SakéOne is America s first commercially successful craft saké producer and complements its own premium products with a growing portfolio of fine Japanese saké imports. It is the only saké company in America that is both a craft saké brewer and fine saké importer. Its Oregon craft saké brands Momokawa, Moonstone, and g saké are joined by import brands Hakutsuru, Murai Family, Yoshinogawa, Kasumi Tsuru, Kibo, SakéMoto and Tombo. SakeOne s growing portfolio of brands are distributed throughout North America, Latin America, the Caribbean Islands and Europe. An industry leader committed to saké education at the wholesale, retail and consumer levels, SakéOne is focused on expanding the enjoyment of premium saké in the United States. In 1992, Momokawa Sake, Ltd. was established as a joint venture between Frost International Group Inc. and Momokawa Brewing Inc. of Japan. A year later, the name was changed to The Japan America Beverage Co., focusing on importing saké from Japan for the U.S. market. What started as a saké importer, soon became a saké-making business once it became apparent that saké-brewing in Oregon was possible and there was a market for American craft-brewed saké. SakéOne s founder chose Oregon because he believed that the best quality water for saké brewing was located in the Northwest, specifically on the east slope of the coast range in Forest Grove, Oregon. The company changed its name to SakéOne in 1996 to reflect the goal of becoming the number one saké company in America and in 1997, the construction of the Kura was completed. The first brewed bottles under the Momokawa and Moonstone labels were released the following year. Between its three craft-brewed product lines (Momokawa, Moonstone and g), SakéOne has won more awards than any other saké company in America and continues to strive for innovation in creating the best quality saké for its consumers. Throughout its evolution, SakéOne has continued its dedication to importing some of the finest Japanese made saké. Today, SakéOne is the exclusive importer of saké from six different saké producers representing many of Japan s acclaimed saké-producing prefectures.

On March 11th in 2011, an earthquake causing a large tsunami hit the Rikuzentakata City, destroying the Suisen Kura. With the help of the Japanese government, the Kura was reconstructed in 2012. Suisen believes it is their mission to stick to their discipline to continue its history for the victims of the tsunami. SAKÉ TERMINOLOGY Saké Categories Saké categories are guidelines intended to define quality and set an expectation for saké in the marketplace. BASIC PREMIUM SUPER PREMIUM ULTRA PREMIUM FUTSU-SHU: Basic saké that does not have to be made from premium grade rice and does not have a special milling requirement. Futsu generally has more added alcohol than does the Honjozo style. HONJOZO: Brewed with any level of added alcohol. A Ginjo or Daiginjo that does not also state Junmai is most often a Honjozo. These sakés have varied amounts of added alcohol used to enhance flavor and/or aroma and are typically very good in quality. JUNMAI: Pure saké, made from only rice, water, yeast and Koji. To carry the Junmai name the saké cannot have anything added to it. No alcohol, fruit, flavor, nothing. Junmai does not have a legal milling rate required but the rate must be included on the label. GINJO: Made with rice polished to at least 60% and has a varied level of added alcohol. JUNMAI GINJO: Pure saké made with rice polished to at least 60% with no added alcohol. DAIGINJO: Made with rice polished to at least 50% and has a varied level of added alcohol. JUNMAI DAIGINJO: Pure saké made with rice polished to at least 50% with no added alcohol. Saké Styles Genshu: Undiluted, full strength saké. Most saké are diluted to 14% - 15 % alcohol but Genshu have no added water. They are typically heartier in flavor, body and around 18% - 20% alcohol. Karakuchi: Dry saké. Kimoto: A process of creating a yeast starter brew by using an ancient and labor-intensive mixing and aerating technique. Nama: Unpasteurized saké. Most saké is pasteurized either once or twice before shipping. Nama Chozo: Saké that has been stored as Nama and then pasteurized just once before bottling. Namazume: Saké that is bottled as Nama with but will be pasteurized in the bottle. Nigori: Cloudy saké. Only partially filtered/pressed to retain some of the rice sediment that provides a rich creamy style depending on the degrees of filtration and pressing. Tokubetsu: A special designation that often means special rice or polishing has occurred but sometimes simply means the brewer has designated the saké as special. RICE POLISHES Unpolished rice Junmai: There is no legal polish requirement for Junmai, but most are polished to 70-75% like in the photo above. SakéMoto, Murai Family Tanrei, and Yoshinogawa Echigo are just a few examples of SakéOne Junmai import saké. Ginjo: Polished to at least 60%, all Momokawa, Moonstone, and g saké are Ginjo grade. Daiginjo: Polished to at least 50%, which defines super premium level saké. Murai Family s and Yoshinogawa s Daiginjo are examples of SakéOne Daiginjo import saké.
