During January we enjoyed entertainment by A Touch of Joy, Ralph Arnold, Carol Gent, and Mike Kornrich. We also had outings to Walmart and Peebles. We visited the Garden Hotel in Newark for their Sunday brunch. FEBRUARY NEWSLETTER The residents also kept busy with bingo, book club, morning exercise, and prayer group. We also played horseshoes, cards, Uno, puzzles and other games. We are having lots of fun playing Minute To Win It games on Thursday morning. It is amazing the fun you can make out of a few cotton balls and a cup. I hope that winter doesn t get the best of you. We will be staying busy here! Hope to see you soon. -Gigi- LOOKING AHEAD TO FEBRUARY February is going to be a very busy month here at The Terrace. Even in the middle of winter we have plenty to do. JANUARY RECap The holidays have come and gone. It was a wonderful holiday season and I wish all of you the best in the coming New Year. The winter has finally arrived, and we are all settling in and getting winterized. It will be spring again before we know it. We are keeping busy with lots of indoor fun. Our bread baking group has started and we have already served up some delicious monkey bread. The art group painted beautiful snowflakes. Many of our residents are also coming great artists by engaging in the new hobby of Adult Coloring. I am lucky to see some of the beautiful creations our residents are working on with the coloring pages we have here, as well as the coloring books many of them received for Christmas gifts. A Touch of Joy, Richard Chaffee, Carol Adriaansen and Odd Men Out will be here to entertain us.. Lincoln School Pre-K will also be here to spread some cheer and lots of Valentine wishes. We will be busy making them Valentines as well as packing up a small gift for each child. We will be celebrating Superbowl with lots of great snacks and fun games in the days before the big game. On Ash Wednesday Father Tony from St. Michael s Church in Newark will be here to distribute ashes to our residents. We will welcome him, as he is a new priest in our community. We will also see the beginning of Lent with a Mardi Grad party. We will be baking King Cake again and celebrating with lots of jazz music, fun and games. Valentines Day will be celebrated with our annual Valentine s Day Dessert Contest. Staff will bring in
a sweet treat for the residents to sample. They will then vote for their favorite. If you would like to join in for the fun and enter a dessert, please see me. We are always happy to have more. Our bread bakers group will continue in February. It is always good to hear the great comments about the wonderful aromas that come out of our activity room here at The Terrace. We will also keep busy with daily exercise, prayer group, shopping trips, bingo, yahtzee and cards. DAYS TO CELEBRATE 02/02 GROUNDHOG DAY 02/03 AMERICN PAINTER S DAY 02/05 NAT L WEAR RED DAY 02/07 SUPERBOWL 50 02/10 ASH WEDNESDAY 02/14 ALL STAR GAME 02/14 VALENTINE S DAY 02/15 ANNUAL GRAMMY AWARDS 02/15 PRESIDENT S DAY 02/21 ANNUAL DAYTONA SPRINT CAR RACE 02/26 BLUE JEAN FRIDAY 02/28 ANNUAL ACADEMY AWARDS VALENTINES RECIPE CHERRY BREAD YIELD: two 8x4-inch loaves PREP TIME: 15 minutes COOK TIME: about 40 minutes TOTAL TIME: about 75 minutes, for cooling INGREDIENTS: Cherry Bread one 10-ounce jar maraschino cherries, divided 2 tablespoons all-purpose flour 1 3/4 cup all-purpose flour 1 cup granulated sugar 2 teaspoons baking powder pinch salt, optional and to taste 2 large eggs 1/2 cup canola or vegetable oil cherry juice, reserve 1/4 cup 1 teaspoon almond extract 1 teaspoon vanilla extract Cherry-Almond Glaze 1/4 cup reserved cherry juice 1 teaspoon almond extract about 1 1/2 cups+ confectioners' sugar DIRECTIONS: pans with floured cooking spray or lightly grease and flour the pans; set aside. Recipe may be baked in one 9x5 pan, as 4 mini loaves, or as muffins, although I have not tested it that way. Adjust baking time accordingly. Cherry Bread - Remove cherries from jar and place on a cutting board. Roughly chop them. Sprinkle with 2 tablespoons flour (prevents them from sinking during baking) and toss to coat evenly; set cutting board aside. Set jar with the cherry juice aside. In a large mixing bowl, add 1 3/4 cups flour, sugar, baking powder, optional salt, and whisk to combine; set aside. In a small mixing bowl or glass measuring cup, combine eggs, oil, all the cherry juice from the jar except 1/4 cup to be reserved for the glaze, almond extract, vanilla extract, and whisk to combine. Pour wet mixture over dry ingredients and stir to combine; don't overmix. Batter will be very thick. Lightly fold in the chopped cherries. Turn batter out into the prepared pans, smoothing the tops lightly with a spatula. Strategically place a few cherries on top for visual appeal. Bake for about 40 minutes, or until bread is domed, set, springy to the touch, and a toothpick inserted in the center comes out clean, or with a few moist crumbs, but no batter. Allow bread to cool in pans on top of a wire rack for about 15 minutes before removing and allowing to finish cooling completely on rack. While bread cools, make the glaze. Cherry-Almond Glaze - In a medium bowl, combine 1/4 cup reserved cherry juice, almond Preheat oven to 350F. Spray two 8x4-inch loaf
extract, about 1 cup confectioners' sugar, and whisk to combine until smooth and satiny. Add sugar until desired consistency is reached. Glaze the bread prior to serving. After the photos were done, I glazed much more liberally, spreading the glaze like butter on the interior of the slices. Bread will keep airtight at room temp for up to 5 days or in the freezer for up to 6 months. Do not glaze bread until ready to serve if you plan on storing long-term. Recipe from Averie Cooks.
