Customer Pen Portrait Tim spent 30 years in the army as a specialist bomb disposal expert. He was discharged with all his limbs and most of his marbles. He s a cheery chappie who has travelled the world, seen it all, done it all but usually keeps his own counsel. He s now a consultant advising the MOD on tank strategy and warfare something else he usually keeps quiet about. He likes his beer and he likes to come to the North End Vaults to sample the riches of what s available. He knows that when he gets there there ll be the usual crowd of suspects with whom he can have a chat it doesn t matter who they are because Tim knows they ll be like-minded whoever they are. Sometimes there are people he knows in there. Usually at the same seats. But Sean is a great manager and will fill Tim in on who he needs to know. Tim is married to Nicky. They ve been married for years with grown up children. Something else he doesn t come to the pub to gossip about. Why gossip when the beer s so good?
The Vision A cosy, quirky connoisseur pub on the edge of the high street where the ambience is modern and contemporary, not a museum piece, stuck in time A refreshed authentic frontage to maximise kerb appeal with lots of hanging baskets and colour (like the best Fuller s city pubs) An enclosed courtyard outside to the rear to enhance the sense of discovery and finding a little gem in the city An interior that takes its cues from a lighter, more neutral Edwardian pallet rather than its darker Victorian cousin but with contrasting contemporary accents to deliberately mix it up : open fires you can smell the logs burning and hear them crackle beautiful authentic panelling that signals substance and quality a parquet floor that has been polished and loved to its original state with a couple of rugs instead of carpet exposed beams which could tell many stories, if only they could speak chandeliers and contemporary mood lighting soft furnishings with a sofa or two and wing back arm chairs as well as the usual hefty wooden pub tables in various sizes and shapes nothing uniform or standard issue but they must be comfortable a blend of authentic old photography and contemporary new wall art something sparkly and twinkly like fairy lights or a contemporary mirror or two
The Mission The North End Vaults the ale connoisseurs pub in the heart of historic Gloucester city. Real ale in an authentic period Grade II listed pub where everyone who wants a discerning drink is welcome. If you re wanting food, it s Ploughman s.
Hospitality Style Here s where we continue to mix it up. Instead of a dowdy, worthy pub landlord you ll find someone who s younger than you d expect but a man who knows his beer and particularly his craft beers. He ll know where they re brewed, he ll have ordered them himself from the brewery, he ll have gone on a brewery visit and he ll know all there is to know about the beers on offer what they re made of, how they re made etc He ll regularly run tasting sessions where guests can choose some of the next guest beers to be featured And he ll be ably supported by at least one real ale train spotter
Food We don t really do food but we do a cracking Ploughman s with locally made chutneys, fresh locally baked bread and a range of delicatessen cheeses which many people like to soak up the beers We might lay on some hot sausages or bacon rolls every now and then but it ll be good quality and decent stuff, nicely presented - but we re not going to make a song and dance of it We also do nuts and crisps not Walkers or KP but proper hand cooked Tyrrell s Kettle Chips or Burt s
Drink Boutique bottled beers from every part of the UK the more weird and wonderful, the better Seasonal cask ales from reputable quality brewers, poured impeccably Interesting real ales from micro breweries, complete with back story High quality wines from around the world, served from the bottle in the right glass at the perfect temperature Strong quirky English ciders A range of quality soft drinks that are for adults Crabbies Pressed fruit juices
Initial Launch Programme This pub will be discovered not launched, so a strong PR campaign to seed interest will drive traffic Lots of press releases about new beers coming in Plenty of press invites A quirky local celebrity to open the pub (eg Bill Bailey, Dom Joly) It will be important to get good editorial coverage in things like The Good Pub Guide and CAMRA literature and their online presence This pub will also benefit from social networking to build a community of those in the know eg Facebook and online communities
