DAY 1 GRANDMA'S DELICIOUS GOULASH M A I N D I S H Serves: 8 Prep Time: 10 Minutes Cook Time: 35 Minutes 1 1/2 pounds ground beef 1 large onion (diced) 1 green bell pepper (diced) 1 (15 ounce) can corn (drained) 1 (29 ounce) can tomato sauce 2 (15 ounce) cans diced tomatoes (undrained) 1/2 cup brown sugar 3 Tablespoons soy sauce 1 Tablespoon Worcestershire sauce 1 teaspoon salt 2 cups elbow macaroni 1. In a large pot over medium heat, brown beef until no longer pink. 2. Drain grease well and add onion and green pepper. 3. Cook for 5 minutes, or until vegetables are tender. 4. Add corn, tomato sauce, diced tomatoes, brown sugar, soy sauce, Worcestershire sauce and salt. Simmer for 5 minutes. 5. Add uncooked macaroni noodles, stir and cover pot with lid. 6. Let simmer over medium heat for 20 minutes and serve.

S'MORES BARS RECIPE D E S S E R T Serves: 9 Prep Time: 10 Minutes Cook Time: 35 Minutes 1/2 cup butter (softened to room temperature) 1/4 cup light brown sugar 1/2 cup granulated sugar 1 egg 1 teaspoon vanilla 1 1/3 cups flour 3/4 cup graham cracker crumbs 1 teaspoon baking powder 1/4 teaspoon salt 3 (2.6 ounce) king-sized Hershey milk chocolate bars 1 1/2 cups marshmallow creme 1. Preheat oven to 350 F. Grease an 8-inch square baking pan. 2. In a large bowl, cream together butter, brown sugar, and sugar until light and fluffy. 3. Beat in egg and vanilla. 4. In a small bowl, whisk together flour, graham cracker crumbs, baking powder and salt. Add to butter mixture and mix at a low speed until combined. 5. Divide dough in half and press half of dough into an even layer on the bottom of the prepared pan. Place chocolate bars over dough (3 king-sized Hershey bars should fit perfectly side by side, but break the chocolate if necessary to get it to fit in a single layer no more than 1/4 inch thick). Spread marshmallow creme over chocolate layer. Place remaining dough in a single layer on top of the marshmallow (most easily achieved by flattening the dough into small, flat shingles and laying them together). 6. Bake for 30 to 35 minutes, until lightly browned. Cool completely before cutting into bars.

DAY 2 STANDARD FAMILY 5-STAR GRILLED TERIYAKI CHICKEN M A I N D I S H Serves: 6 Prep Time: 8 Hours 10 Minutes Cook Time: 15 Minutes 6 boneless skinless chicken breasts 1 1/2 cups teriyaki sauce 1/3 cup lemon juice 3 teaspoons minced garlic 3 teaspoons sesame oil 1. Place chicken, teriyaki sauce, lemon juice, garlic, and sesame oil in a large Ziploc bag or sealable container. 2. Close bag and shake to thoroughly coat the chicken. 3. Place chicken in the refrigerator for 8-12 hours or overnight. 4. When ready to cook, turn the grill on to high heat. 5. Remove chicken from bag and immediately throw away any remaining marinade. 6. Grill for 6 to 8 minutes on each side, or until chicken is cooked through.

OVEN ROASTED GREEN BEANS RECIPE S I D E D I S H Serves: 6 Prep Time: 5 Minutes Cook Time: 25 Minutes 2 pounds fresh green beans (trimmed) 1 Tablespoon olive oil 1 teaspoon salt 1/2 teaspoon pepper 1. Preheat oven to 400 degrees F. 2. Place washed and trimmed green beans in a large Ziploc bag. 3. Drizzle olive oil in the bag, seal and shake until all of the beans are lightly coated in oil. 4. Spread beans in a single layer on a large baking sheet. 5. Sprinkle with salt and pepper. 6. Cook for 20-25 minutes, or until beans start getting brown spots on the outside.

DAY 3 STANDARD FAMILY 20-MINUTE SKILLET PORK LO MEIN RECIPE M A I N D I S H Serves: 8 Prep Time: 20 Minutes Cook Time: 8 Minutes 1 (16 ounce) package angel hair pasta 2 pounds pork tenderloin 2 (16 ounce) bags frozen stir-fry vegetables 1 cup teriyaki sauce 1/2 teaspoon ground ginger 1. Cook pasta as directed on package; drain and set aside. 2. While the pasta is cooking, cut the pork tenderloin into bite-sized pieces. 3. Heat a large nonstick skillet pan over medium-high heat. 4. Add pork and cook for 3 minutes, stirring frequently. 5. Stir in the frozen vegetables, teriyaki sauce, and ginger. 6. Continue to cook until it starts to boil, then reduce heat to medium-low, cover, and simmer for 3-5 minutes (or until the pork is no longer pink and the vegetables are tender). 7. Stir in the cooked pasta and gently mix until the noodles are coated in the sauce. 8. Cook for a few minutes or until everything is heated through.

DAY 4 SLOW COOKER BEEF STROGANOFF RECIPE M A I N D I S H Serves: 6 Prep Time: 15 Minutes Cook Time: 9 Hours 3 pounds stew meat 1 teaspoon salt 1/4 teaspoon pepper 1 yellow onion (diced) 1/4 teaspoon garlic salt 1 Tablespoon Worcestershire sauce 1 1/2 cups beef broth 1 Tablespoon ketchup 1/3 cup flour 7 Tablespoons apple juice 1 (8 ounce) package sliced mushrooms 1/2 cup sour cream 1. Place the stew meat, salt, pepper, and onion in the slow cooker. Stir to distribute the seasonings and onion. 2. In a small bowl, combine the garlic salt, Worcestershire sauce, beef broth and ketchup. Pour over the meat. 3. Cover and cook for 7-9 hours on low or 4-5 hours on high. 4. About 30 minutes before serving, combine the flour and apple juice in a small bowl, whisking vigorously to combine well. 5. Pour the flour mixture into the slow cooker, whisking quickly to mix in the roux with the stew meat and juices and to avoid lumps. 6. Add the mushrooms and stir. 7. Cook on high for 30 minutes. 8. Stir in 1/2 cup sour cream right before serving.

DAY 5 MUFFIN TIN LASAGNA M A I N D I S H Serves: 6 Prep Time: 20 Minutes Cook Time: 12 Minutes 1 pound lean ground turkey 1 onion (diced) 1/2 cup fresh mushrooms (diced) 1/4 teaspoon salt 1/4 teaspoon pepper 2 teaspoons minced garlic 1 (14.5 ounce) can crushed tomatoes 3 teaspoons dried oregano (divided) 1 1/2 cups ricotta cheese 1/2 teaspoon dried basil 24 square wonton wrappers 1 1/2 cups shredded mozzarella cheese 1. Preheat oven to 375 degrees F. 2. Heat a large skillet over medium heat. 3. Add turkey, onions, mushrooms, salt and pepper. 4. Cook for 8-10 minutes, or until turkey is browned and onions are clear. 5. Add minced garlic and cook for an additional 1-2 minutes. 6. Stir in crushed tomatoes and two teaspoons of oregano. 7. Reduce heat to low and let simmer for 10 minutes; remove from heat and set aside. 8. In a large mixing bowl, combine ricotta, remaining oregano and basil and mix until combined; set aside. 9. Spray a 12-cup muffin tin with nonstick cooking spray. 10. Place one wonton wrapper into each of the cups, pressing firmly in the bottom of the pan and up the sides. 11. Use half of the ricotta mixture and divide it evenly among muffin cups. 12. Top with half of the tomato sauce mixture divided evenly among muffin cups. 13. Sprinkle 2 teaspoons of mozzarella cheese on top and repeat layers, starting with another wonton wrapper, cheese mixture, tomato sauce and shredded cheese. 14. Bake for 10-12 minutes, or until cheese has melted and wonton wrappers are golden brown on the edge. 15. Let cool for a few minutes, remove from muffin tin and serve.

MARINATED ITALIAN SALAD RECIPE S I D E D I S H Serves: 6 Prep Time: 8 Hours 5 Minutes Cook Time: 4 cups broccoli florets 3 cups cauliflower 8 ounces sliced fresh mushrooms 2 cucumbers (sliced) 1 (16 ounce) bottle Italian salad dressing 1/2 package dry Italian salad dressing mix 1 pint cherry tomatoes (halved) 1 (2.25 ounces) can sliced ripe olives (drained) 2 Tablespoons shredded Parmesan cheese 1. DAY 7 BAKED CREAMY CHICKEN TAQUITOS M A I N D I S H Serves: 6 Prep Time: 10 Minutes Cook Time: 20 Minutes 4 ounces cream cheese 1/3 cup green salsa 1 Tablespoon lime juice 1/2 teaspoon cumin 1 teaspoon chili powder 1/2 teaspoon onion powder 1/4 teaspoon garlic powder 1 teaspoon dried cilantro 2 green onions (sliced) 2 boneless skinless chicken breasts (cooked and shredded) 1 cup grated Pepper Jack cheese 20 (6 inch) flour tortillas Salt, to taste Cooking spray 1. Heat oven to 425 degrees. 2. Line a baking sheet with foil and lightly coat with cooking spray. 3. Heat cream cheese in the microwave for about 20-30 seconds so that it is soft and easy to stir. 4. Add green salsa, lime juice, cumin, chili powder, onion powder and garlic powder. Stir to combine. Then add cilantro and green onions. 5. Add chicken and Pepper Jack cheese and combine well. 6. SAMOAS POPCORN RECIPE D E S S E R T Serves: 12 Prep Time: 45 Minutes Cook Time: 5 Minutes 1 cup popcorn kernels (popped) 1 cup butter 2 cups brown sugar 1 teaspoon salt 1/2 cup light corn syrup 1 teaspoon baking soda 1 (8.5 ounce) package Keebler Coconut Dream Cookies (or Girl Scout Samoas, roughly chopped) 2 cups toasted coconut 1 cup milk chocolate chips (melted) 1. Preheat oven to 200 degrees F. 2. Place popped popcorn in a large mixing bowl. 3. Over medium heat boil butter, brown sugar, salt and corn syrup for 5 minutes, stirring constantly. 4. Remove from heat and stir in baking soda. 5. Pour over popcorn and mix gently until popcorn is well coated. 6. After the popcorn is coated, spread onto a cookie sheet. 7.
