Loaded Breakfast Loaf Jeannette Groves Ooltewah, TN My husband and I love to cook together! We re always creating new dishes. This one s a keeper. 8 eggs, beaten 3 c. self-rising flour 1 T. powdered sugar 1 T. baking powder 3/4 c. shortening 1-3/4 c. buttermilk 1 thick slice cooked ham, diced 4 slices cheese 1 egg, beaten In a greased skillet over medium heat, stir eggs and cook until scrambled; set aside. In a bowl, combine flour, sugar, baking powder, shortening and buttermilk. On parchment paper, knead dough about a dozen times, or until no longer sticky; roll out to a 12-inch square, trimming edges if needed. Spread scrambled eggs, ham and cheese evenly over dough; roll up jelly-roll style. Fold in ends; lift parchment paper and transfer to a lightly greased 13"x9" baking pan. Brush loaf with beaten egg. Bake, uncovered, at 375 degrees for 20 to 25 minutes, until golden. Slice to serve. Serves 6 to 8. Len s Poached Ham Len Walker Ontario, Canada Enjoy the juiciest ham you will ever taste! I like to use a hickory-smoked ham but any good quality bone-in ham will work. This recipe is for a half ham. Just double the recipe for a whole ham. 10 to 12-lb. smoked ham 1 c. dark brown sugar, packed 2 8-oz. jars peach marmalade or jam 1 T. Dijon mustard 1/2 c. ginger marmalade 1/2 c. cider vinegar 1 T. honey 1-1/2 c. dry white wine 10 4-inch cinnamon sticks, broken in half Garnish: green leaf lettuce Place ham in a very large stockpot; cover with water. Over high heat, bring to a boil. Reduce heat; simmer, uncovered, for one hour. Combine remaining ingredients except wine, cinnamon sticks and garnish in a saucepan. Cook and stir over medium heat until a glaze forms; remove from heat and keep warm. Remove ham carefully from pot; transfer to a rack in a large roasting pan. Push cinnamon sticks into the ham, creating a porcupine. Drizzle wine over ham first, then follow with glaze. Bake, uncovered, at 375 degrees for 45 minutes. Remove cinnamon sticks before slicing. To serve, arrange lettuce on a serving dish; place ham slices on top. Serve with pan drippings spooned over top. Serves 18 to 20. Bake up a quiche with leftover ham, chopped veggies and cheese! Put about a cup of ingredients in a pie crust, then whisk together 3 eggs and a small can of evaporated milk. Pour into crust and bake at 400 degrees until set, about 20 to 25 minutes. Scrumptious any time of day! 3
Cobblestone Cookies Brenda Huey Geneva, IN I received this excellent cookie recipe from a friend. They ve since become the signature cookie of my bakery, the Cobblestone Bakery in Berne, Indiana. It is such a tasty and different cookie! 1-1/2 c. shortening 1/4 c. milk 3 c. sugar 1-1/2 c. cream cheese, softened 1 t. vanilla extract 3-1/2 c. all-purpose flour 1 c. chopped pecans In a large bowl with an electric mixer on medium speed, combine shortening, milk, sugar, cream cheese and vanilla. Add flour and pecans. Drop by rounded teaspoonfuls onto ungreased baking sheets. Bake at 325 degrees for 18 to 20 minutes. Cool on wire racks; frost with Cobblestone Frosting. Makes 3 dozen. Cobblestone Frosting: 1/2 c. shortening 2 c. powdered sugar 1/2 t. salt 1/4 c. milk 1/2 t. almond extract In a bowl, combine all ingredients; mix well. Enjoy fresh-baked cookies in minutes by freezing some of your cookie dough! Simply drop rounded spoonfuls on a parchment-lined baking sheet, freeze until firm and transfer to a plastic zipping bag. When you re ready to bake, just add a few extra minutes of baking time. 4
