OUR OWN PRODUCTION At HERZA the manufacture of the finest quality chocolate has the highest priority. This makes us one of the few chocolate manufacturers still making our own cocoa paste in a complex production process. We use only carefully inspected, high quality cocoa beans the critical ingredient for our high product quality. For their individual products customers can choose from the world s most popular speciality and single-source chocolates. Beans from the farthest reaches of the globe find their way to our roaster, including the Caribbean, Madagascar and Indonesia. CHOCOLATE IS OUR PASSION HERZA Schokolade is one of the leading makers of quality chocolate pieces for industrial processing. Our company is rich in tradition and was founded in Hamburg in 1921. As the oldest German maker of small chocolate pieces, we have made a name for ourselves over the years. Today, HERZA is member of the Stern-Wywiol Gruppe, a familyowned company active internationally in the world of food & feed ingredients. HERZA s core competence is the manufacture of quality functional chocolate. The term Chocnology expresses our high quality approach, based on years of chocolate experience and innovative production technology. Using high quality ingredients, we develop chocolate pieces whose appearance, melt, baking stability, bite, and most of all flavour meet the most demanding requirements. Our product range is unusually broad, comprising chocolate pieces, buttons, leaves, chips, shavings, drops, powder and much more. In addition, we can produce any imaginable shape in different sizes and flavours - ideal for muesli, cereals, bakery mixes, confectionery, baby food, ice cream, dessert preparations, dairy products and fruit preparations. MOTIVATION THROUGH INNOVATION Our passion extends to all shapes and sizes. The more unusual the shape required by the customer, the more we welcome the challenge. For standard products like cereals, confectionery, fruit preparations, desserts and ice cream, our ever-new shapes help producers increase customer enjoyment and create new reasons to buy. In addition to shavings, air cushions, matches and leaves, our range offers a host of different decorative shapes like rings, stars and hearts. MORE TASTE VARIETY We also make custom specialities like nougat chips, truffle and yoghurt pieces, as well as chocolate with sugar substitutes. With aromatic compounds like vanilla and caramel, they can give foods new accents. Using fruit pieces and powders, we create chocolate pieces that offer a healthy taste experience while meeting almost any colour requirement. It s a great way to decorate fruity products. OVERCOMING TECHNICAL LIMITS Working with a variety of experts, HERZA regularly develops special machines that allow the creation of innovative shapes never before seen. This can t be done with standard technology. Our technologists always find the right balance between the formulation and the shape desired by the customer. Thus, we have the capability to make microdrops that won t sink during baking, and offer glaze compounds in a variety of sizes and forms. SUPPLIED TO ORDER We pack all chocolate pieces according to customer wishes, so that they can incorporate them directly into their processes. On request we will also put together individual mixes. We deliver in a range of packaging units, for example in bag in box packs or big bags, in weights from 4 to 450 kg.

They make a flavour-intensive addition to baked goods like muffins and cookies. Our bake-stable chocolate won t melt even under high temperatures. The only difference lies in the choice of raw materials, which are documented organically grown. Fair Trade means that small farmers in Africa, Asia and Latin America receive their fair share of the retail price. In addition, most Fair Trade products are organic.
