HOW TO MAKE BAKED CHICKEN HUNTER-STYLE WHAT YOU LL NEED 8 bone-in chicken thighs or 4 chicken leg quarters ¾ c. all-purpose flour ½ t. salt ¼ t. fresh ground pepper 2 T. vegetable oil 1 medium onion, halved, sliced 2 bell peppers, orange and red, sliced thick 3 cloves garlic, chopped 8 cremini mushrooms, quartered ½ t. dried thyme ½ t. dried oregano ½ t. smoked paprika ¼ t. red pepper flakes ½ c. dry white wine 1-14.5 oz. can diced tomatoes with juice 1 T. fresh Italian parsley, chopped PREP TIME: 20 Minutes COOK TIME: 35 Minutes SERVES: 4 People TO PREPARE Preheat oven to 350. Mix together flour, salt and pepper. Lightly dredge chicken in flour mixture. Heat oil in large skillet over medium-high heat. Add chicken and lightly brown, about 3 minutes on each side. Transfer to a plate. Add onions and peppers to the skillet. Sauté for 3 minutes. Add garlic, mushrooms, thyme, oregano, paprika and pepper flakes. Sauté for 2 more minutes to combine seasonings. Add wine and tomatoes. Bring to a boil, stirring to incorporate all ingredients. Adjust seasoning, if necessary. Meanwhile, spray a baking dish with non-stick cooking spray. Be sure dish is just large enough to hold the chicken. Carefully pour sauce into prepared dish. Nestle chicken pieces in the sauce. Cover with foil and bake for 20 minutes. Uncover and continue to bake until chicken is cooked through and evenly browned, about 15 minutes. Top with fresh parsley just before serving. TO SERVE Serve chicken over cooked rice or pasta. Pair with Anselmi San Vincenzo white wine. EDDIE'S TIP The chicken can be made the day before, refrigerated, and reheated until ready to serve.
