THE SMOKEHOUSE Wood-fired smoker and charcoal grill CARE AND MAINTENANCE OF YOUR HOLLAND SMOKER GRILL The Holland Smokehouse Wood-fired Smoker and Charcoal Grill is designed and made of materials that will last many years with normal use. Following these instructions will improve the longevity and quality of cooking. To assure safe operation of your Holland Smoker, the area for cooking should always be kept free of combustible materials of any type, such as gasoline or other flammable vapors or liquids. Outside of body: The smoker is made of aluminized and stainless steel. It can be cleaned easily with warm, soapy water or mild cleaner. If paint gets scratched, remove grease and repaint with a heat resistant paint. The metal surface will last longer. Do not paint the inside of the grill. Do not use wire brushes, scrapers or abrasive cleaners for normal cleaning. Cooking Grid: The cooking grid is made of high quality Stainless steel. The grid should be brushed with a brass, copper, or stainless steel brush immediately after removing food while smoker is still warm. Inside Smoker: Use warm soapy water to clean this area. Do not allow grease to build up. General: This smoker, like all equipment, will look better and last longer if kept out of weather when not in use. When using a cover, never place it on the grill until the entire unit has cooled at least 30 minutes. IMPORTANT FIRST TIME USE: It is important that the smoker be lit and allowed to operate at least 30 minutes before any food is placed on the cooking grid. The preservative used during manufacturing must be burned off. After initial heating, the grill is ready for use. After burning off the grill, spray the cooking grid and the inside of the lid with PAM or similar spray, so food does not stick to the grid and the inside of the lid is easier to clean.

! WARNING SAFETY INFORMATION PLEASE READ CAREFULLY! Only use this smoker/grill on a hard, level, non-combustible, stable surface capable of supporting the weight of the grill. Never use on surfaces that could burn. DO NOT use smoker/grill without charcoal ash tray in place. DO NOT attempt to remove charcoal ash tray while tray contains hot coals. Proper clearance of 10 feet between the smoker/grill and combustible material (bushes, trees, wooden decks, fences, buildings, etc.) or construction should be maintained at all times when smoker/grill is in use. Do not place smoker/grill under a roof overhang or other enclosed area. For outdoor use only. Do not operate smoker/grill indoors or in an enclosed area. For household use only. Do not use this smoker/grill for other than its intended purpose. If you choose to use charcoal lighting fluid, only use lighting fluid approved for lighting charcoal. Carefully read manufacturer s warnings and instructions on the charcoal lighting fluid and charcoal prior to the use of their product. Store charcoal lighting fluid safely away from grill. When using charcoal lighting fluid, allow charcoal to burn with grill lid open until covered with a light ash (approximately 20 minutes). This will allow charcoal lighting fluid to burn off. Failure to do this could trap fumes from charcoal lighting fluid in grill and may result in a flash fire or explosion when lid is opened. Use only a high grade charcoal or charcoal/wood mixture. Holland recommends natural wood lump charcoal for a longer and hotter burn time. Do not use gasoline, kerosene or alcohol for lighting charcoal. Use of any of these or similar products could cause an explosion possibly leading to severe bodily injury. Never add charcoal lighting fluid to hot or even warm coals as flashback may occur causing severe burns. Place smoker/grill in an area where children and pets cannot come into contact with unit. Close supervision is necessary when grill is in use. Do not leave smoker/grill unattended when in use. When adding charcoal and/or wood, use extreme caution. Do not store or use smoker/grill near gasoline or other flammable liquids, gases or where flammable vapors may be present. Smoker/grill is hot when in use. To avoid burns: DO NOT attempt to move the smoker/grill. Wear protective gloves or oven mitts when tending smoker drawer DO NOT touch any hot surfaces. DO NOT wear loose clothing or allow hair to come in contact with smoker/grill. WF-1

When charcoal grilling, grease from meat may drip into the charcoal and cause a grease fire. If this should happen close lid and all four vents to suffocate the flame. Do not use water to extinguish grease fires. Use caution since flames can flare-up when fresh air suddenly comes in contact with fire. When opening the lid, keep hands, face and body a safe distance from hot steam and flame flare-ups. In windy weather, place smoker/grill in an outdoor area that is protected from the wind. Close lid and vents to suffocate flame. Never leave coals and ashes in smoker/grill unattended. Before smoker/grill can be left unattended, remaining coals and ashes must be removed from smoker/grill. Use caution to protect yourself and property. Carefully place remaining coals and ashes in a non-combustible metal container and saturate completely with water. Allow coals and water to remain in metal container 24 hours prior to disposing. Extinguished coals and ashes should be placed a safe distance from all structures and combustible materials. After each use, clean the smoker/grill thoroughly. Cover the grill to protect it from the elements. We advise that a fire extinguisher be on hand. Refer to your local authority to determine proper size and type of fire extinguisher. Store the smoker/grill in a dry location when not in use.! DANGER USE CAUTION AND COMMON SENSE WHEN OPERATING YOUR SMOKER GRILL. THE SMOKEHOUSE ASSEMBLY INSTRUCTIONS Fasteners Guide Tools Needed: 1. Phillips screwdriver 2. 3/8 & 7/16 nut driver 3. adjustable or 9/16 wrench for the wheel casters #10-24 x 3/8 Pan Head Phillips, Lockwasher & nut, Attach Stacks to smoker/grill lid #10-24 x 1/2 Carriage Bolt, Lockwasher & nut, Attach handle brackets to smoker/grill lid #10-24 x 1 Carriage Bolt, Lockwasher & nut, Attach side shelves to shelf brackets 1/4-20 x 1 Round Head Philips and lockwasher, Attach towel bar handle to handle brackets 1/4-20 x 5/8 Hex Head Bolt and lockwasher, Used to attach spring handle, shelf brackets, lid stops and lid hinges #10-24 x 3/8 Pan Head Phillips, Lockwasher & Lock nut, Attach Stack air vents to smoker/grill lid and air vents to smoker door. 2A 4A 2B 4B 2C 5A 3A 5A Step 1. Open Boxes On a flat surface (table or garage floor), OPEN AND EMPTY BOTH BOXES. REFER TO THE CONTENTS LIST TO BE SURE NO PARTS ARE MISSING. Tighten all factory installed fasteners that may have loosened during shipping. Step 2. Install the Large Smoker Wheels Select the following parts for assembly: 1. wheels and hubcaps (2) 3. wheel axle cap (2) 2. wheel axle A. Hold one wheel axle cap on the end of the axle, stand the axle on the floor, and seat the cap using a hammer. Place a scrap piece of wood under the axle to protect the floor. B. Prop up the grill base with a scrap of wood. Now feed the axle through one of the wheels and through the axle holes in the grill base. Place the other wheel on the axle and seat the other axle cap with a hammer. It may be necessary to ask a helper to hold a scrap piece of wood against the seated axle cap to prevent the axle from sliding as you seat the second axle cap. C. Snap the plastic wheel hubcaps in place over the wheel axle caps. Step 3. Install Caster Wheels Select the following parts for assembly: 1. casters (2 ea) A. Insert caster into hole on base assembly, use flat washer, lock washer and nut. Tighten securely. Repeat for other corner. Step 4. Install Shelf Brackets and Shelves Select the following parts for assembly: 1. shelf brackets (2 left, 2 right) 2. shelves (2 ea.) A. Select one of the shelf brackets. Loosen the Hex Head Bolt on the side of the grill body, slide the shelf bracket over the bolt head making sure the washer is on the outside of the bracket and finger tighten. Use a 1/4-20 x 5/8 Hex Head Bolt and lock washer to secure the bottom of the bracket. At this point, finger tighten only. Repeat for each of the 3 remaining brackets. B. Position the shelf onto the brackets as shown. Using 10-24 x 1 Carriage Bolts, lock washers and nuts, tighten securely to brackets. Now securely tighten shelf brackets to grill body. Repeat for opposite side. Step 5. Install Smoker Door Spring Handle Select the following parts for assembly: 1. handle bracket 2. spring handle A. Use two 1/4-20 x 5/8 Hex Head Bolt, lock washer and nut to secure handle bracket. Install spring handle. www.hollandgrill.com WF-4

6A 7C vent spacer 6A 6B 7D 7A 7F 7B 7H Step 6. Install Smoker Door Vents Select the following parts for assembly: 1. smoker door vents (2) A. Using 2 10-24 x 3/8 Pan Head Phillips screws and 2 of the lock nuts from the small plastic bag, secure the vents to the door face. Make sure the dimple on the vent fits into the slot on the door. Secure the nut snugly. The vent should turn, but maintain its position. It should not be loose. Step 7. Attach Smoker Lid to Base Select the following parts for assembly: 1. lid stops 2. smoker lid 3. smoke stack, stack vents and vent spacers 4. towel bar handle and brackets 5. thermometer A. Select one of the grill lid stops and bolt it to the grill bottom near the hinge using 2 1/4-20 x 5/8 Hex Head Bolts and lock washers. Tighten securely and repeat for opposite side. C. Open the lid fully. Using 2 10-24 x 3/8 Pan Head Phillips screws and 2 of the lock nuts from the small plastic bag, secure the stack vents to the lid as shown. D. Position the stack vent spacers as shown. Using the 10-24 x 3/8 Round Head Phillips screws, lock washers and hex nuts fasten the smoke stacks and the stack vent spacers to the smoker lid. E. Tighten all 8 securely. F. Install the thermometer through the small hole in the center of the lid near the smoke stacks. Using a 1/2 or adjustable wrench, VERY GENTLY, snug thermometer securing nut. VERY IMPORTANT: DO NOT OVERTIGHTEN. G. Select the two handle brackets and handle. First attach the brackets to the lid using 10-24 X 1/2 Carriage Bolts, lock washers and hex nuts. DO NOT FULLY TIGHTEN AT THIS TIME. H. Now place tube handle between handle brackets and secure with 1/4-20 X 1 Round Head Phillips screw and lock washer as shown. Tighten both sides of the tube completely. I. Now go back and completely tighten the handle brackets to the lid. B. Fasten the two body hinges to the lid assembly using 8 1/4-20 x 5/8 Hex Head Bolts and lock washers. Align the smoker lid top with the bottom then tighten all 8 hinge bolts completely. WF-5

8A 8D 8B 9A 8B 9B 8C Step 8. Install Three Part Drip Pan Select the following parts for assembly: 1. three part drip pan 2. smoker base drip pan A. Install the Drip Pan Center Section B. Install the Drip Pan Side Sections C. Install the Stainless Steel Cooking Grid D. Install the Smoker Base Drip Pan Step 9. Optional Charcoal Tray Select the following parts for assembly: 1. Stainless steel charcoal tray A. Your Smokehouse wood fired smoker can also be used as a conventional charcoal grill. Simply remove the three part drip pan and install the stainless steel charcoal tray. Removeable stainless steel coal hamper and slide out ash tray. B. OPERATING YOUR SMOKEHOUSE WOOD-FIRED SMOKER BEFORE FIRST USE Before you cook food in your smoker, it is important to season your smoker. Seasoning seals the interior of your smoker to enhance flavoring, durability and overall performance. To season your smoker, simply use it as you normally would only do not cook any food. Follow all of the operating procedures in the next few sections of this manual. Using your desired flavoring woods, burn your smoker at low temperature (around 175 F/79.4 C) for 45 60 minutes. Let the smoker cool and clean out the wood chips and charcoal. Once seasoning is complete, your smoker s interior will have a durable, seasoned coating. LIGHTING INSTRUCTIONS WARNING: Make sure the optional Stainless Steel Charcoal Tray is removed and the Three Part Drip Pan is installed for smoking. ONLY use charcoal lighting fluid approved for lighting charcoal. Do not use paint thinners, gasoline, kerosene, alcohol or other flammable material for lighting charcoal. Option 1. Light Coals Inside Coal Hamper 1.) Open smoker lid. Open the smoker front door and tilt the stainless steel coal hamper forward. Load at least 3 lbs. of plain charcoal or match light charcoal briquettes. Make adjustments as needed when cooking in colder climates or during high winds, and/or when fair amounts of precipitation are present. 2.) Saturate charcoal with the amount of lighting fluid as recommended by the lighter fluid manufacture. Allow the fluid to soak into the charcoal for 3 minutes. 3.) With the lid open, stand back and carefully light charcoal. Once lit, tilt the coal hamper forward, make sure the ash tray is in place and close the front door and smoker lid. Open all four air vents. Allow charcoal to burn until covered with a light ash (approximately 20 minutes) your time will vary. 4.) After 20-25 minutes, charcoal should look white, ready for cooking and/or adding wood chips. Refer to the next section before adding wood chips to pre-lit charcoal. Option 2. Light Coals in a Charcoal Chimney Starter 1.) For this method, light the coals in a charcoal chimney starter outside of the smoker. When the coals are ready, simply pour them into the Coal Hamper. Continue adding your wood chips. ADDING WOOD CHIPS (BEFORE AND DURING COOKING) WARNING: Use caution since flames can flare-up when fresh air suddenly comes in contact with fire. When opening the smoke box front door, keep hands, face and body a safe distance from hot steam and flame flare-ups. Presoaked Wood Chips Soak the desired amount of chips in water for 30 minutes. Wrap the wood chips in aluminum foil and poke holes on the top of the foil wrapping. The amount and type of wood used is entirely dependent on the desired amount of flavor. Dry Wood Chips Dry wood chips can be placed directly onto the pre-lit charcoal without aluminum foil. The amount and type of wood used is entirely dependent on the desired amount of flavor. 1.) Stand back and carefully open smoker front door allowing heat and steam to escape away from your face. Use caution since flames can flare-up when fresh air suddenly comes in contact with fire. Tilt the coal hamper forward to inspect the charcoal level in pan. 2.) Wearing flame retardant oven mitts/gloves, use long metal cooking tongs to lightly brush aside ashes on hot coals. Use the long metal cooking tongs to add wood chips (and/or charcoal) to coal hamper, being careful not to stir-up ashes and sparks. WARNING: Never add charcoal lighting fluid to hot or even warm coals flashback may occur causing severe burns. 3.) Tilt coal hamper back into smoker and close smoker box door and allow food to continue cooking. Allow smoker to cool completely. Store grill for next use. ADJUSTABLE AIR VENTS Two adjustable air inlet vents are located on the front door of the smoker and two are located on the vent stacks. Rotate the vents to fine tune the amount of air entering the grill. Open allows more air and the coals will burn hotter. Less air allows the coals to burn longer. OPERATING YOUR SMOKEHOUSE WOOD-FIRED SMOKER FLAVORING WOOD To obtain your favorite smoke flavor, experiment by using chunks, sticks or chips of flavor producing wood such as hickory, pecan, apple, cherry, or mesquite. Most fruit or nut tree wood may be used for smoke flavoring. Do not use resinous wood such as pine as it will produce an unpleasant taste. Wood chunks or sticks 3" to 4" long and 1" to 2" thick work best. Unless the wood is still green, soak the wood in water for 30 minutes or wrap each piece in foil and tear several small holes in the foil to produce more smoke and prevent the wood from burning too quickly. A lot of wood is not required to obtain a good smoke flavor. A recommended amount for the Holland Charcoal Grill is 5 to 6 wood chunks or sticks. Experiment by using more wood for stronger smoke flavor or less wood for milder smoke flavor. GRILL MAINTENANCE When finished cooking, and the unit has adequately cooled, clean out all remaining ashes. Ashes collect moisture, which can lead to premature rusting and decay. Periodically coating the interior surfaces with vegetable oil will aid in the protection of your unit. Frequency of clean up is determined by how often your grill is used. Make sure coals are completely extinguished before cleaning inside of the grill. Thoroughly rinse with water and allow to air dry before using again. Wipe out the interior of the unit with a cloth or paper towels. See Popular Smoking Wood descriptions on next page. Additional flavoring wood should not have to be added during the cooking process. However, it may be necessary when cooking very large pieces of food. NOTE: Dry wood burns hotter than charcoal, so you may want to increase the ratio of wood to charcoal to increase the cooking temperature. Hardwood such as oak, hickory, mesquite, fruit and nut wood are an excellent fuel because of their burning rate. When using wood as fuel, make sure the wood is seasoned and dry. DO NOT use resinous wood such as pine as it will produce an unpleasant taste. DIRECT HEAT CHARCOAL GRILLING Convert your Smokehouse Wood Fired Smoker into a Charcoal Grill. Simply remove the 3 part Drip Pan and install the Stainless Steel Charcoal Tray For most grilling, the ignited coals are spread in a single layer under the food. This is called direct grilling and is appropriate for relatively quick-cooking items such as hamburgers, steaks and most seafood. The single layer of coals emits even, steady heat, whether the grill lid is open or closed, and represents the way most people grill. For more control, pile some of the coals on one side of the grill where they will emit intense heat. You can move the food around on the cooking grid, setting it over the very hot coals when you want to sear it or when a thick piece needs to cook a little more quickly. You can also use the adjustable air vents to control the temperature in your smoker. WF-8

OPERATING YOUR SMOKEHOUSE WOOD-FIRED SMOKER POPULAR SMOKING WOODS Different types of wood will produce different flavors and different types of trees have unique compositions and burning points. You can used larger wood chunks, or smaller smoking chips. Wood chunks will burn slowly and release smoke over a long period of time. Wood chips will burn hot and fast and give off smoke in a quick burst. The type of wood you use will vary based on what you are smoking. And, while meats are the most popular food to smoke, you can also smoke nuts, cheeses, vegetables and more. Woods that have a milder flavor are recommended for non-meat items. Alder is a very delicate wood with a subtle sweet flavor. It s commonly used when smoking salmon, but it goes well with most fish, pork, poultry and light-meat game birds. Apple has a very mild with a subtle sweet, fruity flavor. This smoking wood is ideal for poultry, beef, pork (especially ham), game birds, lamb and some seafood. Cherry wood has a sweet mild, fruity flavor that is a good match for all meats. Grape Vine wood has a tart, fruity flavor that works well with poultry, small game birds, lamb, pork and sausage, but use it sparingly or the tart flavor may be overwhelming. Peach wood infuses a sweet, fruity flavor that s similar to other fruit wood. Peach wood is great when grilling pork, poultry and small game birds. Pear is similar to peach wood. It smokes a light sweet and fruity flavor that works great with pork, poultry and small game birds. Pecan wood is stronger than most fruit wood, but milder than hickory and mesquite. Pecan is ideal when grilling poultry but infuses a nice flavor to any cut of meat. Walnut has a strong and slightly bitter flavor. Use walnut wood when grilling red meats, and game. Walnut wood is often mixed with other woods to create a milder flavor. Western Red Cedar When smoking with cedar wood, only smoke with Western Red Cedar that has not been treated with any chemicals. Seafood is one of the more common foods grilled on natural Western red cedar planks, but poultry and vegetables are a option for cedar planks. Note: Avoid smoking with Eastern cedar, cypress, elm, eucalyptus, liquid amber, pine, redwood, fir, spruce, and sycamore. These trees are high in resin and oils that cause a thick smoke when lit. Hickory smoking wood creates a sweet, yet strong bacon-flavor; the smoke can be pungent, but it adds a nice, strong flavor to just about all meat cuts, but it s especially popular with pork and ribs. Maple has a mild and slightly sweet flavor. Use maple wood with poultry and small game birds. Vegetables and cheeses are often grilled with maple. Mesquite wood has a strong and earthy flavor that is ideal for most red and dark meats. It s one of the hottest burning woods. Mulberry smoking wood has a flavor similar to apple that is ideal when grilling poultry, fish and pork. Oak has a medium smoky flavor that is stronger than apple and cherry, but lighter than hickory and mesquite. It s great by itself, but works well blended with apple, cherry or hickory woods. Oak works well just about any meat. Olive wood has a similar flavor to mesquite, but it s a lighter flavor. Olive smoking wood tastes best with poultry. WF-9
