THAI UP YOUR MENU, NOT YOUR BUDGET THAI TUNA FISHCAKES Main Course September Deals 70 MINUTES METHOD 1 Finely chop the coriander, ginger and chilli paste. Add to a bowl with the tuna, fish sauce, lime juice and mashed potato. Crack the egg into the mixture and combine. 2 Gradually add breadcrumbs until you have a consistency you can mould with your hands. 3 Hand mould the mixture into fishcakes. 4 Place the remaining breadcrumbs on a plate and roll each fishcake in the breadcrumbs until covered (they should be moist so the breadcrumbs stick). 5 Place in the fridge for about an hour to firm up. 6 Heat the oil in a frying pan. Add the fishcakes to the hot oil and cook for 5 minutes (or until golden) on each side.
