Chicken Pizza, Lattermann Style Ingredients for the Dough 300 g wheat flour 20 g yeast ½ teaspoon salt 2 3 tablespoon olive oil 125 ml water 1
Ingredients for the Topping 250 g of ready-made Italian tomato sauce with mushroom 2 big onions 2 3 garlic cloves 250 g of mushroom 150 g of bacon 150 g of fried chicken 80 g of canned pineapple (optional) 100 g of sliced cheese Oregano Black/white ground pepper ground chili Parmesan cheese Preparation of the Dough For preparation of the Pizza Dough, please refer to the separate recipe Pizza Dough. In case you prepare one larger pizza, stop the process prior to cutting the dough ball into 8 pieces. Preparation of the Topping Peel the two big onions and position them on a chopping board. Cut the onions into slices and heat up some cooking oil in a frying pan. 2
Put the onion slices into the heated cooking oil and stir them thoroughly all the time, so they slowly and uniformly turn to goldenbrownish color. While the onions are frying, peel the two to three garlic cloves and position them on the cutting board. Cut them into small cubes of 1 2 mm length. Add the small garlic cubes to the onions and continue stirring until the onions and garlic cubes have reached the desired color. Remove the fried onions and garlic from the frying pan while retaining the oil in the pan. Keep the onions in a separate small bowl. Wash the mushrooms and position them on a cutting board. Cut the mushrooms into cubes of approx. 1 cm length. 3
Once all mushrooms are cut, transfer them to the heated frying pan with the residual oil. Stir the mushroom cubes occasionally. Continue frying and stirring the mushrooms until all water has evaporated. Then remove the mushrooms from the frying pan while retaining the oil in the pan. Keep the mushrooms in a separate small bowl. Position the bacon on the cutting board and cut it into small squares of approx. 1 to 1.5 cm length. Keep the cut bacon squares in a separate small bowl. Put the sliced cheese on the chopping board. 4
Cut the cheese slices into small squares of approx. 2 cm length. Keep the chees squares on the cutting board and do not store them in a separate bowl, as they will stick together. Preparation of the Chicken Pizza Spread some flour on your working table. Position the pizza dough in the center of the working table and flatten it a bit. Spread some flour on top of the pizza-dough cake and start rolling the dough with a rolling pin. Depending on the shape of your baking tray (if any), roll the dough into a round or square shape. Cover the baking tray with aluminum foil and transfer the rolledout dough into the tray. Push and pull the dough into the corners and of the tray and carefully build up a wall that shall hold and contain the topping. Start adding the ready-made Italian tomato sauce on top. 5
Spread the Italian tomato sauce equally on top of the dough. Add the fried onions and mushrooms on top of the tomato sauce layer. Add the cut-up slices of bacon and fried chicken pieces. Distribute them equally across the surface of the pizza. For friends of Hawaiianstyle pizza you may add some pineapple pieces. Then add squares of the cut cheddar cheese. Sprinkle Oregano spice on top and also add ground black/white pepper. To bring additional spice to the pizza, use red-hot chili powder as per your liking. As the final step for the topping, add ground Parmesan cheese, equally distributed. 6
Preheat the oven to 180 O C and insert the pizza tray into the oven. Keep the pizza in the oven for 10 minutes, while observing the progress of the baking process. Remove the baked pizza from the oven. Take the baked pizza out of the baking tray and remove the aluminum foil. Cut the pizza into pieces and serve on separate plates. Bon Appétit! 7
