February 2016 THE SCOOP I trust this newsletter finds that everyone is back in full swing for the second semester of the academic year. After a relatively quiet couple of weeks in early January, it is great to see the Campus once again full of energy. Many times on a college campus we often talk about student retention from semester to semester and year to year. The Dining Services mirror those thoughts when we look at meal plan counts. Currently, the Dining Services has 1,736 students on meal plans for the second semester. This is down from our first semester number of 1,881. This shift equates to a 92.3% retention rate for the academic year. Currently we are up 31 meal plans vs. prior year second semester. A new POS system was implemented over the semester break. The old POS system was at the end its equipment life and no longer was going to be supported so the decision was made to move to Sequoia. The new Sequoia system will position the University and Dining Services to continue to deliver great options for our customers. One of the big pieces will be the capability for customers to order food online. Many hours of planning, preparation and training were put in during the months of November and December to ensure the system would be ready for the second semester. Once a few minor issues are resolved the system will position all of us for many years to come. The Dining Service team has many great promotions and events planned for the second semester. The team certainly takes pride in what they do and are eager to share some of the great things going on in their respective areas. Enjoy the newsletter! Carroll University Resident Dining Chartwells Dining Services would like to wish our guests a warm welcome back and the best of luck for the spring semester. We have lots of great things planned for this semester so be sure to check Facebook, Twitter and Instagram for all the latest events, sales and news. We would like to thank all of those who made Gert s 90 th Birthday surprise a huge success, we are truly grateful for the wonderful Carroll community who is a great partner with us. The Main Dining Room will be busy during the month of February beginning Sunday, February 7 th with a special Super Bowl dinner. Come enjoy all your favorite game day foods and watch the game on the TV s around the. On Monday, February 8 th we will celebrate the Lunar New Year or Chinese New Year. Start the year of the monkey with a special themed lunch. On Tuesday, February 9 th we will have a Mardi Gras party, bringing New Orleans to Carroll University. Beginning Wednesday, February 10 th we will offer fish on Ash Wednesday and every Friday until Easter. Valentines Day is right around the corner, be sure to check out the wonderful mason jars, chocolate dipped strawberries, and big heart cookies for those you love. We will also have decorate your own cookies on Friday, February 12 to share the love of the holiday. On February 17 th the will bring Greece to Carroll University with a special Your Region Your World menu. Also on February 25 th we will celebrate National chili day. We look forward to all the exciting events February has in store for us.

Catering First of all, Happy New Year from all of us at Chartwells Dining Services to all of you at Carroll University! On Wednesday January 13, President Doug Hastad held his Opening Remarks session to welcome back all of the Faculty & Staff. Our support from the culinary side, offered a very well received Breakfast Buffet which featured Breakfast Burritos Made To Order. These consisted of scrambled eggs (with or without breakfast sausage), sauteed onion & peppers, shredded cheddar cheese, salsa and sour cream. To accent this, side dishes of tater tots and mini muffins were also on the menu, along with Orange juice, coffee, hot tea and ice water. The most popular item on the Buffet was a Create Your Own Yogurt Parfait. This consisted of assorted fresh berries, vanilla yogurt and low fat fruited granola. Many people don t realize this, but we can perform this Healthy Choice offering for any event! We re happy to make suggestions when planning an event with all of our clients! Whether we offer an array of culinary fare that already exists within our Catering information or perhaps we help our client to create that special event. This is what we specialize in and we look forward to having the opportunity to work with each and every one of you! On Sunday February 7 th, we will host our annual Super Bowl Party which includes snacks, cake, fruit infused water and raffle prizes. Grill Nation will be offering North Carolina s Pulled BBQ Pork sandwiches, Mini Corn dogs and jalapeno poppers. 2.Mato will be offering nachos with all of your favorite fixings, Philly cheesesteak pizza and assorted wings. Red Mango will feature Coffee Chillers that come in mocha, vanilla and caramel. Also in Red Mango we will offer create your own parfait with three toppings. February also marks the start of lent and Grill Nation will offer a fish fillet sandwich. Top off your sandwiches with Swiss or Colby Jack, the LTO cheese for February. Red mango will be offering chocolate covered strawberry, dairyfree raspberry, and banana cream pie just to begin with. Need a boost? Red Mango will off Free Boost Fridays from 1-4pm with any smoothie. 2.Mato will be offering Buffalo Chicken Pizza, A la Greco and Just Veggin Pizzans. We will also have a clam chowder on Fridays.
