Le Champagne DOSAGE Note: one of the things that must, by law, be indicated on the label of a bottle of champagne is the dosage: the amount of residual sugar in the wine. This will vary according to the amount of sugar added at the end of the winemaking process. It will fall into one of the following categories and will be indicated as such on the label: 0-3 grams/litre...dosage zéro 3-6 g/l...extra brut 6-12 g/l...brut 12-17 g/l...extra dry 17-32 g/l...sec 32-50 g/l...demi-sec 50 g/l...doux A variance of 3g/l above, or below, the level indicated on the label is allowed.
Forget-Chemin The Forget family has been growing vines and making champagne for four generations. As a récoltant manipulant (grower producer) they attach particular importance to the fact that only grapes grown and picked on the family estate are used to make champagnes which are much in demand. They own 13 hectares (32 acres) of vines spread across 11 different villages. From the harvest right through to the moment of bottling, each step of the wine-making is carried out entirely in-house to guarantee constant quality for each and every one of the champagnes. As a member of the CLUB TRESORS DE CHAMPAGNE since 1973 and of the Confederation of Independent Wine Makers since 2001 they are committed to ensuring that the champagnes that bear their name are of the highest quality and authenticity. On that purpose, the FORGET-CHEMIN estate has been certified since July 2014 as being of High Environmental Value (HVE), level 3 which is the highest level possible in sustainable viticulture.

Juillet-Lallement The estate is located in the heart of the Montagne de Reims in Verzy, in a very pretty village typical of Champagne known for its exceptional forest & beeches, 18 kms from Reims. The family house Juillet-Lallement exploits a little more than 4 hectares, spread over two terroirs, Verzy and Sillery, both classified Grand Cru 100%. The average age of the plots is 40 years. We cultivate 45% Chardonnay, 50% Pinot Noir and 5% Pinot Meunier on 9 plots, planted on a chalky basement allowing the best blossoming of the 3 varieties of Champagne. Our philosophy is committed to respecting the cycles of nature & the elements that surround it, through a reasoned culture, respectful of the environment. Flying over Champagne in a hot-air balloon, as we like to do, anchors us down to this terroir. We take it to heart to express tradition and exception through the quality and finesse of our productions. Our family passion for traveling in hot-air balloons is akin to that which makes us gather in the vineyards, around the great grape press and in the cellars where we elaborate the cuvées of the house Salmon. ixâäx VÄxááx The Charpentier history began at the beginning of the 20th century and in 1974 was born the Champagne with the denomination of J.Charpentier. Since 2004, Jean-Marc has been involved in the life of the family property and run the business. The vineyards cover 15 hectares spread over 38 plots, all located in the Vallée de la Marne, Rive Droite region. Regarding grape varieties, the two pinots, Noir and the Meunier, represent nearly 80% of the surface, completed by chardonnay. The vines are grown according to the principles of sustainable viticulture and are harvested by hand. In the cellar, vinification takes place in vats, oak barrels and casks, before assemblage decided in family, after tasting, under the leadership of Jean Marc Charpentier, oenologist. In the very forehead of Marna J. Charpentier has always been recognized as the overseer of Pinot Meunier vine that simply characterizes all its cuvees besides boasting the best results on the right bank of the area. The style of its wines does not excel in refinement but from the scupolosity of cure dedicated to vineyards and winemaking along with the long pause on the yeast, they get real, linear champagne that consistency and regularity the terroir. In addition, minimal doses help make its champagne more austere and defined.
