COCONUT CHICKEN WITH CHORIZO (serves 3) by Mindie Peña 14 Hands Culinary Lead Pairs with 2015 Tempranillo & 2015 Red Blend Ingredients: 2 Tbsp. of oil 6 chicken legs Salt and pepper ½ pound fresh chorizo 1 yellow onion, medium sliced 1 Tbsp. fresh ginger, freshly grated or minced 2 garlic cloves, chopped 1 chile de árbol, cut in half, with or without seeds 13.5 ounces coconut milk, unsweetened and full fat Juice of two limes 1 Tbsp. unsalted butter Directions: Season the chicken with salt and pepper. In a large cast-iron pan, over medium heat add oil. Once warm, add the chicken and turn occasionally. Brown all sides of the chicken, it should take about 10 minutes. Transfer the chicken to plate or dish. Add the chorizo and onion to the pan and cook until the onion is translucent, about 10 minutes. Stir in ginger, garlic, and chile de árbol. Cook for about 5 minutes. Gently stir in coconut milk; once stirred in, add chicken. Cover with a lid or piece of foil, reduce heat to low, and braise for about 30 40 minutes, until chicken is cooked through. Stir in lime juice and butter. If needed, season with additional salt and pepper.

WINTER WINE SELECTIONS Red Selection 2015 Red Blend This complex Red Wine Blend opens with concentrated aromas of dark fruits and violets with captivating hints of spice and dust. Dense flavors of black currant are joined by notes of sweet red cherry and raspberry preserves. Velvety tannins provide great structure and the finish goes on and on. Grapes were destemmed, sorted and placed into stainless steel tanks. Fermentation on the skins lasted for 5-7 days and the deep red color and lush tannins were gently extracted by twicedaily pump-overs. The wine aged for nearly 17 months in 53% new French oak barrels. Malolactic fermentation occurred in barrel. Each varietal was fermented and aged separately with blending occurring just weeks before bottling. Beef tenderloin, hearty venison stew, portabella mushroom lasagna 2015 Tempranillo This is a very food-friendly Tempranillo that is very savory and old-world in style. Aromas of dry fig, sage and pomegranate lead to a rich yet soft finish which begs to be paired with your favorite tapas. Grapes were destemmed and crushed with 30% whole berries remaining. Grapes were cold-soaked for 2 days then fermented for 6-10 days on skins in a stainless steel tank. Following fermentation the wine was placed exclusively into neutral barrels and aged for 18 months in order to maintain its fruit aromatics and unique varietal characteristics. Citrus characters are repeated on the palate which are joined by a creamy mouthfeel while juicy acidity keeps the wine fresh. Bright, aromatic Gewürztraminer from the famed Horse Heaven Vineyard was harvested at the peak of ripeness. After gently pressing the fruit, the juice was chilled and settled for 2 days before being racked off solids into a temperature controlled stainless steel tank. A long cool fermentation was initiated with Belgian Abbey yeast which is traditionally used for making beer. The wine was aged on the lees for over 4 months with stirring occurring weekly.
