BEVERAGE DIRECTOR Ivo Diaz is a New York City Mixologist who collaborated with the bar team at SIXTY LES to create a Tiki concept and cocktail driven rooftop bar. He spent fourteen years working and curating menus in New York City, and has worked for many high-end bars and restaurants such as The Nomad Hotel, which won the James Beard Award for its outstanding bar program. He acquired the knowledge and perspective that led to the successful bar program that Tiki Tabu at SIXTY LES has to offer. His hope is to honor the ever-pressing demands of the city that never sleeps and to capture the rapidly evolving cocktail world.
