THE BURRITO IS BOWLSOME PREP TIME 35 MIN COOK TIME 20 MIN SERVES 2 INGREDIENTS METHOD packet Slo Moe s (any Moe s goes)* FOR THE BURRITO BOWLS tbs olive oil 2 large flour tortillas / 2 cup cheddar cheese, grated BLACK RICE cup cooked black rice lime, juiced tsp Chipotle seasoning / 4 cup jalapenos, roughly chopped CHOPPED GUAC small red chilli, deseeded, finely chopped avocado, chopped / 2 cup corn kernels / 4 cup coriander, roughly chopped / 2 tbs olive oil / 2 lime, juiced / 2 cup sour cream, to serve cup cheddar cheese, grated, to serve Spring onion, to garnish Jalapenos, to garnish / 2 red onion, diced, to garnish cup corn chips, to garnish Paprika, to garnish *We used Slo Moe s Wood Smoked Pork. Preheat oven to 90 o C fan-forced. Line an oven tray with baking paper. 2. To make the edible burrito bowls, brush the inside of two oven-proof bowls with olive oil. Press a tortilla into the interior of each bowl. Place both bowls on the oven tray and bake for 0 minutes. Take the bowls out of the oven, sprinkle with cheese and put them back in the oven for another 3 minutes or until the cheese is melted. Remove the burrito shells from the ovenproof bowls and leave to cool. 3. What time is it? Guac o clock. Combine all ingredients in a small bowl and season to taste. Refrigerate until ready to use. 4. For the black rice, combine all ingredients in a small bowl and season to taste. Refrigerate until ready to use. 5. Time for our hero heat your chosen Slo Moes according to packet instructions. 6. To serve, divide the rice mixture, chopped guac and Slo Moe s amongst the burrito bowls. Sprinkle with cheese, dollop with sour cream and sprinkle with paprika. SWEET LIL' STUFFED TATER SKINS PREP TIME 0 MIN COOK TIME HOUR SERVES 2 INGREDIENTS METHOD packet Slo Moe s (any Moe s goes)* tbs olive oil 2 sweet potatoes, washed 2 bacon rashers, diced 2 spring onions, thinly sliced, slice extra to serve cup cheddar cheese, grated 20g mixed salad leaves, to serve 20g sour cream, to serve avocado, mashed, to serve *We used Slo Moe s Wood Smoked Pork. Preheat the oven to 200 o C fan forced. Line an oven tray with baking paper. Cut the sweet potatoes in half lengthways. Place on the lined tray, drizzle with olive oil and season. Bake for 40 minutes. 2. Reduce the oven temperature to 80 o C fan forced. 3. In a medium-sized mixing bowl, combine your Slo Moe s, bacon and spring onion. Set aside. 4. Scoop most of the soft flesh from the sweet potatoes, leaving enough that they keep their shape. 5. Add the Slo Moe s mix and / 2 a cup of cheese to the sweet potato flesh. Mix to combine. Spoon this delectable mixture into the sweet potato shells and scatter over the remaining cheese. Drizzle with olive oil and bake for 5 minutes or until cheese is golden. 6. Serve warm and scatter over mixed salad leaves and top with avocado and sour cream. Season and garnish with spring onion. Nothing like a sweet lil treat! SAN CHOY WOW PREP TIME 30 MIN COOK TIME 5 MIN SERVES 4 INGREDIENTS packet Slo Moe s (any Moe s goes)* 2 cups cooked white rice 2 gem lettuce leaves small red onion, thinly sliced Lebanese cucumber, julienned cup bean sprouts / 2 cup coriander 00ml store bought Asian salad dressing 2 small red chillies, thinly sliced 2 tbs crushed peanuts *We used Slo Moe s Wood Smoked Pork METHOD. Heat your Slo Moe s according to packet instructions. 2. Divide the rice amongst the lettuce leaves and top with Slo Moe s, cucumber, red onion, and bean sprouts. LETTUCE GET YOU OUT OF A PICKLE SALAD PREP TIME 25 MIN COOK TIME 0 MIN SERVES 4 INGREDIENTS METHOD packet Slo Moe s (any Moe s goes)* 2 cups mixed salad greens 400g can black beans, rinsed and drained Lebanese cucumber, diced 2 cups medley tomatoes, chopped cup corn kernels cup mozzarella, grated cup corn chips, roughly broken, extra to serve 4 dill pickles, thinly sliced PICKLED RED ONION cup red wine vinegar tbs raw sugar / 2 red onion, thinly sliced BBQ DRESSING tbs olive oil / 2 cup tomato sauce 2 tbs mayonnaise 2 / 2 tsp chilli powder / 2 tsp ground cumin / 2 tsp garlic powder / 4 tsp onion powder *We used Slo Moe s Wood Smoked Lamb. Set your onion a-pickle n. In a small bowl, whisk together the red wine vinegar and sugar. Add the sliced red onions and refrigerate until required. 2. While we wait, let s get that dressing out of the way. In a small mixing bowl, whisk together the tomato sauce, mayonnaise, 2 tbs water, chili powder,cumin, garlic powder, and onion powder. Taste and season. Drizzle in the olive oil, whisking the entire time. Refrigerate until ready to use. 3. Heat your Slo Moe s according to packet instructions and leave to cool slightly. 4. For the salad, in a large bowl, combine the mixed salad greens, cucumber, tomato, black beans, corn, mozzarella, corn chips, pickled red onion, and dill pickles. THE SOUTHERN TART PREP TIME 25 MIN COOK TIME 40 MIN SERVES 2 INGREDIENTS METHOD packet Slo Moe s (any Moe s goes)* 2 sheets of puff pastry 2 bacon rashers, diced cup cheddar cheese, grated leek, white part only, thinly sliced / 2 cup pea shoots, to garnish / 4 cup almonds, toasted & crushed, to serve 00 g Greek yoghurt egg yolk 2 tsp milk tbs plain flour cup uncooked white rice *We used Slo Moe s Wood Smoked Beef Brisket. Southern Tarts like it hot so heat oven to 90 o C fan-forced. Line an oven tray with baking paper and sprinkle with flour. 2. For the base of the tart, place one sheet of puff pastry on the floured baking tray. To create a border for the tart, cut cm from the edge of the other sheet of pastry. Place the strips around the perimeter of your base. Then place a piece of baking paper inside the border and weigh it down with uncooked white rice. Mix the egg yolk and milk and paint the border with it. 3. Put the tart base in the oven and bake for 0 minutes, removing the rice after 5 minutes. Take the tart base out of the oven, and if the middle has risen, gently pat it down with a spoon. Turn the oven down to 50 o C fan-forced. 4. Lovingly spoon Slo Moe s onto the pastry, then sprinkle with cheese, leek, and bacon pieces. Put the tart back in the oven and cook for a further 5 minutes. Remove the tart from the oven and leave to cool for 5 minutes. To serve, scatter the pea shoots and crushed almonds over the tart and drizzle with Greek yoghurt. Cut evenly into square pieces. PITMASTER POCKETS PREP TIME 30 MIN COOK TIME 0 MIN SERVES 2 INGREDIENTS METHOD packet Slo Moe s (any Moe s goes)* 2 pitas cup cheddar, grated Hot sauce, to serve Jalapenos, to garnish COLESLAW / 2 cups coleslaw mix 3 tbs mayonnaise / 2 lemon, juiced SPICY RICE cup uncooked white rice tbs cumin tsp dried coriander 2 tsp onion powder / 2 tsp cayenne pepper tbs spicy Cajun seasoning *We used Slo Moe s Wood Smoked Beef Brisket. Let s spice some rice. Combine the uncooked rice with the cumin, dried coriander, onion powder, cayenne pepper, and spicy Cajun seasoning. Cook the rice according to packet instructions. Once the rice is cooked, fluff the rice with a fork and set to one side. 2. To make the coleslaw, in a small bowl, combine the coleslaw mix, mayonnaise, and lemon juice. Set to one side. 4. Now for the pita pockets, cut the pita in half and gently separate, to create a pocket. Fill it with the spicy rice, Slo Moe s and coleslaw. Top with cheese, jalapenos, and drizzle with hot sauce.
