeit 100% of course or examination fees. If CMS Oceania cancels a scheduled course or examination or declines an application into any one or all examinations for which an applicant has applied for enrolment, applicants will receive a full refund. Any refunds made pursuant to this clause will be credited to the applicant. Enrolments are strictly non-transferrable. If an applicant fails to attend the examination for any level of CMS certification, fees will be forfeited in full and cannot be credited towards enrolment for a future course or examination, without exception. 5 CERTIFIED SOMMELIER EXAMINATION The Certified Sommelier qualification is the primary certification for Sommeliers and beverage professionals in the hospitality industry and is intended to provide a meaningful qualification for the working Sommelier. The examination will recognise beverage professionals whose knowledge, skills and demeanour are worthy of the title Certified Sommelier. WHO SHOULD ENROL Applicants who are currently working within the hospitality industry, and who have at least one year s practical hospitality experience. 4. Applicants aged 18 or above who are currently working and residing within the Asia Pacific region. Applicants who are seeking to broaden their theoretical and practical wine service skills through a programme of independent study and preparation. Students who fail to meet the eligibility requirements may have their enrolment cancelled and fees refunded in full. CERTIFIED SOMMELIER EXAMINATION OBJECTIVES To create a minimum standard of service and knowledge for the hospitality industry. To provide successful candidates with credentials to show employers their skills have been evaluated at a high level of proficiency by the leading authority on beverage service the Internationally recognised Court of Master Sommeliers Worldwide. To create a certification that provides all successful candidates with a sense of accomplishment while providing the most dedicated students an opportunity to further their education and skills at the Advanced and Master Sommelier levels. RESOURCES AND PREPARATION Considerable study is required in advance of attending the Certified Sommelier Examination. At an absolute minimum, the expectation is that students will undertake at least six weeks of intensive study and preparation. The best resources for preparation are the Court of Master Sommeliers web portal and text book. Students who enrol gain access to the Court of Master Sommeliers web portal. The text book Sales and Service for the Wine Professional (4th Edition) by Brian K. Julyan MS is provided as part of Introductory fees only. Students are also strongly encouraged to download the Syllabus, Service Standards, Certified Examination Tasting Grid and Deductive Tasting Grid via our website and use these resources to help guide their studies. 6 CERTIFIED SOMMELIER EXAMINATION EXAMINATION FORMAT The Certified Sommelier Examination is comprised of three parts: Short written theory paper of 40 multiple choice and short answer questions. Tasting test consisting of two wines tasted blind and answered on a Tasting Grid. Practical service test. The pass mark is 60% in each section. All three sections must be passed together. The theory paper is marked at a higher level than the Introductory Sommelier Certificate examination. Candidates successfully passing the examination will receive a certificate and lapel pin. PROGRESSING ONTO THE ADVANCED SOMMELIER CERTIFICATE Students who pass the Certified Sommelier Examination will then be eligible to proceed onto the Advanced Sommelier Certificate. The Advanced Sommelier Certificate is intended for persons with extensive wine service experience, who wish to develop their knowledge and service skills to a higher level. Prospective candidates should be aware that the level is significantly higher than the Certified Sommelier examination and that it is therefore necessary to carry out considerable study in preparation for this course. Students who are considering proceeding onto higher levels of certification from the Court of Master Sommeliers are advised that a twelve-month break is required between passing the Certified Sommelier Examination and applying for the Advanced Sommelier Certificate. CANCELLATION POLICY If an applicant for the Introductory Sommelier Certificate Course and Examination or Certified Sommelier Examination cancels enrolment up to 28 days prior to the day of the course (Introductory) or examination (Certified), the applicant will forfeit 50% of fees paid. 7 ADVANCED SOMMELIER CERTIFICATE The Advanced Sommelier Certificate course and examination is intended for persons with extensive wine service experience, who have previously passed both the Introductory Sommelier Certificate and Certified Sommelier Examinations. This programme is intended for students who wish to develop their knowledge and service skills to a higher level and who can commit to undertaking significant study and preparation in the lead up to the programme. WHO SHOULD ENROL Applicants who are currently working within the hospitality industry; and who have passed both the Introductory Sommelier Certificate and Certified Sommelier examinations. Applicants who are seeking to broaden their theoretical, practical and wine tasting skills through a rigorous programme of independent study and preparation in the lead up to the examination. First preference will be given to applicants who are currently working and residing with the Asia Pacific region and applicants must be aged 18 or above to apply. Applicants who fail to meet the eligibility requirements may have their enrolment cancelled and fees refunded in full. RESOURCES AND PREPARATION The Advanced course is fast-paced and revision-based meaning that considerable study is required in advance of attending. At an absolute minimum, the expectation is that students will undertake at least two to three months of rigorous study and preparation. Students who enrol gain access to the Court of Master Sommeliers Advanced web portal, which should be used in conjunction with the Syllabus, Service Standards, Certified Examination Tasting Grid and Deductive Tasting Grid which are available via our website. COURSE FORMAT The Advanced programme is conducted over five days, with the first two and a half days devoted to course work. The lectures are presented by Master Sommeliers using PowerPoint presentations interspersed with several wine tastings, plus a practical service demonstration. EXAMINATION FORMAT The final two and a half days of the programme are devoted to the examinations ADVANCED SOMMELIER CERTIFICATE COURSE AND EXAMINATION Sun Sept 15 - Thurs Sept 19, 2019 TIME DAY DAY DAY DAY DAY FEES AUD$2, (AUD$1980 plus AUD$88.21 GST & Eventbrite processing fee) The Advanced Sommelier Certificate examination is comprised of three parts: Theory paper of 24 multiple choice questions and 60 short answer questions. Practical tasting of 6 wines tasted blind in 25 minutes. Practical Service test. The pass mark is 60% in each section. All three sections must be passed together. 07
8 ADVANCED SOMMELIER CERTIFICATE COURSE OUTCOMES Candidates who satisfactorily gain this certificate will be able to: Discuss, recommend and serve aperitifs, spirits and liqueurs, displaying a sound knowledge of the products. Select, prepare and position glassware necessary for the service of drinks in the lounge, restaurant, function room or private suite. Present, offer, prepare (decanting where necessary) and serve wines, demonstrating a high degree of efficiency and proficiency. 4. Discuss menu content and wine lists, recommending wines to accompany food, displaying a sound knowledge of the products, their vintages and characteristics. 5. Handle queries and complaints with skill and diplomacy. 6. Demonstrate a sound knowledge of Beverage Management including an ability to train beverage servers. 7. Demonstrate an ability to sell. 8. Orally describe the characteristics of wines. 9. Analyse classic styles of wine, identifying where appropriate, grape varieties, country and district of origin, vintage and quality level. PROGRESSING ONTO THE MASTER SOMMELIER DIPLOMA Students who pass the Advanced Sommelier Certificate will then be eligible to apply for the Master Sommelier Diploma, after a two-year period has passed. The examination is similar in format and content to that of the Advanced Sommelier Certificate examinations, comprising examinations in Theoretical Knowledge, Practical Tasting and Practical Service, except knowledge which is tested by oral questioning. The pass mark for each of the three sections is 75%. A candidate passing one or two parts of the Diploma may retake the other part or parts in any two examinations during the following two calendar years. After this period, all three parts must be retaken. Throughout the examination, the candidate must exhibit an exemplary standard of both technical and social skills, demonstrating the courtesy and charm of a Master Sommelier plus an ability to sell. Examinations are held annually in the UK, Europe and the USA. CANCELLATION POLICY If an applicant for Advanced cancels enrolment up to 56 days prior to the commencement of the course, the applicant will forfeit 50% of Advanced course and examination fees. Any cancellations received within 56 days of the scheduled start date of the course in which an application is enrolled will forfeit 100% of their course and examination fees without exception. If CMS Oceania cancels a scheduled course or examination or declines an application into any one or all examinations for which an applicant has applied for enrolment, applicants will receive a full refund. Any refunds made pursuant to this clause will be credited to the applicant. Enrolments are strictly non-transferrable. If an applicant fails to attend the examination for any level of CMS certification, fees will be forfeited in full and cannot be credited towards enrolment for a future course or examination, without exception.
