Like a rollercoaster, life has its ups and downs. The long, tough uphills followed by exciting, adrenaline-filled downhills. Maybe you are unhappy with your seat on the rollercoaster of life, or you feel you are on the totally wrong roller coaster! You would prefer to be on the new one with shiny handles and leather seats, instead of on the rattling mine train. Although you won t be able to change rides mid-air, you can change your attitude. How you react, will also influence how you experience life. Like the ladies in the picture, you can decide if you want to live life in the first or the third row. Time flies when you re having fun! Luckily, time also goes by when you re not having fun. Are you glum when everything goes askew, or do you get up and tackle the problem hands on? Do you sulk or make the best of the situation? This luscious caramel apple pudding is a delicious dessert when the weather gets colder. PREP: 15 MINS COOK: 40 MINS http://www.taste.com.au read online IngredientS 5 large golden delicious or Granny Smith apples, peeled, cored, sliced 1cm thick 1 2/3 cups (250g) plain flour 2 teaspoons baking powder 250g caster sugar 200ml milk 150g unsalted butter, melted 2 eggs, beaten 1 cup (200g) light brown sugar 1/2 cup (125ml) golden syrup Icing sugar and thick cream, to serve Method 1. Preheat the oven to 180 C. Lightly butter a 2.5-litre baking dish. 2. Place apples in the prepared dish. Sift flour and baking powder into the bowl of an electric mixer, add caster sugar, milk, butter and egg, then beat until pale. Spread mixture over the apples. 3. Place brown sugar, golden syrup and 300ml water in a saucepan. Stir over medium heat until sugar dissolves, then bring to the boil without stirring. 4. Pour over the pudding batter, then bake for 30-35 minutes or until the top is golden. 5. Dust with icing sugar and serve with cream.
