Begin by peeling one carrot and then slicing it. You may enjoy these more if you also slice the larger carrot down the middle, making smaller bite size slices. Next slice the celery similarly. Peel the red onion and remove the root end. dice the onion as shown. Cut away any brown or questionable parts of the three medium red potatoes and dice the potatoes into bite size pieces. We recommend no larger than 3/4 square pieces. 3 4 In a stock pot and using kitchen scissors, cut the bacon into small pieces. Start the bacon off by itself over medium high heat. When about halfway done, add all of the celery and rounded 1/4 cup red onions and continue cooking until bacon is crisp and onions are translucent. 5 While the carrots and potatoes are 6 cooking, add the Red Lobster Cheddar Bay Biscuit mix to a mixing bowl.
