A message from the Governor.. Greetings, As we head into the holiday season and, of course, snowbird season we will be greeting our seasonal friends from the North and getting even busier at the Lodge. Given that, please consider volunteering to help out at the Lodge when you can. There is definitely something for everyone to do and those that have been working hard for the past year are a bit tired and surely could use some relief. I have been hearing quite a bit of concern regarding the progress on the Tiki Bar reconstruction. As many of you know from personal experience the wheels of reconstruction do not always happen as quickly as we would like. Be assured that we are still working on it. While it may seem that it should be a simple thing to put up a new Tiki that is unfortunately not the case. We need to make sure that we cross all of our T s and dot all of our I s so we do not get into trouble with the building department. We are currently waiting on a survey (required to move forward) of the property. I would like to thank Reece Surveying on Big Pine who response when I asked them to do a survey was as follows: Since the Moose provides so much for this community throughout the year, Reece and Associates will provide a survey for free. A big thank you to Kris and everyone at Reece for donating their time and efforts to getting this moving forward. The survey should be completed shortly and then we will go out to bid to the Tiki contractors. Please be patient and we will get this done. Everyone be safe during the holidays and every day. The Big Pine Key Moose Lodge extends our sincere welcome and we all look forward to renewing friendships with our winter visitors that we have missed since last year. Kudos to Ray Fries for his time and efforts to make the needed repairs to illuminate our flag and our Lodge sign. WOTM Chapter meetings: November 7, 21 LOOM and WOTM joint meeting: November 20 District Meeting: November 18 - Key West LOOM Lodge and WOTM Chapter meetings start at 6:00 p.m. District Meetings start at 1:00 p.m. Mrs. Moose Recipe of the Month Scaloppini with Lemon Caper Sauce 4 thin boneless pork loin chops 1/3 cup white wine 1 1/2 tablespoons olive oil 1/2 cup flour 2 tablespoons capers, drained 1 1/2 tablespoons lemon juice 3 tablespoons butter 1/2 teaspoon each salt and pepper Pound the chops to 1/4 inch thin between layers of plastic wrap. Mix together flour, salt and pepper. Lightly dredge the chops and shake off any excess. In a large skillet over medium heat, add the oil and 1 tablespoon of butter. Cook the chops 1 minute on each side or until golden brown and transfer to a warm plate. Wipe out the skillet. Heat a tablespoon of butter in skillet. Add the capers, wine and lemon juice. Allow to reduce for 2 minutes before adding the final tablespoon of butter. Whisk to incorporate and remove from the heat. Serve with sauce over the chops. Mrs. Moose serves this with roasted and buttered new potatoes. 5
