Concession Stand Start-Up Opening Procedure Check List 1. Order the pizzas from Kristophers 301.349.0000 (2 Pepperoni and 2 Cheese) for delivery at 6:30PM 2. Empty all pavilion and concession stand trash cans into the green dumpster located in the parking area 3. Place liners in all concession stand and pavilion trash cans 4. Clean the front, rear and outside-window countertops using Clorox wipes or food surface cleaning solution 5. Clean the window, and screen, inside & outside with Windex 6. Check restrooms for toilet paper, hand towels & soap 7. Empty the restroom trash bins 8. Wear food service gloves when handling food 9. Clean the hot dog roller before turning it on 10. Turn on the hot dog roller to High to get it warmed up 11. Place 10 hot dogs on rollers 12. Remove hot dog buns from the refrigerator 13. Restock the pop cooler. Extra sodas are in the refrigerator 14. When the pizzas arrive, leave the pizzas in the box a. Label the boxes as Pepperoni, or Cheese b. Place Pepperoni pizzas in the top oven c. Place Cheese pizzas in the lower oven d. Set the ovens on Warm e. Leave oven doors slightly Open 15. Dice one onion, and place diced onion in the condiment container. Place left-over diced onion in a baggie, and place in the refrigerator 16. Spoon sliced peppers from the jar into the condiment container tray 17. Place condiments (ketchup, mustard, relish) and condiment container on the outside-window countertop 18. Refill napkin holders and place the napkin holders and Salt & Pepper on the outside-window countertop 19. Place the donations boot on the outside-window countertop 20. Post the menu on the outside near the window for customers to see 21. Count & record the start-up money on the Money-Count form 22. Place the plastic box containing the potato chips near the window 23. Place the Candy box near the window 24. Leave the freeze pops in the freezer 25. All food and food service items must be in a tightly sealed container. This includes: Potato chips, utensils, paper plates, hot dog & hamburger tongs, knives, serving spoons, wrapping foil, food service gloves, condiments trays, salt & pepper, napkins, hot dog & hamburger serving trays, nacho serving trays, etc. 26. --- end ---
Concession Stand Operating Procedure Check List 1. If there is an injured player, CALL 911. Ice is available in the freezer as needed for free 2. Umpires get free food and drinks 3. Hours are: Open at 6:30PM, Close at 9:30PM 4. Cash only. No checks. No credit cards 5. Staff of minimum of two persons, staff of three is preferred v v One person handle the customers at the window, money & drinks One person handle the food 6. Wear food service gloves when handling food 7. Children are not allowed in the concession stand for safety reasons (hot oven, etc) 8. Place foil under the rollers of the hot dog roller machine to keep it clean 9. Keep track of items sold using the Items Sold form 10. Monitor pizzas in the ovens to make sure they do not burn or dry out 11. Monitor hot dogs on the rollers to move the done hot dogs from the high-zone to the low-zone 12. Place done hot dogs in a fresh bun and wrap with foil, and place in the oven, ready to sell 13. Always keep the concession stand area clean. Clean-up spills immediately 14. Remind the last two teams that they must empty all pavilion and concession stand trash cans into the green dumpster located in the parking area, Plus they must take all recyclables down to the station 15. All food and food service items must be in a tightly sealed container. This includes: Potato chips, utensils, paper plates, hot dog & hamburger tongs, knives, serving spoons, wrapping foil, food service gloves, condiments trays, salt & pepper, napkins, hot dog & hamburger serving trays, nacho serving trays, etc. 16. Concession Stand Shut-Down Closing Procedure Check List 1. Turn off both Upper and Lower ovens & double check that both ovens are off 2. Unplug the hot dog roller 3. Thoroughly clean the hot dog roller after it cools 4. Place hot dog buns in their package and place them in the refrigerator 5. Take the left-over pizza or hot dogs to the career crew at the station 6. Place the condiments and the condiment container in the refrigerator 7. Place napkin holders and Salt & Pepper back in the sealed container 8. Seal and return the plastic box containing the potato chips back on the shelf 9. Place the box containing the Candy in the refrigerator 10. All food and food service items must be in a tightly sealed container. This includes: Potato chips, utensils, paper plates, hot dog & hamburger tongs, knives, serving spoons, wrapping foil, food service gloves, condiments trays, salt & pepper, napkins, hot dog & hamburger serving trays, nacho serving trays, etc. 11. Take down the outside menu and bring it inside the concession stand 12. Count the money in the donations boot separately from the money in the cash drawer 13. Count the cash drawer money, write down the amounts on the Money Count form, and place the Money Count form in the cash drawer. 14. Turn off the concession stand lights & music 15. Leave the pavilion lights on if players or spectators are still present 16. Remind the last two teams that they must empty all pavilion and concession stand trash cans into the green dumpster located in the parking area, Plus they must take all recyclables down to the station 17. Remind the last two teams that they must turn-off the field lights 18. Lock the side door with the door handle button 19. Lock the concession stand door with the dead-bolt and door handle button
