& tradition Innovation Before the pizzas are conceived, the dough is proven for up to 72 hours; the slow and natural leavening encourages a light and airy pizza base that benefits from being easy digestible. in crust we trust Tradition and innovation guide us in what, we believe, is the rediscovery of pizza. Light and crispy, crunchy and soft, fresh and easy to digest, are just some of the traits that set us apart. Our «know-how» has allowed us to create a new way to conceive pizza. The low oil content, compared to traditional pizzas, and the high water content in the dough, reduces the calorie content, and allows the product to be low-fat and low in calories. Once the dough has risen, it is first cooked in high temperature ovens and then crystallised thanks to the innovative freezing technology using liquid azote. With this modern process, the dough remains unchanged and preserves its organoleptic character. Once thawed, it takes only 2 minutes and 30 seconds at 380 C in a refractory oven to finish cooking...
