ANPA provides an opportunity to food lovers, gourmets and all those who want to learn or improve their culinary skills, to choose from the various cookery, bakery, pastry and ice cream making classes which are included in the Culinary Courses for tourists and professionals.

WHO WE ARE ANPA - Accademia Nazionale Professioni Alberghiere (The National Academy of Hospitality Management), operating in Italy since 1993, is the Tourist, Hotellerie and Restaurant sector, created for the world of tourism and its entrepreneurs, in order to help the recruiting of professional and motivated staff. ANPA training methodology is characterized by the transformation of the hotel in a kind of "didactical container" into which train the future human resources able to be proactive forces within the hotel industry. ANPA offers variety of courses addressed to tourists in collaboration with tour operators at the amateur and professional level. We do Italian cuisine courses, in which we teach traditional dishes of Italian food: pasta, pizza, ice cream, seconds, desserts. Italian Cooking Classes is deeply rooted in the culinary heart of Italy; hence, we are capable of giving tourists and professionals an experience that projects the true local way of life and cooking fine of the great Italian cuisine. Each class is led by our professional chefs who have not only received global praised but are also known to be welcoming teachers in the gastronomy industry. COURSES AT THE AMATURAL AND PROFESSIONAL LEVEL ANPA Institute open their doors to all those who love to approach the kitchen giving a special touch to their own dishes. Our chefs will accompany you on a journey in the gastronomic world to teach you the Chef s secrets and prepare, together with you, many delicacies to bring home. A selection of different topics focused on seasonal, quality, territoriality. At the professional level the courses are addressed to young high school or university graduated, to resturants managers, kitchen staff and to hotels staff that already work in the field, who are motivated to follow some of the specializations offered by ANPA courses and masters. ANPA provide accommodation service for all students.

COOKING CLASSES AND WINE LESSONS These classes include different and fun way of challenging, learning some of the secrets of Italian regional cooking, traditional food and modern-creative preparations, with ANPA professional chefs and students from around the world cook together. Each participant will have their own individual work station, equipment and all the ingredients necessary to prepare all the recipes chosen by ANPA chefs.

PASTA MAKING CLASS With the lesson "pasta making" at our cooking school, students will learn the art of homemade pasta from scratch, following an ancient recipe. The lesson involves teaching both pasta from scratch and sauces. Usually during this pasta lesson, we teach different types of pasta. The sauces will be decided the same day together with the small group. PIZZA MAKING CLASS This cooking class specifically deals with authentic Italian pizza, made in the most artisanal way possible, following all the guidelines of the Neapolitan tradition. Pizza is not just an Italian but a worldwide good, and for this reason we have to make the most of it and respect it as much as possible. PASTRY MAKING CLASS This class offers demonstration lessons held by professional pastry chefs. WINE CLASS For wine enthusiasts we offer detailed insights into the world of oenology, with lessons on the techniques of wine tasting and food and wine pairing. Participants will receive an intensive review by a team of Master Sommeliers on wine and spirits knowledge, proper wine service, and deductive tasting. The content of the course covers: Elementary practices in the vineyard and winemaking procedures. The grape varieties, origins, specific winemaking procedures and classifications for all the major winesin Italy. The production, raw materials and flavours of Spirits and liqueurs. Technical skills of wine service. Fundamentals of matching wines with food. An introduction to the skills of wine tasting. MARKET SHOPPING WITH THE CHEF IN ROME In this course tourists will be guided outside in one of Rome's oldest neighborhood markets. Our cooking classes provide not only Roman dishes, but rather all the tradition of Italian cuisine from north to south. With this class you can indulge yourself in creating a menu designed together with the chef according to your wishes. The products we will buy are all Italian from our campaigns. With this cooking lesson, you can incorporate other classes, such as: "gelato making class", "pasta and pizza making class. Just ask for it at the time of shopping with the chef, who will guide you in buying products relevant to the chosen classes. GELATO MAKING CLASSES The Ateneo del Gelato is the Made in Italy International Gelato School, rigorously crafted, created at one of the oldest Italian ice-cream shops, built in Rome at the end of the 19th century by the 'sovereign ice-cream maker' Giovanni Fassi and today known internationally as the Palazzo del Freddo. The Palazzo del Freddo di Giovanni Fassi is the oldest gelateria in Rome, from 1880 in the Eternal City and the ideal location that combine the culture of Italian art ice cream with the care of customer services.

GELATO MAKING CLASSES Students learn to make authentic gelato in our cooking school. With the gelato making class tourists and professionals learn how to gelato as it once was, following the Italian traditions. The recipes and techniques we use are ancient and reflect the way we think. EDUCATIONAL TOURS ANPA organizes educational culinary tours for Italian and foreigners who are lovers of Italian food and wine and who want to learn more about the cuisine, the quality products and the cultural beauty of the Italian Regions, or for industry professionals who would like to discover more about the food and wine of a specific Italian region or area. These tours have a minimum duration of three days to a maximum of six. It is possible to organize cultural/culinary tours on specific topics requested by the group, which has to comprise of at least 10 participants.
