Juicing is one of the four essential components of the Gerson Therapy TM. Taken hourly, fresh and organic juices flood the body with live, active nutrients, eliminating toxins and restoring cellular function. In his groundbreaking book A Cancer Therapy Results of Fifty Cases, Dr. Max Gerson wrote that two machines are required, a separate grinder and a separate press, for the correct preparation of the juice. These are findings of experiences over many years in which patients who used a one-unit machine had no success." 4 JUICER SETUP: WHAT YOU NEED
5 When your PURE Juicer arrives at your doorstep, move the box close to the counter where it will sit. We recommend putting it near your kitchen sink. For juicing for the Gerson Therapy TM we recommend using juice grid #10 or 12. In addition to the PURE Juicer itself you will need press cloths and/or bags. Since therapeutic juicing is basically recipe juicing we recommend using the press bags, but experiment for yourself to see what you like best. The PURE Juicer comes with a set of cloths and bags so you can try them out and see what works best for you. When you set-up everything to juice, you will also need a stainless steel baking sheet or lasagna pan to catch any juice and to keep your countertop clean. We like to use a Mason jar to catch the juice, which can conveniently double as your drinking glass.
28 6 PREPARING WASHING Always buy fresh organic fruits and vegetables as these will offer the most nutrition. Fill your sink or a stainless steel bowl with distilled water and wash your produce. Distilled water by itself is enough but you can add a couple drops of Lugol s for its disinfecting benefits. Adding apple cider vinegar is also a good option. Make sure you rinse and wash all produce thoroughly, especially salad that may contain sand and pebbles, to prevent damage to the cutter. You may want to use a towel or salad spinner to dry off your produce. Wash and brush carrots. Cut off their ends, but do not peel them. When preparing for the day it is helpful to wash all the produce and make individual portions for each juice.

8 PREPARING (continued) Store the individual produce portions in the food safe PURE press bags and keep them in the refrigerator until it is time to juice them. Cloth and bags will naturally stain. We recommend to use the same bags for the same kind of juice. Green bags for green juice and orange bags for carrot/ apple and carrot juice. GERSON GIRLS We like to keep many press bags on hand. When prepping the produce for the day, we portion the produce per juice and store it in the bag in the refrigerator. When it is time to juice, you just need to grab your bag. Take out the produce and hang the bag on the tray holder. This way you can use one bag for storing, catching the pulp and pressing. www.gersongirls.com

10 THE PRESS CLOTH PURE Juicers has done some long-overdue research in the field of filter material used in press cloths and bags. We have developed two new materials: LSHP (low-stick high-porosity) Food-safe Nylon MSHP (minimum-stick high-porosity) Food-safe Polypropylene Both are advances in the state-of-the-art. Neither cloth is prone to plugging and both easily release the pulp. PURE press cloths are designed for the demands of high-pressure hydraulic pressing and designed to fold easily, trap fiber, yet freely pass the juice and easily release the pulp. Synthetic yarns are best, as they are twice as strong as cotton or hemp, will not absorb juice and will hold up over time to the extreme pressure of hydraulic pressing. Cloths versus Bags? This is a matter of personal preference and truly the only way to know is to use both and decide.
11 USING THE PURE PRESS CLOTH: 1. Scoop 250-500 ml / 1-2 cups of pulp onto the center of the press cloth. 2. Fold the bottom third up, and tuck the edge under to make a snug press pack. 3. Fold the right and left thirds over the center. 4. Fold the pouch over the empty folds; the pulp on top and the folds down. 5. Place up to three cloths into the press chamber. 12 THE PRESS BAG Our PURE press bag is designed to fit the large PURE Press. This makes the bags slightly larger than traditional press bags. Bags have one less step if hung from the grid tray. Grind the produce straight into the bag and transfer it over to the press. To wash, simply turn the inside out. Rinse the bag and press the water out. PURE Bags are designed with extra-strong seams, sewn to commercial standards for strength. Please be careful to properly fold so the seam is not overloaded.
13 USING THE PURE PRESS BAG: Proper use is essential to prevent seam failure when pressing: 1. The long seam must face in when folding the bag. 12:00 1:00 PURE press speed adjustment 2. All pulp is pressed in the middle fold of the bag. Do not allow any pulp to enter into the bottom or top folds of the press bag. Grind pulp into the press bag. Flip the bag over, place the folds down. Insert the bag into the press chamber. 2 cups of pulp per bag Fold the press bag, seam to the inside, pulp to the middle fold.
14 JUICING 1. Prior to turning on the motor, always confirm that all parts are correctly assembled and that the press handle is towards you in the press-down position. 2. Hang the press bag on the grid tray holder to catch all the ground up produce OR place the open cloth into a lasagna pan so the ground up produce can fall straight on the cloth. 3. Turn on the motor and start feeding your produce into the feed tube. To prevent any possible kickback or spray, feed the produce with one hand, covering the opening of the tube with the other hand, palm down. Use the pusher to push the produce all the way down the feed tube. NEVER insert your fingers into the feed tube. 4. Take the bag off, fold it and transfer it over onto the press. 5. Have a Mason jar ready to catch the juice. Then press until done and release the press. Turn the motor off. Drink your juice right away. Drink slowly. Chew your juice as digestion begins in the mouth. 6. Turn the press bag inside out and use the pulp for your compost OR unfold the cloth, let the pulp slide out and use it for your compost. RECIPES On the full therapy, Gerson Patients usually drink 13 x 8oz fresh juices daily: Rule of Thumb: To make 8 oz of juice you will need approximately 12 oz of produce. 4 green 5 carrot/apple 3 carrot 1 orange In cases of diabetes, arthritis and inflammatory/ allergic conditions, Gerson Practitioners often substitute the orange juice for another carrot/ apple juice. 28 18 GREEN JUICE Ingredients for 8 oz / 236 ml Green Juice: 6-7 big leaves (with stalk) of romaine Red leaf lettuce 2-3 leaves of escarole 2-3 leave of endive 3-4 leaves of red cabbage 2-3 young inner beet tops (inner leaves) 2 leaves of Swiss chard A quarter of a green bell pepper 3-4 leaves of watercress 1 medium green apple, Granny Smith or as sour and hard as possible
19 INSTRUCTIONS Try to include as many of the ingredients as possible and do not substitute. Add enough of the approved ingredients to end up with an 8 ounce green juice. Wash all the produce. Cut the apples and leave the core and the seeds out. Grind your produce into the wet pulp while feeding your produce in the feed tube. Always rotate your produce, since mixing the malic acid from the apple with any vegetable boosts all nutrients above what they measure individually. You can roll up smaller produce into the bigger leaves. Insert the pusher into the feed tube and turn the juicer on. Push the produce through. When using a press bag, the wet pulp falls directly into the bag. Fold the bag and transfer it over to the press. When using a press cloth, the pulp falls on the open cloth. Fold the cloth and transfer it over to the press. Place the bag or cloth in the middle of the tray. Press and Enjoy!
28 20 CARROT/APPLE JUICE Ingredients for 8 oz / 236 ml Carrot/Apple Juice: 3-4 organic carrots 1 large green apple, Granny Smith or as sour and tart as possible
21 INSTRUCTIONS Wash and brush the carrots. Do not peel them. Cut the ends of the carrots off. Wash the apples and remove the stem. Cut the apples and leave the core and the seeds out. Grind the carrots and apples into the wet pulp while filling the feed tube with carrots and apples. Always rotate your produce, since mixing the malic acid from the apple with any vegetable boosts all nutrients above what they measure individually. Insert the pusher into the feed tube and turn the juicer on. Push the carrots and apples through. Press and Enjoy!
28 422 CARROT JUICE Ingredients for 8 oz / 236 ml Carrot Juice: 5-6 organic carrots Wash and brush the carrots. Do not peel them. Cut the ends of the carrots off. Grind the carrots into the wet pulp while filling the feed tube with carrots. Insert the pusher into the feed tube and turn the juicer on. Push the carrots through. Press and Enjoy! ORANGE JUICE Ingredients for 8 oz / 236 ml Orange Juice: 2 organic oranges Unlike the other juices for the Gerson Therapy TM, the orange juice should not be prepared in your two-stage juice machine so the skin of the fruit to does not release any aromatic oils, which can interfere with the Gerson Therapy. Instead of using your PURE Juicer for the morning juice, use a simple manual reamer-style citrus juicer.
235 JUICE ON THE GO A lot of people on the therapy have to leave the house to go to work. We often get asked if juices can be stored for later use. It's best to drink green juice fresh, but if your work schedule doesn t allow that you can double up your green juice and drink 16 ounces before you leave the house and another 16 ounces when you return. Carrot and carrot / apple are the only juices you can take to go. We recommend a thermos with a stainless steel lid on the inside, so your juice does not come in contact with any kind of plastic. Another helpful tip is to cut a stainless steel straw to size, which can stay inside your thermos and is less messy than drinking straight from a thermos. We recommend making four eight ounce servings of carrot/apple juice at a time. Drink one right before you leave the house and take the other three servings with you. This will make it possible to spend four hours away from home. Always check and confirm your schedule with your Gerson Practitioner.

25 CLEANING CLEANING IN BETWEEN JUICES We like to keep a bowl of distilled water and some drops of food grade 3% hydrogen peroxide next to the sink. During the day, place your used bags in the bowl. You can pour an eight ounce Mason jar filled with water into the feed tube to wash the tube and the grinder in between juices. Just make sure the power is off before doing so. Rinse the press plate right after pressing to prevent any juice from sticking to the tray. Start every press with a clean tray. CLEANING AT THE END OF THE DAY Take the bowl with all the bags / cloths and clean them with water. You can brush off any remaining pulp and use distilled water for the last rinse. Fold cloth/bags and use the press to squeeze out any remaining water. Put the cloth/bags in a zip log and store in the freezer for the next day. At the end of the day you need to take the juicer apart to clean it thoroughly. You can clean it by hand with a sponge or brush and a little dish soap or put it in the dishwasher. Pay special attention to the cutter and feed tube and brush and scrub them off thoroughly to prevent residue build up. This will make you juicer look as new. Never use steel wool, as it will leave permanent marks on the juicer and its parts. Let all parts dry completely before you put the juicer together so it is ready for the next day of continuous juicing and healing.
