HIGH-GROWTH COMPANION TO YOUR EXISTING HOT FOOD PROGRAM With everyone s busy schedules, people are looking for quick and satisfying meals for themselves and their families. Of course, your hotfood program isn t operating 24-7, so offering grab-n-go purchases of menu items right out of a cold case makes perfect sense for your customers anytime during store hours. They can easily pick up their favorite chilled, fried chicken, fish, and sides to warm up and eat at home. For many of us, chilled, fried chicken is a treat all by itself. What would $100/day in cold case sales mean? Consider these simple facts: At a gross margin of 40%, $100/day in cold case sales will produce $14,600 in incremental gross profit annually. A 5% reduction in waste can generate savings of over $9,000/year When you roll out a cold case strategy, your staff will be more likely to keep the hot case fully merchandised with hot, fresh products. That s very good for your customers. Then, your staff can easily pull any item from the hot case that is approaching its freshness limit and repurpose it for the cold case. That s very good for your bottom-line; a win-win scenario. POINT CUSTOMERS PAYING WITH SNAP CARDS DIRECTLY TO YOUR COLD CASE Participants of Supplemental Nutrition Assistance Programs (SNAP) are NOT eligible to purchase items out of your hot case, but those same items chilled and repurposed for a cold case are absolutely eligible! SNAP users can take these fully-cooked foods home to easily warm and serve them for delicious family meals. Depending upon the state, these assistance programs go by various names LINK and EBT to name a few. This is one more reason why it is so important to keep a full, organized and presentable cold case. Whether your customers are SNAP users or not, their purchases out of your cold case will drive up program sales, reduce waste and increase profits in a big way.

PREPARATION STEPS FOR COLD CASE SALE 1. Prepare and cook Champs Chicken products as indicated by Champs Chicken procedures (or remove product from hot case prior to exceeding shelf-life). 2. Product must be cooled below 40 F before it can be placed into packaging for resale: Take product directly from fryer or hot case and place on sheet tray(s) in single layer. Put product into cooler for a minimum of 6 hours and a maximum of 24 hours to cool below 40 F. Once product is below 40 F, as indicated by checking internal product temperature, remove from refrigeration. 3. Place refrigerated Champs product into suggested container. Add Champs dipping sauce when applicable, and close lid. 4. Place Champs ingredient label on lid of container. 5. Price and date (four days from today) product and put in cold case for retail sale. Ensure product is properly rotated utilizing First In/First Out (FIFO). 6. Check all product already in cold case to ensure it does not need to be removed and used for daily special or discarded.
