The palate is powerful yet with a creamy consistency. With a trace of water the peat reek is gentled, allowing the more complex flavours of citrus fruits and spices to come through. A slight tang comes from the European Oak balancing the creamier American White Oak. Gentle coffee cream and freshly sliced vanilla pods, building into sweet mint with notes of old hay and a background of beach bonfire then freshly sanded wood. The colour is deep mahogany. The nose is rich and smoky with seaside minerals with a hint of ash and bitter chocolate drops. Vanilla follows with oily unroasted chestnuts and a hint of fudge with a malty sweetness. A drop of water adds a creamy clotted cream note with fruit appearing in the form of unripe citrus in a flan glaze. The palate is richly peaty with a spicy chili bite. A short dry finish and a long sweet aftertaste. Bright red gold colour. At bottling strength the aroma seems quite closed giving only a rich, sweet scent but a touch of water releases all the multitude of different flavours. The initial sherry sweetness is quickly followed by the timehonoured Islay peat tang. After this opening burst of flavour there is a smooth fruit ripeness that complements the tang of salt in the background. The burst of peat that fills the mouth is quickly restrained by a sherry sweetness that slowly develops into spicy apple fruitiness. A fabulous 25 YO Laphroaig, and an official bottling too. This stuff is at natural cask strength, and it's a huge whisky with loads of character. Very long and warming leaving a distinct tang of Islay. Dark Origins is inspired by the cunning spirit and courageous personality of Highland Park s infamous founder, Magnus Eunson. This latest addition to the core expressions uses twice as many first fill sherry casks than in the classic Highland Park 12 YO resulting in a naturally darker, richer flavour. Valkyrie is the first of Highland Park s new Viking Legend series. Richer than the 10 and 12 YO, the emphasis is on rich spice and aromatic smoke, with plenty of heather-rich Orkney peat. The result is a smooth elegant and rich whisky. Truly Wayne s whisky. 9 The Beverage Baron 16759 Liquormen's 750 $34.17 Traditional Canadian rye spices, ginger, green apples, maple, and light smoke. It s light up front, pleasantly sweet but not overly sweet, green apple skin, and soft caramel notes. Again the bitter apple skin, the rye spice lingers on the tongue but doesn t coat the throat, it s a surprisingly dry finish for how sweet Liquormen s is up front. Some light woodiness but really the tongue coating spice is the highlight here.
