ANDROS A FAMILY PASSION Andros story is set in the verdant Lot fruit region in south-western France, where the iconic Cère and Dordogne rivers converge. Its beginnings took shape at the dawning of the twentieth century, in 1910, with a small fruit and nut business. It is the story of a family s tenacious passion, not only for fruit, but also for their region. Generation after generation, their passion has grown, flourished, and been tirelessly pursued. INGREDIENTS, MATERIAL FOR CREATION Our range of clean fillings is made within the Lot region, in a factory dedicated to the production of ingredients and products for professionals. Bold with passion and wealthy with knowledge, Andros stepped into its jam-making activity during the 1950 s. Thereafter, it was not long before the brands Bonne Maman and Andros developed their own reputation for quality, both within France and internationally. International recognition has not changed the bearing of Andros story: more than ever it is a tale of the pursuit of flavour; more than ever, a tale of the values of its origins; steadfastly told from a little village by the river. Looking for taste PROCESSING FRESH AND RIPE FRUIT Even when rigorously selected, a good fruit is only good when ripe. In order to guarantee flavor, we have put in place a unique network of factories (six in Europe alone) each strategically located within the best fruit-growing regions, and all working with fresh fruit that is harvested and delivered at optimal ripeness. A VERY SIMPLE USE It offers ease of use and storage, permitting consistent recipes and stable portion costs for the whole year. INSPIRE YOUR CREATION It does not contain any colors or preservatives natural or otherwise meaning a pure and natural product, strong in flavor and color, which leaves you free to imagine and create.
FRUIT FILLINGS Home-made style fillings with a real fruit identity Premium bake-stable fruit fillings, made of natural fruit and fruit by-products Higher fruit content, lower sugar content Simple recipes using pure ingredients, like: Citrus pectin, instead of starch, to guarantee a smooth texture and a clean after-taste Real sugar, instead of glucose or fructose syrup Acerola juice, instead of synthetically produced anti-oxydants Adding no coloring, no artificial flavoring, no preservative Rapsberry with seeds Caramelized apple Blueberry SUGGESTION OF USE MIRLITON TARTLETS RASPBERRY & HAZELNUT 20 individual tarts SHORTCRUST PASTRY Mix together the cold butter, flour and salt. Add the water and egg yolks. Mix briefly until just combined. Place in the refrigerator for at least 2 hours. Apricot Lemon cream Salted butter caramel Packed in 1kg pouches. Resealable, oxygen-barrier aluminium pouches. Easy to handle and to pour. Small pack size to allow a quicker usage once opened. SHORTCRUST PASTRY 1000g Plain flour 500g Butter 160g Egg yolks 360g Water 25g Salt HAZELNUT FILLING 200g sugar 100g Ground almonds 100g Ground hazelnuts 300g Whole eggs FRUIT FILLING Andros Chef Raspberry Filling Press the pastry into the tartlet tins to 2mm thickness and place in the refrigerator for 1 hour to rest. HAZELNUT FILLING Mix and sift together the ground almonds, ground hazelnuts and icing sugar. Add the eggs and mix well. ASSEMBLY Fill each pastry case with 50g of raspberry filling. Cover with the almond-hazelnut filling. Sprinkle with flaked almonds and icing sugar. Bake at 210 C. Place on a rack to cool. Find the full recipe on our website:
