Maître David Breuer guides guests through their culinary experiences in an attentive, yet reserved way. Sommelier Stéphane Gass pairs each course with a subtle wine. And patissier Pierre Lingelser puts the spectacular finishing touch on the meal. FRESH, HARMONIOUS AND IMAGINATIVE. Our young and ambitious kitchen team shows its skills in three very different restaurants. Head chef Florian Stolte serves sophisticated cuisine which celebrates seasonal flavours in the elegant Köhlerstube. The historic Bauernstube interprets regional specialties in a new and refined way. Kitchen director Jürgen Reidt pampers Traube guests with delicious daily menus and exclusive themed buffets at Silberberg restaurant with strong support from restaurant director Michael Kröller and his top class service team. MORE THAN ONE WAY TO ENJOY. At Traube Tonbach, taste has many dimensions. Cooking enthusiasts can learn from the pros at our cookery school. Under the direction of head chef Henry Oskar Fried, a team works on a culinary theme to prepare a multiple-course meal. When the cooking is done, they share the delicious results as a group. Our traditional Blockhütte is ideal for guests who would rather hike first and enjoy a snack afterwards. The hearty Black Forest specialities and homemade cakes taste even better in the middle of the forest. The bar is the best place to meet to finish up a long day of fun and relaxation. Head Bartender Bernhard Stöhr serves outstanding cocktails, fine spirits, wine, champagne and freshly tapped beer.
TASTING OPPORTUNITIES FOR CONNOISSEURS. Our Traube Vinothek wine shop offers a unique selection of wines from mainly European regions chosen exclusively by our award-winning sommelier, Stéphane Gass, on his wine-buying trips. We want to offer our guests selected wines of convincing quality at an excellent price, and also discover new varieties for connoisseurs, he explained. We invite our guests to join us for a guided wine tasting every Saturday at 10:45 a.m., where we present the wines we re most passionate about. You can also order our wine recommendations from the comfort of your own home from our Traube online shop.
