Our coffee is grown in the richest and pristine soil of Mount Pesagi the highest mountain in the Western part of Lampung, which is one of the main coffee-growing regions in Indonesia and the main plantation operations of PESAGI coffee. The coffee grown on these estates is naturally grown, planted and handle with such care and intention to produce the best coffee bean. CLEANED COFFEE BEANS UNPEELED, STILL COVERED WITH HUSK Well-ripened red coffee cherries are harvested and sort. After, it is fed to the Civet who will choose the best coffee cherries. After going through the digestion process and fermentation, the undigested coffee which still covered with the husk will come out with the droppings or what also called as prongkolan. In addition, it is washed long enough with water to completely clean. Dirt-free, cleaned coffee beans unpeeled, still covered with husk in white yellowish color.

PACKAGING PROCESS Sun drying and aerated are used to reduce the washed coffee moisture content. The dry coffee husk would be peeled easily. The peeled coffee is further sun dried and sorted to eliminate the defects such as broken beans and husks that come together with the coffee. Preparing Luwak coffee with the certain standard moisture content and sorting the good beans must be completed before stored, roasted or sold. Luwak coffee beans can be stored in gunny bags or in vacuum plastic bag. In addition, it can be directly roasted. Roasted coffee can be kept as roasted bean or ground coffee. The aluminum foil with air valve packaging is used to ensure and maintain the cleanliness, flavor and aroma of Luwak coffee. Luwak coffee roasted beans and ground are ready to be sold in domestic and foreign markets. Our Luwak coffe comes in premium box of 100 g and 200 g.

How We Roast Our Coffee 1. 195 CINNAMON Considered as light roasts. Cinnamon roast occurs usually about the middle of what we call 2. 200 MEDIUM First Crack, when the beans pop or crack, visibly expanding in size. This may occur after only several minutes roasting. Light brown in color with a dry surface, this roast is generally preferred for milder coffee varieties. There will be no oil on the surface of these beans because they are not roasted long enough for the oils to break through the surface. Have a higher acidity (bright, lively) with a toasted grain taste. This roast highlight the inherent flavors and aromas of the beans. This type of roast lacks of the grainy taste of the light roasts, with more body and a more balanced acidity aroma. 4. 210 MEDIUM 5. 215 HIGH REGULER This medium roasts reach internal temperatures between 210 C between the end of the first crack and just before the beginning of the second crack. This roasts are generally sweeter than light roasts, with more body and exhibiting more balanced flavor, aroma, and acidity. The color is milk chocolate brown, and the bean s surface is dry with some acidity (bright) though lacking the grain taste of the light roasts. This kind of roasting are having balanced bitterness. Flavor is fully developed; acidity is bright; characteristics of green coffee are clear. 6. 220 CITY When the temperature rises to approximately 220 C, the color changes from light brown to medium brown, and a weight loss of approximately 13% occurs, with a stronger flavor and a non-oily surface. 3. 205 MEDIUM Occurs at approximately 205 C (400 F) in which the bean doubles in size, becomes a light brown color, and experiences a weight loss of approximately 5%. 7. 225 FULL CITY The flavors and aromas of the roasting process become noticeable, and the taste of the coffee may be somewhat rich, with a slight bittersweet aftertaste.

How to Make The Perfect Cup BREWING METHODS BREWING OPTIONS Making a cup of coffee is handy and easy, but making a perfect cup of coffee requires the right steps. We are certain that you don t want to waste your Luwak coffee just because of an erroneous preparation process. Pay attention of your water quality. Use the right water temperature. As much as possible not to add sugar, cream, or milk, so you can experience the original taste of the Luwak coffee. Using a ratio of 1:15 that is one part of ground Pesagi Luwak Coffee to 15 parts of 95 C water. You don t want to make it too hot or you will end up with a coffee taste bitter or astringent. But if it s too cool, you will find your coffee taste flat. You can also try the brewing methods of French Press, Stove-top Espresso maker, Drip, or V60. Anything to make sure that your coffee experience us not watered down nor is it too thick for your taste. Drip Coffee A common method to make coffee. We have to get the water to coffee ratio right. It usually takes 1-2 tablespoons of coffee per six ounces of water. But you can play around to adjust to your specific taste. French Press The simpler coffee making device. You can add your coffee and water with this following proportions: 1 ounce of coffee to 15 fluid of water. Add coffee first and never use boiling water.

Soon will be acquire certification from HACCP (Hazard Analysis and Critical Control Points) which is a systematic preventive approach to food safety from biological, chemical, and physical hazards in production processes that can cause the finished product to be unsafe, and designs measurements to reduce these risks to a safe level.
