Feasting Tips This Christmas we have gathered together some new stunning, edible decorative elements to enhance your festive table. Combine these with our delicious traditional Christmas essentials and you will have everything you need to have a relaxed, memorable event. THE TABLE Our new Gingerbread Stars, baked with holes for threading ribbon, can be decorated with the help of willing children. Cover with royal icing and stud with lollies to hang on a tree, or pipe names on them and tie them to a gift. Our decorative Iced Chocolate Vanilla Stars, mini White Gingerbread Trees and new mini Green Trees can be used to decorate the festive table or placed on each napkin and our Gingerbread House is a stunning centerpiece. THE MENU Outsourcing to Phillippa s and asking others to be responsible for different courses will take all the pressure off the host. Our Stuffing Mix and Vinaigrettes are ready to use essentials. Our Savoury Tarts sit comfortably alongside seafoods, barbeques and roasts and will keep vegetarians happy. For dessert our Stone Fruit and Berry Tarts celebrate the summer season fittingly. Apricot Pistachio Stuffing Cups, Peach Melba Trifle and Blackcurrant Fool can be made in advance and are delicious additions to the festive table. Christmas Cake large $55 & small $35, These moist cakes are made to a family recipe with housemade candied unwaxed orange peel, sourced from the farmer s market, Australian dried apricots and vine fruit, candied fruit and local brandy. Made in July, they are aged and ready for the festive season. Mince Pies ½ dozen $17.90 Our aromatic fruit mince is made with our unwaxed candied peel, organic Australian vinefruit and fresh premium spice. Serve warm with our Caramel Brandy Sauce, alongside good cheddar or make Mince Pie Semifreddo, recipe on our website. Caramel Brandy Sauce $14.50 Made to my Mum s recipe, it is especially good with Phillippa s Plum Pudding. Good enough to eat on a spoon, hiding in the pantry without pudding! Serve with Mince Pies, poached fruit, baked bananas, crepes, and chocolate brownie. Almond Cake $45 (wheat free) Almond meal replaces wheat flour in this luxurious fruit cake that incorporates Australian vinefruit and natural glacé cherries. Serve after dinner with a glass of sticky wine. The Big Plum Pudding 1.7kg Available in limited supply this large pudding serves 16-20 people. Plum Pudding 900g (Butter)$49 Traditional Plum Pudding 900g (Suet)$49 Petite Plum Pudding 400g $34 Perfect for two to share. Plum Pudding We make two varieties of Plum Puddings; Butter Pudding and a Traditional Suet Pudding that has a clean, superior flavour and a light texture. It is made with our own candied orange peel, loads of Australian vinefruit, Phillippa s Breadcrumbs and plenty of brandy. Serve flamed in brandy with whipped pure cream and Phillippa s Caramel Brandy Sauce.

Trees & Stars These biscuits make a delicious edible table decoration. Two Christmas Trees $17.90 A pair of stunningly decorated gingerbread trees with natural vegetable coloured icing. Iced Chocolate Vanilla Stars $16.90 Crunchy aromatic biscuits decorated with lemon icing and shiny cachous. Place one on each napkin at the festive table. Ginger Stars $13.50 Hang on the tree as they are, naked or make royal icing and let your creativity flow. Gingerbread House Kit, DIY, $45 Assembling and decorating a gingerbread house is a perfect bonding activity. Find some eager children, choose some lollies, make a big batch of royal icing and let the fun begin.

Biscuits for Feasting and Gifting Swedish Chocolate Vanilla Bars $13.50 A regular feature on the Stockholm Fika offering, they look like they are sprinkled with snow and look pretty on the feasting table. Traditionally served with tea or coffee. Butter Shortbread $13.50 Butter shortbread is one of the most traditional Christmas biscuits and ideal to serve when endless guests drop by. For that reason it is a popular gift. These are perfect to serve with Blackcurrant Fool, recipe on our website. Cranberry Shortbread $12.50 These are studded with chewy crimson sweet-tart cranberries that balance the melt-in-the-mouth shortbread. Sandwich with vanilla ice cream and refreeze. Traditional Shortbread Round $15.90 Favoured by Queen Mary during the 16th century, this Scottish-style shortbread has a distinctive nutty flavour and grainy texture. The elegant fluted round shape is said to come from a petticoat cutting pattern. Use as a base for a quick Berry Shortcake, recipe on our website. Hazelnut Macaroons $13.50 A soft, slightly chewy hazelnut macaroon biscuit in the northern Italian style. These are perfect to accompany tea or coffee and are wheat free. Serve with a bowl of apricot or gooseberry compote and vanilla custard or crème fraǐche. Belgian Double Chocolate Chip Cookies $13.50 Double the chocolate double the deliciousness! Made with Belgian chocolate and Dutch cocoa for an intense chocolate fix. Serve as an ice cream sandwich or crumbled over ice cream with raspberries.

Our bread is made with five simple ingredients... Flour, water, sourdough or yeast, salt and time which we call the fifth ingredient. Time is added through slow fermentation. An unhurried fermentation not only pre-digests the wheat but allows complex flavours to develop. There is much virtue in patience! The 6th, 7th and 8th ingredients that we don t add are ascorbic acid which allows dough to prove faster, malt which gives a dark blistering crust and extra gluten which gives the loaf more volume and can make it soft. Our point of difference is that we encourage natural, slow fermentation for better flavour and digestibility. Bread Stollen $25 The origins of this breadlike German festive fruit cake date back 600 years. Made with our house-made marzipan it is said to be in the form of a swaddled baby Jesus. Serve for breakfast, with coffee or after dinner. Chocolate Hazelnut Panforte $25 This traditional chewy Tuscan sweetmeat, originating around the 13th century is baked to an authentic recipe using Australian honey and almonds, Dutch cocoa, fresh spices, hazelnuts and our own candied orange. Serve with a glass of Pedro Ximenez for a sweet alternative to cheese after dinner. Spiced Cranberry Orange Sauce $14.50 This tangy sauce tastes like Christmas and is flavoured with a perfectly balanced blend of aromatic spices. Mix it with mayo and sour cream and toss through left over turkey for crostini or for filling baguettes. Festive Essentials Apricot & Date Loaf Wholemeal Sourdough (V) Rugbrod Now available from Armadale Wednesday & Friday and Brighton Tuesday & Thursday. Cranberry, Pecan & Rosemary Stuffing $13.50 Take the fuss out of stuffing and use this fragrant stuffing mix for turkey, chicken, goose or lamb. Two packets are required for a large whole turkey. Vary the flavours by replacing water with another warmed liquid; wine, orange juice, apple juice, sherry or stock can be used to make this stuffing. Fabbri s Cherry Panettone These were hugely popular last Christmas and has been made in Milan for us again this year. GLUTEN FREE Panettone also available in limited quantities. Perbellini s Fior Apricot This brioche cake is similar to panettone and made in Verona, arguably, by one of the best pastry shops in Italy, Est. 1891. It is studded with drops of apricot preserve and a soft almond glaze. Loison s Mandarin Panettone Made with intensely flavoured Ciacuilli mandarin in Vicenza by Dario Loisin and his team, whom we visited in June.

Catering Orders Taken Phillippa s Dijon and Red Wine Vinaigrette Chickpea Zucchini Salad Toss together a tin of chick peas, diced red pepper, salted and rinsed diced zucchini, chopped chives, lemon zest & juice and chopped chilli (optional) with a good dose of Phillippa s Dijon and Red Wine Vinaigrette. Phillippa s Honey and Mustard Vinaigrette Greens Beans and Spiced Almond Salad Toss together blanched, chopped green beans, roasted cherry tomatoes, chopped Sesame Spiced Almonds, fresh coriander and fried haloumi (or crispy bacon) with Phillippa s Honey Mustard Vinaigrette. Saluté Oliva Extra Virgin Olive Oil, Bendigo A new favourite local oil with an intense flavour that will add a distinctive fine dining sophistication to all your summertime cooking. Grilled Peach and Burrata Salad On a bed of baby spinach, layer honey-caramelised, grilled peach halves, torn burrata or buffalo mozzarella, crisp pancetta, chopped mint, basil and toasted pine nuts. Drizzle with a generous dose of Saluté and balsamic vinegar.

Recipes Stuffing Cups 20 thin pieces round pancetta 140g chopped Australian apricots 100g chopped pistachio nuts 4 egg yolks or 2 eggs 350g fresh Phillippa s white sourdough breadcrumbs 12 finely chopped fresh sage leaves pepper to taste Method Brush 20 patty pans with olive oil, press a piece of pancetta into each. Mix remaining ingredients together and press firmly into the cups. Bake 180c/160 fan for 20 minutes until golden. (If you don t have patty pans, you can roll them into logs) Peach Melba Trifle This trifle does not necessarily need alcohol because the raspberries are so intense. This can be assembled in a large glass bowl or 10 individual glasses. For the custard 250ml full cream milk 250 ml pure cream For assembly 800g good poached peaches and some juice 1 kg fresh or good frozen raspberries, 1 Phillippa s large sponge, cut into small squares 80g sugar 2 vanilla pods, split 6 egg yolks 1 packet Phillippa s Hazelnut Macaroons, crumbled 3 tablsp raspberry eau de vie, optional Method Warm the milk and cream gently for 10 mins with vanilla but don t allow it to boil. Mix yolks and sugar and pour the strained warm cream over and whisk over medium heat until it thickens enough to coat the back of a spoon. Do not allow it to boil or curdle. Remove from heat and cool. Reserve 200g whole raspberries and puree the remainder with 5 tablespoons sugar and juice of ½ lemon. Stir ½ cup peach juice through the sponge with eau de vie. Spread the sponge pieces over the base of the glasses or large bowl. Then layer the peaches and half of the whole raspberries. Pour over most of the raspberry puree, sprinkle on ½ the crumbled macaroons and finally the custard. Decorate with some whole raspberries, a little puree and the remaining macaroon crumbs.
