My memories of this city weren t that great from the few times I was here. You could even say I hated it. It s probably because of the feeling of insecurity from a big city fi lled with people and chaos, and the crazy traffi c adds to it as well. I never truly got the chance to delve in and see the actual city because of my misconceptions. However, thanks to this trip to New York, my attitude began to change. Since my daughter started college, she has been busy with schoolwork and projects and didn t have the time to go home for Thanksgiving. Because of that, we decided to visit her in New York instead. She prepared a detailed itinerary for us and even got Metrocards so we can learn how to use the subway. With Jennifer as the tour guide, we went to Time Square, Rockefeller Center, Fifth Avenue, Metropolitan Museum, Grand Central Station, Statue of Liberty, and Chinatown. Though our trip was short, we had a great time. Though there are still a lot more places I have to visit, I can say my impression of New York has changed greatly. I defi nitely have to visit again. Most of us don't even think about how what we eat can actually heal our bodies by strengthening our immune system. INGREDIENTS excerpted from gone-ta-pott.com 2 cups thinly sliced onions 2 tablespoons dry sherry, dry wine or nonalcoholic wine 3 cups beef broth, defatted 1 can of chicken broth 1 teaspoon Worcestershire sauce 1 tablespoon unsalted butter 2 teaspoons of fresh chopped thyme 2 teaspoons of fresh chopped thyme 1/2 teaspoon sugar 1 clove of garlic pinch of cayenne pepper 8 slices baguette or 4 slices French bread, toasted 8 ounces Gruyère cheese, grated. Sliced green onion tops (optional) DIRECTIONS 1. In a large saucepan, combine the onions, sugar and butter. Cook until caramelized. 2. Add sherry or wine. Cook and stir until the onions are tender. 3. Add the broth and Worcestershire sauce. Add chopped clove of garlic. 4. Bring to a boil, then reduce the heat. 5. Add herbs. Cover and simmer for 10 minutes to blend the fl avors. 6. Meanwhile, place the bread slices on a cookie sheet. Place the cheese on top of the bread. Broil just until the cheese melts. 7. To serve, ladle the soup into bowls and fl oat the bread on top of each. If desired, sprinkle with the green onion tops.
