the art of entertaining by Rip & Marsha Naquin-Delain Email: marsha@ripandmarsha.com Serving A Holiday Brunch It is definitely the season to celebrate, and what better way than hosting a brunch for a small group of friends. Recently, we did just that preparing for fourteen, twelve friends and ourselves. The first thing is to create the menu in advance to help you do everything efficiently so that you can enjoy the afternoon with your guests. Set the date and time. We chose a Sunday at 3pm. Invite your friends via phone or email since this is an informal gathering. We wanted to try some different dishes which we had seen on some of the cooking programs, and through research on the web. Be sure and adjust the recipes to put your own spin and technique on the dishes. The menu we decided on was Scotch Quail Eggs with Blue Cheese- Onion-Chive Dipping Sauce, Redneck Casserole, Hillbilly Shrimp Maque Choux & Cheesy Grits, Italian Meat Tray, and Red Velvet Bundt Cake. Next check and make certain you have all of the ingredients you will need to prepare the dishes. Rely on Samantha or any of your favorite markets to pick up some ready made products you can incorporate into the menu. And this is also the time to check on your bar to see if any liquor, beer, wine and setups are needed. Get all of this in advance and have the bar set and ready to go. All you have to do on the day of the party is order ice, have it delivered, and relax. Two days before the party, prepare your table with a centerpiece, serving trays and the like. To make your life easier, use discardalbe plates, napkins, forks, spoons and cups. The day before the party, prepare everything you can where it is ready to cook or bake on the day of the party. On the day of the party, prep anything that has to be done that day. Make sure your cooking times will be complete for the start of the party so all of the cooked dishes will be hot. We cooked our dishes an hour and a half before the party and then placed them in a 200 degree oven covered to keep them warm. At 2:50pm we placed all of the hot dishes on the table, removed our aprons, and greeted our guests.
