The Bread The bread we use in our Tofu Burger and Egg Sandwich is sourced from a local bakery that specialises in homemade healthy choices. Ingredients: Oats, cashews, flaxseeds, pumpkin seeds, sunflower seeds and sesame seeds. Sprouted Bread The sprouted bread found on our Menu is European imported which follows traditional techniques of German bread preparation. Ingredients: Whole kernel rye, whole oat flour, water, sunflower seeds, wheat germ and salt. Home-Made Muesli Our homemade muesli is made fresh in-house using the healthiest ingredients with no refined sugars and colours. Ingredients: Organic Oats, almonds, cashews, pumpkin seeds, sunflower seeds, honey, cinnamon, coconut oil, vanilla extract, dried raisins, dates, flaxseeds. Yoghurt & Feta Cheese We serve Organic Greek Yoghurt which is sourced from a local Greek restaurant on the island who prepare their own yoghurt. The Feta Cheese is made from Goat s Milk which is more easily digestible by the body. It is preserved in brine and salt, rather than canola oil or nasty pro-inflammatory vegetable oils! Eggs Our eggs are local duck eggs, unlike the heavily factory farmed chicken eggs in Thailand. Nuts & Seeds All our nuts and seeds are raw, organic, with no preservatives and chemicals making them super nutrient dense. Home Grown Herbs & Vegetables We use a number of herbs and vegetables in our restaurant that are sourced from our home garden. This ever-expanding garden is producing organic, pesticide and chemical-free fresh produce. Also a number of our store-bought fresh produce used are organic or pesticide free. For more details of what is growing in our home garden please ask our Health Managers. Cooking Oil We use only 100% organic cold-pressed virgin Coconut oil in all our cooking. Most vegetable oils (canola, sunflower, soy etc) become highly unstable when heated to high temperature, their molecular structure changes and becomes toxic and pro-inflammatory. Coconut oil is one of the most stable plant based oils available, therefore it wont contribute to inflammation. It is truly one of the best oils to cook with, plus it gives an extra taste to your food.
Salt Salt in its natural form should have a balanced proportion of all the trace minerals necessary for body functions. However not all salt is equal. Most commercially available table salt is highly refined and has imbalanced ratios of mineral. This makes it very difficult for the body to assimilate and creates inflammation. Furthermore, manufacturers of refined table salt frequently add anticaking agent, which contains aluminium. This has some very serious effects and has been identified as a neurotoxin. Our kitchen uses only natural, unrefined Himalayan Pink Salt, which is one of the best quality salts available. Sweeteners We use only 100% raw local Thai honey in our dishes. We also have organic coconut sugar as a vegan alternative. If you are Vegan please ask the Chef to use coconut sugar as a replacement for honey. Base Sauces & Dipping Sauces All our dipping sauces are prepared in-house using only natural and healthy ingredients. Our base sauces have been selected to ensure they do not contain MSG, additives and preservatives. All our store bought staple sauces contain NO wheat & gluten. Most of our homemade sauces contain honey, if you require vegan options please ask the chef what can be made without the use of honey. Green Superfood Powder Nourish your body with our organic green superfood blend. Great in smoothies and juices. The Organic blend contains: Wheatgrass, Barley Grass, Chlorella & Spirulina. VEGAN? Most of our dishes can be modified to accommodate vegan requests. If you would like to know whether a dish can be prepared vegan, please speak to the Chef about omitting/replacing some of the ingredients. GLUTEN FREE? Our kitchen does not specialise in gluten free cooking, however most of our dishes do not contain ingredients that use grains. If you have a serious intolerance to wheat/gluten please advise the Chef so we can better advise you on available options. DAIRY FREE? Only a few of the dishes on our menu contain dairy, if you would like to omit the dairy products we would be happy to accommodate for that.
