After being involved in the Brazilian coffee market for more than 25 years, João Antônio Lian and Luis Antônio Moraes Ribeiro decided to invest in coffee production about 10 years ago. The farm itself produces approximately 50,000 bags per year. COFFEEBIRD.COM.AU At 1250 meters above sea level Alto Paranaíba has rich soil, very consistent rainfall and superb weather conditions for producing great coffee. The farm has more than 50,000 square meters of patios for drying and processing natural coffees. The suspended patios ensure that the coffee dries slower and more evenly. Sumatran Coffee (Aceh Province and Sipangan Bolon) This coffee is sourced from the most amazing locations, at the very end of Lake Tawar in Aceh province and also near the town of Parapat near Lake Toba. This particular lot has been Triple Picked, which means that the coffee has made its way through a warehouse containing many handsorting tables, each separating defects and low quality green beans from the beautiful/uniform coffee we always look for. This particular coffee has been through the sorting process 3 times (hence triple picked), making it as clean a coffee as you will find from Sumatra. All our Sumatran coffees are directly sourced through a small family export company and our good friend Dody Sayhrum from CV Yudi Putra. YP have an extensive network of small micromills in the Sumatra lake Toba region of Sumatra and Aceh. Dody and his family really are leading the charge for specialty coffee production in Sumatra and we re proud to be working with them.

ARTISAN COFFEE ROASTERS Ethiopian Coffee (Sidama Nefas Farm) This unwashed lot comes from Nefas Farm in the Sidama region of southern Ethiopia. Processed using the unwashed method, by which the coffee fruit is allowed to dry on the bean, this coffee exhibits a complex and sweet flavour profile. The processing at this privately owned farm is second to none. Very thin layers of coffee are spread across raised drying beds, creating a drying environment with very even airflow. This produces an extremely clean naturalprocessed coffee with no signs of fermenty flavour. This particular lot was supplied by our friends at MTC Coffee Brokers, who took us to the farm in 2013 to inspect the processing.

VARIETY: TYPICA / CATURRA PROCESSING: WASHED 1kg $57 COFFEEBIRD.COM.AU This coffee comes to us from the beautiful Paso Ancho valley in the Volcan region of Panama. This coffee is processed at Carmen Estate, but comes from local smallholders within the valley. The coffee is selectively hand picked, then processed that same day. Carlos Franceschi buys cherries from the local farmers and ensures he is only buying the ripest of fruit. His processing techniques are second to none and this shows in the clarity of flavour of this coffee. We will be sure to work with these guys for many years to come.

HARTMANN ESTATE PANAMA Sweet, floral, citrus, vanilla. VARIETY: TYPICA / CATURRA PROCESSING: HONEY 100g $9.50 250g $20 What an amazing coffee estate in the Paso Ancho valley, Volcan region, Chiriqui province, Panama. Ratibor Rati Hartmann is the king of experimental processing in this part of the world. Washed (dry fermentation and nofermentation), honey (many differing levels of mucilage left on the seed) and winey (natural). All coffee is dried on covered, raised drying beds to ensure a slow, even drying of the coffee beans. So much time, love and money has been placed into this beautiful estate. According to Rati, one of the biggest issues they face as farmers is finding labour during harvest periods. He says that 20% of his cherries end up on the floor due to a lack of hand pickers. We were lucky enough to do a cupping with Rati and his lovely wife, which was mindblowing. The best thing about the cupping was the variance in flavours between differing processing styles, all done at this awesome estate.
