How cold does the Anti-Griddle get? The Anti-Griddle reaches temperatures of -30 F/-34.44 C. It is non-adjustable. How long does the Anti-Griddle take to reach temperature? In typical conditions, maximum temperature occurs between 10-15 minutes. How does the Anti-Griddle get cold? Is it possible to injure yourself? In a word, no. The Anti-Griddle uses R404a refrigerant in a compressor system, which is different from household and commercial appliances due to the low temperatures. Most appliances use R134a refrigerant, but are not going as cold as the Anti-Griddle. The Anti-Griddle does not employ the use of liquid nitrogen or dry ice, which are much more volatile and dangerous to handle. How do I prepare the Anti-Griddle for use? We simply recommend a light coating of pan spray or olive oil, applied and gently rubbed into the surface prior to turning the machine on. This will allow for more non-stick surface. Many chefs use parchment, plastic wrap or acetate to reduce freezing of product to the surface and allow for easy transfer and release. Small silicone molds will allow for rapid freezing in a variety of forms and shapes. What type of tools can I use on the Anti-Griddle? We commonly use a small, offset spatula. To avoid scratching the surface, a plastic or silicone utensil can be used; however, it is not necessary. Minor scratches to the surface will occur over time with use.
