The Old Fashioned Cocktail Picture yourself strolling into any decent bar around 1805 and settling in to order a cocktail. You would most likely be asked what spirit would you prefer and the bartender would muddle a bit of lump sugar with house- made bitters and water, add your spirit, and if you were in a classy joint some ice and lemon peel. Due to tastes at the time, whiskey became the most prevalent choice of spirit, with bourbon eventually becoming preferred. By 1875 (or so) Over the course of time, as we tend to do, bartenders started adding in their own personal flourishes to the cocktail: new flavors like sweeteners, curacaos, liqueurs, and other embellishments.
