Crafting a wine list is an art (and a bit of science) into itself. First, there are the usual suspects: red versus white; old versus new worlds; light versus medium-to-full-body. Then, there are the deeper questions of which the answers require greater contemplation: How many Italian wines should we have with respect to how many French or Portuguese wines we have? Should we have a lot of selection of natural wines? What about wine by the glass selection? Yet, the central question remains: Are the wines we select compliment well with the dishes in our menu? If I drink this full-bodied Barolo, would its ripe fruit note flatter the intense flavour of the Carne Barrosã beef? If we have a seafood dish as an appetizer, would Gavi de Gavi go well with the acidity? And thequestions go on and on till we get it right, for we believe wines are better consumed with food. As you flip through these pages, you will see that some are perfect match to the food, while some reinforces on the taste that the food may not have.
