Formal Loaded Bowtie Salisbury Pasta Steak with Sausage with Gravy, and Quinoa, a Green and Salad with Home Summer Made Squash Vinaigrette (for 2) (for 4) 1 2 Begin by washing the mushrooms. Cut off the top of the onion, and then half the onion. Slice 1/4 from the root end to the end of the onion in strips. Make each strip approximately 1/4 inch wide, not cutting through the root. Now, slice the root end off your onion, it is now julienned! Finely chop 1/8 of the remaining 1/4 onion. Refrigerate remaining 1/2 onion for another meal. 3 4 Add 1/2 tablespoon olive oil to a frying pan with a lid. Add the mushroom slices (not diced mushrooms) and julienned onions (not the diced onions) to the frying pan and cover with a lid. While these sauté, move on to preparing your meat. Add 1 cup beef broth and 1/2 5 6 cup quinoa to a pan with a lid. Stir and bring this to a boil, after which, reduce heat to low and simmer for 15-20 minutes covered, with a lid on. In a mixing bowl, mix 1/2 cup whipping cream, 1/2 cup water, and 1/2 tsp roasted beef base and set aside. Cut the ends off of the mushroom stems. Slice 2 1/2 of the mushrooms and dice the remaining 1 1/2 mushrooms. Keep diced and sliced mushrooms and onions separate. Cut the ends off the zucchini and yellow squash and then slice them into 1/2 thick slices. In a mixing bowl add 1/2 pound ground beef, 1 egg white, 1/2 Tbs. Worcestershire sauce, 1/2 tsp salt, 1/4 cup bread crumbs, 1 Tbs. blue cheese, 1/8 diced onion, and 1 1/2 diced mushrooms. Mix thoroughly either with a utensil or your hands. Turn heat to medium high & brown both sides of the meat. This is just searing the Salisbury steaks, not cooking them and should take only 3-5 minutes. 7 Once Salisbury steaks are browned, reduce heat to medium. Add mixture of whipping cream, water, and roasted beef base to the Salisbury steak pan. Return sautéed onions and mushrooms to the frying pan also. Simmer this for 10 minutes without a lid. Flip the steaks and simmer for another 5-10 minutes until meat is cooked through with no pink or internal temp of 160 deg. 8 While the Salisbury steaks are simmering, cook the zucchini however you would like. A couple of suggestions are a double boiler pan, steamed in a pan, or even in a covered dish in the microwave with 1/4 cup water for 8-10 minutes. Top with 1/2 Tbsp. butter. After removing the steaks from frying pan, thicken the gravy if necessary with up to 1/2 Tbs. flour. Serve and enjoy your Delicious Family Dinner!
