T Angie Sund Marketing Manager V w n e k c i h Jerk C RECIPE VIKKI s TIL14 erves 6/ 8 S nts Ingredie Black pepper (1 teaspoon) Jerk seasoning (2 tablespoons) Cod Cayenne Pepper (1 teaspoons) 2324 Soy Sauce (1/4 cup) Sunflower Oil (1/4 cup) Lime Juice (1 tablespoon) Chicken Pieces (2kg) Method Recipe can be adapted for personal preference. Use portions or pieces 1. Combine all the ingredients, excluding the chicken, into a casserole dish with a lid 2. Add the chicken and stir to coat 3. Cover and refrigerate for 3 hours 4. Bake at 180 degrees for 1 hour 5. Heat the oil in a frying pan and fry the onion and pepper until they are softened. 2. Add the rice, stir well and add the water and coconut milk. Bring to the boil. 3. Add the kidney beans and thyme, simmer, and cover, for about 20 minutes until the rice is cooked. Season with the salt and freshly ground black pepper. 4.
