Other food service RESTAURANTS / FOOD SERVICE CRITERIA: American Restaurants: The criteria used to classify American restaurants included locations that offered a variety of foods that were not ethnic, but comprised different styles and meals. These included juice bars, bistros, steak houses, ices, barbecue, cafes, bistros and general restaurants. American restaurants were classified as such in that they generally specialized in the service of one or two meals, had limited hours of service, offered sit-down food service, and American fare. Burgers: A food service venue was classified as a burger restaurant if the majority of sales or it s main focus is hamburgers. Criteria includes expanded hours of service, limited menus, fast food venues, and counter service. Coffee Shops: The criteria used to classify coffee shops were venues that primarily focused on serving coffee or tea beverages, offered seating, and served limited meals. Coffee shops were determined to be open during morning and afternoon hours, but did not serve dinner. Diners: The criteria used to classify diners were restaurants which generally were open around the clock, offered sit-down meal service, had extended menus, had counter seating and served all meals at all hours. Donuts Shops: The criteria used to designate a food service location as a donut shop included a high percentage of sales based on donuts, the availability of sit-down service, the availability of a food service counter, and around the clock food sales. While small meals are available, the majority of sales are donuts.
