WHISKY GLOSSARY MALT WHISKY : Malt whisky is simply a whisky containing only malted barley and water. GRAIN WHISKY: Grain whisky is only made of cereal grains such as corn, wheat or rye. SINGLE MALT WHISKY: A single malt whisky is produced entirely at a single distillery. SINGLE GRAIN WHISKY: A single grain whisky is produced at a single distillery. BLENDED MALT OR GRAIN WHISKY: Single malts or grain whiskeys from various distilleries blended together to create a unique product. PEAT: Used to dry malt during the whisky making process. The peat can impart a smoky flavour to whisky. Peaty is a common tasting term and typically applies to Islay whiskeys. . ABOUT JAPANESE WHISKY Japan is the second largest producer of single malt whisky after Scotland. Home to rich natural resources and climates that match that of some of Scotland s most distinguished distilleries, Japan has all the right elements to mimic the conditions for producing a wide range of styles including both Islay and Speyside allowing them to produce some world class whiskies. Japanese whisky has frequently won highly coveted awards such as the Worlds Best Single Malt and Worlds Best Blended Whisky to name a few. What is really impressive and one of the main reasons for their continued success is that unlike Scotland where each distillery will focus on a particular style of whisky, distillers in Japan will create lots of different styles of whiskies so the blends all come from in house casks. This allows them to really craft their blends from the very beginning and is one of the main reasons Japanese blends are so highly regarded.

THE INFLUENCE OF WOOD ON WHISKY Many of the characteristics and flavours of whisky are picked up from the wooden casks that it spends its life maturing in. Historically any type of wood may be used to make casks but today the law states all casks should be constructed of oak. Selected for it s toughness, Wood plays a crucial role in the development of malt whisky, with its porous quality s that allows oxygen in and out of the cask & its tight grain structure that prevents leaking. Oak is easy to work and it can be bent by heat without splitting. Wood naturally is full of occurring oils called vanillins. It is these oils that are drawn out of the cask by the spirit and over the period of maturation they add to the whisky s flavour appeal. RARITIES 25ml/50ml Mars Shinshu 2013 single cask / 58.9% (Japan) 45.00/90.00 Bottled to celebrates the decade anniversary of the Number One Drinks company, this Mars single cask was matured in cask number 1664. Distilled in 2013 and bottled in 2016 at 58.9% ABV. Hanyu 2000 final vintage 15yo / 46.5% / (Japan) 50.00/100.00 A special release from Ichiro Akuto - a single cask bottling of whisky from the final year of Hanyu distiller's operation. Bottled at 15 years of age and at cask strength without colouring or chillfiltration. A little slice of distilling history. Karuizawa spirit of Asama / 48% (Japan) 55.00/110.00 An exclusive release bottling of Karuizawa for TWE, part of a vatting of 77 European sherry casks. The casks used for this Spirit of Asama were filled in 1999 & 2000 and was bottled in 2012. Yamazaki Bourbon barrel / 48.2% (Japan) 45.00/90.00 A bottle of Yamazaki Bourbon Barrel from the 2013 Cask Collection, the final year of the series. Aged in 180 litre casks which used to hold bourbon and matured in a warm moist climate resulting in an elegant and sweet Japanese whisky. Yamazaki puncheon / 48% Puncheon cask (Japan) 45.00/90.00 A special edition Yamazaki from Suntory, aged in a 480-litre puncheon cask, which allows the whisky to mature much more slowly than the standard 230-litre hogshead. Yamazaki limited edition 2016 / 43% (Japan) 45.00/90.00 The 2016 release of Yamazaki's annual Limited Edition bottling. A blend of young, bourbonbarrel-aged whisky with older single malt aged in sherry and port casks. This is always a highly sought-after release.

Chichibu 2009 cask 633 / 61.4% (Japan) 50.00/100.00 A rare example of a single-cask whisky from Chichibu, this 2009 was aged for around seven years in a bourbon barrel. Bottled at a punchy 61.4%, this is rich and complex with notes of sugar, fruit and spice. Chichibu 2009 single cask 635 / No.1 Drinks 10 th anniversary / 62.1% (Japan) 50.00/100.00 A Chichibu distilled in 2009 and bottled in 2016, matured in cask number 635 which was a bourbon barrel. This was for the Decade anniversary of the Number One Drinks company. Chichibu the Peated / 54.5% (Japan) 20.00/40.00 The fourth release of peated whisky from Ichiro Akuto's Chichibu distillery. Distilled in 2012 from heavily peated malt, it's been bottled at 54.5%, giving a bold and intense smoky flavour, with spice and sweetness. Chichibu on the way / 55.5% (Japan) 20.00/40.00 The 2015 release of Chichibu On The Way, a series charting the fledgling distillery's progress. This is a multi-vintage vatting of whisky distilled at various times since they opened in 2008, including some of their oldest. Surprisingly complex for a young whisky, it shows the skill of distiller Ichiro Akuto and his team. Chichibu IPA cask / 57.5% (Japan) 25.00/50.00 A limited-edition Chichibu, developed in conjunction with a Japanese craft brewer. The brewery aged their beers in casks from the distillery and then returned these beer-washed barrels to Chichibu, where they were filled with whisky for a period of extra maturation. The hop characteristics from the IPA are discernible on the palate, where they are joined by honey and lemon flavours. The finish has a bitter grapefruit quality, alongside a distinctive twist of sansho pepper. Suntory Kakubin black label / 43% (Japan) 10.00/20.00 Black Label is the higher strength release of Suntory's Kakubin. A blend of whiskies from Yamazaki and Hakushu, this is malty with notes of honey and a hint of pepper. This is designed to be enjoyed in a highball with soda. Hakushu 10 year old / 40.5% (Japan) 30.00/60.00 A younger expression of Hakushu, this well-mannered 10yo represents one of the gentlest introductions to the elegant, impeccably-constructed qualities of Japanese malt whisky. Suntory Royal / 43% (Japan) 14.00/28.00 Suntory Royal blended whisky was first introduced in 1960 to mark the company's 60th anniversary. Light and easy to drink, this is a superb entry-level Japanese whisky.

Balvenie 17 yr double wood /43% (Speyside) 14.00/28.00 Another fantastic invention from the workbench of Balvenie Malt Master David Stewart a 17- year-old version of the best selling DoubleWood. Still initially matured in 'whisky oak' casks before being switched to sherry wood to finish, the extra years give it extra depth without being overpowering. Highland Park Ice 17 yo / 53.9% (Orkney) 35.00/70.00 Ice Edition is a 2016 limited-edition release from Orkney's Highland Park, which follows on from the Valhalla Collection. Aged for 17 years, predominantly in ex-bourbon casks, this is a powerful whisky with notes of vanilla, spice and peat. Highland Park Fire 15 yo / 45.2% (Orkney) 35.00/70.00 Fire Edition is the follow up to Ice and is the second in Highland park s series celebrating Viking legends. Aged entirely in refill port cask, this is lightly smoky with notes of dried citrus peel, vanilla and a fruity spiciness. Ailsa Bay - 48.9% (Lowland) 11.50/22.00 The inaugural release from Ailsa Bay peated Lowland whisky. The distillery can produce a variety of different styles of spirit and for this first release Grant's have decided to go for smoke, creating a rare peated lowland. It's got a rich and earthy backbone, with sweet liquorice and touches of tar. Mars Maltage Cosmo / 43% (Japan) 6.50/13.00 Cosmo from Mars Maltage is a blended malt that includes whisky from Shinshu in Japan. A big hit when released at the 2015 Tokyo International Bar Show, this is a permanent addition to the fledgling distillery's range. Mars Komagatake Rindo / 52% (Japan) 20.00/40.00 The first bottling in Mars's new Nature of Shinshu range each entry is named after the flora local to the eponymous distillery. Rindo means 'gentian' and has a distinctly aromatic character thanks to ageing exclusively in a combination of ex-bourbon, sherry and Japanese wine casks. Mars Komagatake Shinanotanpopo / 52% (Japan) 18.00/36.00 The 3 rd release in the nature of shinshu range which is made by combining well-aged whisky from their wharehouse with a much younger whisky, palate of honeysuckle, blueberries and caramel Mars 3 years old- sherry and AWO / 57% (Japan) 25.00/50.00 A limited edition from Mars's Shinshu distillery, which started producing whisky again in 2011. This whisky was distilled shortly after restarting and has been aged in ex-sherry and bourbon casks for three years before bottling at a punchy 57%. The high-strength gives a more concentrated flavour, giving a balance of cask influence and fruity spirit character. Mars Komagatake Kohiganzakura / 52% (Japan) 20.00/40.00 The follow-up to Rindo in Mars's Nature of Shinshu series, this is a blend of peated whisky, some of which has been aged in Japanese-wine barrels. The label represents the cherry blossom that is prevalent around the distillery. Suntory Torys / 37% (Japan) 6.00/12.00 Suntory Torys Classic is a light and easy-drinking Japanese spirit. Due to being below 40% abv, this cannot be called a whisky in the EU, but is still made from a blend of malt and grain.

Glendronach 1992- Sherry butt 25 yo (Highlands) 30.00/60.00 One of two 1992 representatives in batch 15 of Glendronach's single casks, matured for 25 years in a sherry butt. It's dark, heavily sherried and just what we're looking for in a whisky from this range. Port Askaig 15 yo / 45.8% (Islay) 14.00/28.00 A 15-year-old Islay single malt whisky from the Port Askaig range. A vatting of sherry and bourbon casks that gives a balance of fruit, oily spirit and traditional Islay peat smoke. Nikka 2003 Coffey Malt Single Cask 130541 (Japanese). 45.00/90.00 Around the world coffey stills are used almost exclusively to produce grain whiskies, Nikka however have bucked the trend and also use their two Coffey stills at their Miyagikyo distillery to produce a malt whisky to. This expression of Nikka was introduced in 2014 and with its rich, full taste it complements the Nikka range well. Tullibardine 24 yo North star spirits / 51.6% (Highland) 19.00/38.00 Distilled at Tullibardine in 1993, this was aged for 24 years in a bourbon hogshead before being bottled by North Star Spirits. Sweet, nutty and fruity with notes of pistachio, green apple and sweet citrus. Suntory Toki / 43% (Japan) 15.00/30.00 Toki is a blended whisky from Suntory's three distilleries: Yamazaki, Hakushu and Chita. This is a round and sweet blend with notes of peach and custard, and a slightly spicy finish. Kilkerran work in progress 6-46% (Campbeltown) 15.00/30.00 A long-awaited ten year old release from Glengyle distillery, released as part of the Kilkerran Work in Progress series. This is the bourbon-aged expression and shows just how well the spirit is maturing. Arran the Illicit stills smugglers series vol. 2 / 55.4%(island) 18.00/36.00 The second bottling in the Smugglers' Series from the Arran distillery (the first one proved rather popular indeed!). This one has been matured in a combination of rum casks and first-fill bourbon barrels - 8,700 bottles were produced. Arran the Illicit stills smugglers series vol. 3 / 55.4%(island) 18.00/36.00 "The Exciseman" is the final release in the Smugglers' Series. A trilogy of Arran Malts, which pay tribute to the island's history of maverick distillers, and their efforts to stay one step ahead of the government's excise men. Super Nikka Revival ltd edition / 43% (japan) 9.00/18.00 Super Nikka was first launched in 1962 by Masataka Taketsuru as a tribute to his wife. This 2015 Revival replicates the original flavour profile, which is heavier and peatier than today's bottling Bunnahabhain Moine px 12 Year old 54.6% 2 nd of two releases by Bunnahabhain this is a more heavily peated expression filled into ex bourboun casks and finished in pedro ximenez cask limited run to 833 bottles

Compass box No Name / 48.9% (Scotland) 18.00/36.00 The peatiest-ever whisky from Compass Box, no mean feat from a company that produces a bottle called 'Peat Monster'. Called 'No Name' to let the whisky speak for itself, this limitededition blend consists of: 75.5% malt whisky produced on Pier Road, Islay; 10.6% malt whisky made near the village of Port Askaig; 13.4% malt whisky produced near the village of Brora; and, 0.5% Highland malt blend.
