CAMERATA BOTTLE LIST DEC 2018 Winter is Coming (?) Thanks for coming to Camerata! We re excited to serve you some fermented grape juice. We change this list about once a month, so for December we re stocking it with cozy vino from all over the world. You might not know some of these grapes or regions, but that s totally okay. We re here to help! We assure you that everything listed here is delicious. No need to bust out that vintage chart or wine app, as each bottle contains 100-point flavors, unless otherwise specified For the most part, the wine list is organized by weight & structure, so as you work your way down a page, the wines will increase in intensity. The last couple of pages contain ciders, beers, and miscellaneous cool shit (Sherry). Right now we re featuring wines hand-selected by each bartender. John, Dale, Tony, and Tim each picked out a wine for the list, and you ll see their smiling faces throughout the menu. Take their advice, and try Camerata s SOMMAKASE! Regardless of your preferences, please don t hesitate to ask us for help. Our entire purpose here is to find a beverage that you want to drink. NON-CHAMPAGNE BUBBLES Some people only drink bubbles for special occasions, but you should drink them because they taste delicious. We ve broken things down into some manageable categories. Made with Hondarribi Zuri and other indigenous, hard-to-pronounce varieties, Txakoli is refreshingly briny, like drinking mermaid tears. WHITE WINES: MEDIUM-BODIED AND RICH Medium-bodied is a shitty description for a wine. What does that mean, really? Call us Goldilocks, but we think that this page is filled with unique wines that are balanced. Maybe there s some oak, maybe there s some funk, but they re all tasty AF. Domaine Étienne et Sébastien Riffault Sauvignon Blanc: Les Quarterons, Sancerre, France, 2014 61 JOHN MASON: Habit Wines Grüner Veltliner: Santa Ynez Valley, California, 2017 When traveling the Central Coast of California, I stumbled upon a group of young winemakers that bent my perception of what the Cali Wine Scene was. One of my favorite winemakers from this area is Jeff Fischer and his Habit Wines. This Grüner Veltliner is sourced from Rancho Arroyo Perdidto vineyard in Santa Barbara. Planted in 1972 as Cabernet Sauvignon, the vines were grafted over to this Austrian variety in 2008. With plenty of acidity, this mineral-driven wine is lined with notes of jasmine, juniper, & lime. 55

Depending on the vineyard and winemaker s idiosyncrasies, Chenin can be light & bright or seductively honeyed. From sparkling aperitifs to luxuriously sweet wines that can age forever, Chenin can do it all. A glass of Chenin is like a Saturday morning walk in springtime: full of possibility, with the smell of honeysuckle in the air. Loire Valley: The homeland of Chenin Blanc! In the region of Savenninères, the wine can be cerebral and intense, whereas further upstream in Vouvray, wines tend to be rounder, more supple. Texas wine country is the second most touristed wine region in the USA, so give this Chenin a try! McPherson: Old Vine, 2016 39 California: Until the early 1970s, Chenin was more widely planted than Chardonnay in California! Lieu Dit: Santa Ynez Valley, 2016 55 Pax: Buddha s Dharma, Mendocino County, 2015 67 Swartland: Located by the original Cape Town colony, Swartland s mountainous vineyards have a coastal climate. PINK MATTER Yes, these wines are all some shade of pink. No, they aren t sweet. We don t care that it s December. Rosé season lasts for 51 weeks out of the year here in Houston, and these are some of the most food-friendly wines on our menu. Consume heavily with shiny meat treats. 1F. Slang for naked, Bichi is run by two brothers: CDMX-based chef Jaír Tellez and his bon-vivant brother Noel. Together, they have helped promote old-vine, natural winemaking in the Guadalupe Valley. Our wine director, Chris, had the chance to hang out with Noel during harvest this past August. Seeing Noel and his lead winemaker Yann Rohel tend to the centenarian vineyards was inspiring. The two reds we re featuring come from bush-trained vines that are farmed biodynamically and fermented in locally-made concrete tinajas.
