DAY ONE DINNER: Cashew Crusted Chicken with Potatoes & Peppers For chicken 10 ounces chicken tenders 2 Tablespoons light coconut milk ¼ teaspoon kosher salt Dash of black pepper ¼ teaspoon paprika ⅔ cup crushed cashews 1.
