Rinse Gammon in cold water, Pour inch of water into tin, Place gammon on a rack in tin, Loosely cover gammon with foil, Bake @180oC for 45 mins per kilo, Remove from the oven and when cool enough remove skin but not fat, Score fat in a criss-cross pattern, Cover with the marinade of choice (marmalade, honey) and place in a hot oven to glaze for 20 minutes.
