Mndial du Pain 2019 Applicatin Prcess The Bread Bakers Guild f America is excited abut participating in the 7th Mndial du Pain. This will be the secnd time The Bread Bakers Guild will spnsr a team in the cmpetitin. The Guild is fficially beginning the selectin prcess fr applicant and the selectin prcess fr USA cmpetitrs at the Mndial du Pain held at Serbtel in Nantes, France in Octber 2019. The 7th Mndial du Pain (Wrld f Bread Cntest) is rganized by the Ambassadeurs du Pain. The Wrld f Bread was designed t assess the prfessinal skills f the participants t demnstrate, thrugh practice, t a wide audience, the evlutin and prgress f Art Bulanger, give new ideas fr gastrnmy, nutritin and stimulate yung prfessin. Great imprtance is attached t the preparatin f neat, balanced and diverse breads, and als t an attractive presentatin. Hw Mndial du Pain Differs frm the Cupe du Mnde de Bulangerie The Mndial du Pain is similar t the Cupe du Mnde in that the team is required t present a variety f Bread and Vienniserie as well a shwpiece within an 8 hur time frame. Hwever, it differs in that the team fr the Mndial du pain is cmprised f nly ne lead baker Candidate and a Cmmis (assistant) as ppsed t a three persn team. The Candidate must perfrm all categries with the supprt f the Cmmis during the cmpetitin. The Cmmis des nt wrk separately frm the lead baker as an independent cmpetitr. The batch sizes are smaller in the Mndial du Pain than in the Cupe du Mnde but the number f different prducts is similar. Anther majr difference is that the shwpiece is smaller and is nt made during the actual cmpetitin. It is made in advance clse t the cmpetitin date and then transprted t the cmpetitin. After the baking is cmpleted, there are an extra 30 minutes at the end f the cmpetitin in which the teams assemble the finished piece. Like the Cupe du Mnde, preparing fr the Mndial du Pain requires a tremendus amunt f dedicatin, cmmitment and hard wrk. It is als an incredible learning experience in which the cmpetitrs learn and grw in the craft. 1 P a g e

Requirements t Apply The Candidate will apply separately and the Cmmis will be assigned. Jhnsn & Wales has agreed t partner with The Bread Bakers Guild and will prvide practice facility, cach/caches, as well as a prmising student frm Jhnsn & Wales University wh will serve as the Cmmis. All applicants are required t have a practice facility with all required equipment available after selectin prcess-octber 2019 (see equipment list). On the Selectin Page yu will find a cpy f the rules frm the 2017 Mndial du Pain cmpetitin. These will give yu an idea f what the cmpetitin entails. Selecting the candidates is nly the first step f the prcess. Please be sure that yu are able t cmmit the time necessary befre ging thrugh the applicatin prcess. If selected: Yu will be required t uphld yur respnsibility t the team by practicing n yur wn time, withut the Cmmis, and will include prduct and artistic design develpment. Additinally, yu will be required t attending mnthly practices that may be scheduled at Jhnsn & Wales campuses lcated in Prvidence, RI r Charltte, NC. The practices will begin shrtly after selectin and will generally ccur n a Friday Sunday, at least nce a mnth initially, then mre frequently as we get clser t the cmpetitin. If yu are selected as a member yu will als need t be willing and able t cmmit n less than tw cnsecutive weeks f time t travel t France fr the Mndial du Pain. All Applicants must be active members f The Bread Bakers Guild f America In rder t cmply with the fficial rules f the Mndial du Pain 2017, we will be fllwing the same rules fr ur selectin prcess. All Applicants must meet the fllwing criteria: Candidate must be ver age 25 n January 1, 2018. The Candidate must be a baker resident f the USA and have 5 years minimum experience. A cach will be prvided t train with and g with the selected team t France in Octber f 2019 after the initial selectin prcess. Expenses fr the trip t France fr the Mndial du Pain will be cvered by the Ambassadeurs du Pain and The Bread Bakers Guild f America (travel, accmmdatins, and meals). Team Selectin Timeline July 15, 2018 Mid-August 2018 Octber 12-14, 2018 (Prvidence, RI) Nvember 1, 2018 January Octber, 2019 Octber 2019 Applicatin Deadline Candidate Ntificatin Tryut Lcatin and further details will be prvided at time f ntificatin. A list f the equipment available fr the selectin cmpetitin will be prvided. A list f basic ingredients (flur, sugar, dairy) that will be available fr use will als be prvided. The Selectin Tryut Each team has ne hur t prepare n day 1 and 8 hurs t finish the bake n day 2 (cking cannt be dne vernight (i.e., Sus vide etc.). Candidates will travel fr the tryut at their wn expense. Selectin Annuncement Practices Travel expenses t practices will be paid by The Guild Mndial du Pain Travel expenses will be paid. REQUIRED ATTACHMENTS: Cmpleted Applicatin (Yu must include Questins listed n previus page.) Resume r CV Three prfessinal references Applicants applying fr the Candidate Psitin are required t submit frmulas in spreadsheet frmat with bakers percents and prcess ntes that yu feel best exemplify yur skills and style f baking and demnstrate yur prficiency in each f the fllwing 8 categries. Frmulas submitted will nly be shared with the selectin cmmittee and may still be used in the practical part f the tryut prcess. There shuld be a separate file with a picture f each finished prduct. Include a brief descriptin with the frmula (ptinal) NOTE: A timeline and scring rubric will be prvided a few weeks after July ntificatin s candidates can see hw they are being scred within the different categries. Categry 1 Baguette Dugh Candidates must make a baguette dugh using 5 kils f flur. Frm this dugh the candidate must prduce: 10 identical baguettes at 250 grams each (baked weight) N flur n the surface f the bread Minimum f 5 scres 50-55 cm lng 5 identical laves f lng bread at 400 grams each (baked weight) Batards r Baguettes Remaining dugh must be used t make 3 different artistic shapes Weight and shape at the discretin f the candidate Categry 2 Health and Nutritin Bread Nutrient dense bread (made with seeds, whle grains, alternative grains etc.) that has a maximum f 10 grams f salt per kil f dugh. Using 8 kils f dugh, prepare 3 different shapes Weight f the laves and shape at the discretin f the candidate 4 P a g e

Categry 3 Organic Bread This bread must be made using nly rganic ingredients (including yeast). A prtin f natural levain must be used in this bread. The rganic yeast will be supplied fr use at the selectin cmpetitin. Using 8 kils f dugh prepare 3 different shapes Weight f the laves and shape at the discretin f the candidate Categry 4 Bread that Represents the USA Make a bread that is representative f the United States in its cmpsitin. Use 3 Kils f flur Shape and weight at the discretin f the candidate Categry 5 Crissant Prepare a crissant dugh using 1 kil f flur. Frm this dugh each candidate must make: 12 traditinal crissants (bent shaping) at 65 (+/-5 grams each baked weight) 2 different Prestige varieties (artistically presented with amazing texture and flavr) One Must be chclate The ther flavr is at the discretin f the candidate Weight must be between 90 and 100 grams per finished piece (after baking) 10 pieces f each variety The prducts must be filled befre baking Garnish and décr can be applied after the bake but the prducts must be relatively cmplete befre the bake Yu cannt pipe in fillings after the bake Categry 6 Briche Prepare a briche dugh using 1 kil f flur. Frm this dugh each candidate must make: 2 different braids Number f strands and weight at the discretin f the candidate 2 different Prestige varieties (artistically presented with amazing texture and flavr) The flavrs are at the discretin f the candidate Weight must be between 90 and 100 grams 10 pieces f each variety (2 shapes and different fillings) The prducts must be filled befre baking Garnish and décr can be applied after the bake but the prducts must be relatively cmplete befre the bake Yu cannt pipe in fillings after the bake 5 P a g e

Categry 7 Artistic Piece Categry Submit a sketch/schematic f a shwpiece that represents the natinal identity. Include descriptins f bread r pastry based creatins that exemplify yur abilities: The piece shuld display yur style, design sense, and creative expressin The explanatin shuld give a backgrund n the piece, explanatin f the elements used, and explanatin f any techniques that yu feel are unique r special This categry has the mst freedm f any f the three, therefre, yu are encuraged t be generus with yur descriptins Applicants will nt be required t cmplete an Artistic piece during the Octber 2019 Tryuts. The fllwing excerpt frm the 2017 Rules are prvided as guidance in yur phts r drawings: The candidates will chse a theme representative f the natinal identity f their cuntry f rigin. The artistic piece is realized in advance by the Candidate and the Cmmis. Brught by the candidate, it has t be assembled and finished n site. The artistic piece will be put tgether in the last half hur f the cntest (frm 2 pm t 2.30 pm). Dimensins: Maximum length: 60cm. Maximum width: 60cm Minimum height: 80cm T supprt yur artistic piece, a wden base (60cm x 60cm) cvered with a fabric, will be supplied by the Organizatin.
