fresh greek salad 5 min 6 ingredients 1 lb ripe tomatoes diced 1 green pepper, chopped 1 red pepper, chopped 1 medium cucumber, diced 1/2 cup pitted Kalamata olives 2 oz crumbled feta cheese 1 cup plain croutons Dressing: 2 Tbs red wine vinegar 2 Tbs extra virgin olive oil 1/4 tsp dried oregano 1/8 tsp sea salt 1/8 tsp black pepper In a large bowl, mix tomatoes, red pepper, green pepper, cucumbers and olives. In separate bowl, whisk dressing ingredients (red wine vinegar, olive oil, oregano, salt and pepper) together. Drizzle over salad and mix gently. Let stand at room temperature for 20 minutes to allow flavors to blend or store in refrigerator for a few hours until ready to serve. Right before serving sprinkle with feta cheese and croutons. Serve and enjoy! 3

blt salad 15 min cook time 5 min 4 ingredients 6 slices bacon, cooked, cut into bite-sized pieces 20 large croutons - store bought or homemade 1 head of lettuce - like spinach or romaine, chopped 1/2 pint cherry tomatoes, halved For the dressing: 1/2 C sour cream 2 T. lemon juice 1/2 t salt 1 clove garlic, chopped 2 T grated Parmesan cheese To make dressing: whisk together the sour cream, lemon juice, Parmesan cheese, salt, and garlic. Whisk until smooth. In a large salad bowl, combine the lettuce, tomatoes, bacon, and croutons. Drizzle with the dressing, toss to mix, and serve. 4

chicken rice salad 15 min 6 ingredients 1 small box Reese's wild rice, made according to package directions (apprx 4 ounces) 1 C diced cooked chicken 1 C sliced water chestnuts 1 C green grapes cut in 1/2 3/4 C cashews - add right before serving 1/2 C - 3/4 C mayonnaise - depending on taste 1 t Lawrey's seasoning salt Mix all ingredients together except grapes and cashews. Mix cashews and grapes in right before serving to keep cashews crunchy and grapes from "weeping". 5

tossed cranberry salad 15 min 6 ingredients The salad: 2-3 C romaine lettuce or spring greens or a mixture of both 1/2 Honey crisp apple, unpeeled,cut in small chunks and placed in a bath of water and a little lemon juice until ready to assemble 1/2 C dried cranberries 1/4 C dried apricots 1/4 C pecan halves 1/4 C cheddar cheese, cut in very small chunks For dressing: 1/3 C cranapple juice (or apple cider) 1 T Dijon mustard 1 t freshly minced garlic 1 T maple syrup (or pancake syrup) 1/8 t black pepper 1/4 t sea salt or table salt "For Salad: Add all ingredients in salad bowl and give it a toss. Refrigerate for optimum crispness. Take out directly before serving. For Dressing: Whisk all ingredients together. Serve in a separate container or toss in the salad directly before eating. 6

buffalo chicken salad 15 min cook time 10 min 4 Ingredients 2 boneless skinless chicken breasts, cut into 1" pieces 1/2-3/4 C Franks red hot sauce, divided 1 avocado, diced 12-16 oz fresh lettuce] 1 fresh tomato, diced 1/4 C green onions, sliced 1/4 C croutons 1/2 C favorite Ranch dressing Add cubed chicken and approximately 1/2 C Franks hot sauce to a bowl. Cover and refrigerate for 30 minutes. Preheat grill to 400 degrees. Place grill basket directly on grill. Add marinated chicken and grill for 10-12 minutes, stirring occasionally (if you don't have a grill basket, try using a bamboo skewer). Remove from grill and place chicken in a bowl, add remaining 1/4 C buffalo sauce. Combine lettuce with fresh tomato, croutons, green onions, and avocado. Add buffalo chicken and drizzle on Ranch dressing. Enjoy! 7

italian salad 10 min 6 Ingredients 2 Large romaine hearts, chopped 1 celery rib, thinly sliced 1/2 small red onion, thinly sliced 1/2 C cherry tomatoes, halved 1/4 C pitted black olives 8 pepperoncini 1 C Parmigiano-Reggiano cheese, shaved Dressing 1 garlic cloves smashed 2 T mayonnaise 2 T red wine vinegar 1/2 t dried oregano 1/4 C plus 2 T extra virgin olive oil salt and freshly ground pepper to taste Add salad ingredients to large bowl. Just before serving pour dressing over top of salad and toss well. Serve right away. 8

golden velvet soup 25 min cook time 1 hour 6 Ingredients 2 butternut squashes (4 C puree) 2 C skim milk 2 T packed brown sugar (or stevia) 2 T butter 1/2-1 C (or more) half and half salt and pepper to taste Preheat oven to 350 degrees. Boil 4 C water. Halve squashes lengthwise. Scoop out seeds. Place halves, cut sides down, in a shallow baking dish. Place baking dish on center rack. Pour in boiling water to reach 1/2 inch from bottom of dish. Bake for about 45 minutes, or until necks of squashes are tender. When tender, remove from baking dish and cool. Scoop flesh from cooled squashes into a food processor or blender. Process until smooth and satiny. Transfer pureed squash to a large saucepan. Stir in milk, brown sugar, a pinch of nutmeg, butter, and salt and pepper to taste. Gently bring to simmering. Stir in half and half or milk until thick and creamy, heating thoroughly. 10

taco soup 5 min cook time 20 min 6 Ingredients 1/2 lb - 1 lb ground beef, cooked 1 can corn with liquid 2 cans of diced tomatoes with liquid 1 can of Rotel with liquid 1 can kidney beans 1 can pinto beans 1 can black beans, drained and rinsed 1 pkg ranch seasoning 1 pkg taco seasoning Brown hamburger and drain grease. Add all ingredients (including cooked hamburger) to large pot stir together and heat until warm. Top with shredded cheese if desired. 11

oven beef stew 5 min cook time 5 hours 8 Ingredients 1-2 pounds stew meat 2 C diced carrots 2 C diced celery 1 onion, chopped 3-4 potatoes, pealed and chunked 2 C tomato juice salt and pepper to taste 2 T minute tapioca (can substitute flour) 1 T brown sugar Put all ingredients in dutch oven with tight lid. Bake at 250 degrees for 5-51/2 hours without disturbing. 12

chicken tortilla soup 5 min cook time 1 hour 8 Ingredients 1/2 C onion, chopped 2 cloves garlic, minced 1 can Rotel tomatoes 2 T oil 1 28 oz can crushed tomatoes 3 C chicken broth 1 1/2 C chicken, cooked and shredded 1 1/2 t cumin 2 t chili power salt to taste 1/4 t pepper 2 t Worcestershire sauce 1 can black beans 1 can corn, drained (optional) Toppings: tortilla chips sour cream cheddar cheese cilantro In a soup pot, heat oil over medium-high heat for 1-2 minutes. Saute onion and garlic over medium-high heat until soft, about 1-2 minutes. Add Rotel, tomatoes, chicken broth, chicken, corn, beans, and seasonings. Simmer for an hour. Top soup with chips, sour cream, cheese, and 13

simple tomato soup cook time 5 min 2 Ingredients 8 oz tomato sauce 1 C of water or chicken broth 2-4 T of heavy cream Pour the tomato sauce into a saucepan. Add water (or chicken brother) and heavy cream. Heat through until simmering. Optional: Add cayenne pepper, black pepper, and Truvia to season. Top soup with grated cheese. 14

vegetable beef soup 15 min cook time 1 hour 8 Ingredients 1/3 C chopped onion 1 garlic clove, minced 2 T olive oil 1-2 lbs. ground beef - formed into small meatballs 1 beef bouillon cube 3 carrots - peeled and chopped 4 potatoes - peeled and coarsely chopped 2 celery stalks - chopped 1 C kale, chopped 1 large can tomato juice 1 can corn 1 t Italian seasoning instructions In a heavy soup pot, coat bottom lightly with olive oil. Add onion and garlic then add meatballs. I cover with the lid and cook for about 10-15minutes or until meat is no longer pink. Then add beef bouillon, vegetables, and seasoning. Simmer for 1 hour.. 15
