These helthy fritters combine lots of nutrient-rich vegetbles. f ½ cup zucchini, culiflower, broccoli, or other leftover veggies f Slt nd pepper f ¼ cup crrot, grted f 1 smll potto, boiled nd mshed (or ½ cup mshed potto) f ¼ cup whole whet pstry flour f ¼ tespoon bking powder f¼ tespoon dried thyme (optionl) f 1 2 tblespoons cnol oil f Rnch dressing (optionl) How to mke it 1. Using hnd grter, grte the veggies. Put the grted veggies in bowl. Wsh your hnds thoroughly, then squeeze the veggies to drw out ny moisture. Pt veggies with pper towel. 2. Add the crrots, mshed pottoes, pstry flour, bking powder, nd dsh of slt nd pepper. You cn dd ¼ tespoon of dried thyme if you d like. Mix until well combined. 3. Scoop out 1 smll bll of the fritter btter t time nd fltten it so it forms smll, ¼-inch thick ptty. Continue doing this until ll of the btter hs been formed into ptties. 4. Pour 1 2 tblespoons of cnol oil into lrge skillet over medium het. Once the oil is hot (see if drop of wter sizzles), gently plce ptties in the oil, leving spce between them. NTH Quino Sld This helthy grin sld is pcked with protein the perfect combintion when flying is on the gend. f 1 medium cooked sweet potto f 1½ tblespoon olive oil f 1 tblespoon minced fresh rosemry f½ cup quino, uncooked f 1 cup wter f ¼ cup sunflower seeds f 1 tblespoon blsmic vinegr f 2 eggs, hrd boiled nd peeled f 5 8 Boston lettuce leves How to mke it 1. Cut the cooked sweet potto into smll cubes. Set side. 2. Rinse the quino. Pour 1 cup of wter nd the rinsed quino into suce pot. Allow the wter to come to boil over medium flme. Once the wter is boiling, reduce the flme to low het, cover the pot, nd llow to continue cooking. After 15 minutes, turn off the stove, but let the quino sit in the covered pot for 5 minutes. 3. In lrge bowl, combine the quino nd sweet pottoes. Add the sunflower seeds, 1 tblespoon of olive oil, nd the blsmic vinegr. Toss. 4. Cover plte with Boston lettuce leves. And this stisfying dish gives Btmn nd Robin tons of energy to fight crime ll night long. f ½ medium yellow onion, diced f 3 tblespoons extrvirgin olive oil f Slt nd pepper f 2 cloves of grlic, minced f 1 pound cooked turkey, cut into bite-size pieces f 1 cup extr long-grin white rice, uncooked f 2½ cups low sodium chicken broth How to mke it SERVES 2 3 f 2½ cups broccoli florets, cut into bite-sized pieces f 2 cups extr-shrp Cheddr cheese, cubed f 1 pumpernickel, sourdough, or other herty boule f 2 slices bred in contrsting color Use leftover veggies in plce of or in ddition to the broccoli in step 5. 1. In lrge skillet over medium het, suté the onion in 2 tblespoons of extr-virgin olive oil. 2. Once the onion hs softened, dd the grlic. Sute for bout 2 minutes. Add turkey to the skillet. 3. Push the onions, turkey, nd grlic to one side of the pn. On the other side, pour the remining tblespoon of olive oil. Crefully pour the cup of rice over the olive oil. Cook for 2 3 minutes. 4. Add the chicken broth to the skillet nd bring to boil. Once the broth is boiling, turn down the het to low nd let the pot simmer with lid on for 12 minutes. 5. Remove the lid nd dd the broccoli; stir to combine. Put the lid bck on the skillet nd llow to cook for nother 8 minutes on low, until the rice nd broccoli re tender. Continued on next pge

Crefully hollow out the bottom of the boule, removing most of the inside (of the boule).plce the top of the boule on your counter nd, using bt-shped cookie cutter, crete bt cutout. 8. Plce the 2 slices of bred on your counter. Use bt-shped cookie cutter to crete 2 bt cutouts. Fit one into the top of the boule nd stick skewer into the other to put in your stew. 9.
