Questions and Answers 1. Do bidders have the option to provide a bid for the premium services/suite catering only? No, as per Section 1.1 of the ITN: This ITN consists of two parts: 1) Base contract for concession services to the general admission areas and 2) (OPTIONAL) Catering/Premium services. Respondents must bid on the Base contract to be considered for award. Catering/Premium services is OPTIONAL and will not be considered as a stand-alone offer. 2. Are there any specific facility arena investment needs that have been identified by the University? None at this time. This is to be part of the suggestions made by the proposers based on what has been seen and what the proposer is willing to improve/ invest/ provide. Note: If the catering component is awarded as part of the contract, and it is awarded to a party other than the current caterer, there may be an investment required to build out an onsite catering kitchen and this should be presented as part of the proposal, if applicable. 3. If there were to be a change of contractor, what equipment would be removed by current contractor? Very little essential concessions equipment belongs to the current concessionaire. There may be some support equipment, such as carts that may go, but most all equipment in the stands is owned by UCFCC. 4. Is there any anticipated significant increase/decrease anticipated number of events such as trade shows, career, events, and religious conferences in the next two years? We always strive to host as many events as we can and see no changes in that philosophy. Depending on concert tours or other events schedules/ routes, some years are better or not as busy as others. 5. Was there a significant event or series that increased revenues to $1,025, 752 in FY 16? No significant event or series that stands out at this time. To expedite this process, we are unable to research this at this time.
6. Are there campus/community groups that concessions coordinates with to provide labor? If so, can those groups please be identified? This is at the discretion of the concessionaire. It would be up to the concessionaire to work with local NPO s, student groups, community, etc. to staff. 7. Are there specific local and branded products the University wishes to continue relationships with to support local business? None in particular; however, please note, as listed in the ITN, Coca Cola has a campus exclusive contract. 8. Can you provide a list of current type/number of vehicles used by concessions? One forklift, one Cushman cart/ Gator. 9. Will the Catering kitchen be ready for October 1st service? If applicable, this would be up to the awarded contractor to work with UCFCC and the university s building and construction department to complete the build out. UCFCC has no imminent plans to build out the catering kitchen without an award to a different caterer. 10. Are all the concession stands currently providing service? If not, why not? Some are closed at certain times depending on the show/event set- up, attendance, etc. but all are operational. 11. What is the event schedule for October 2018-September 2019? Undetermined. There will be arena/venue staples such as UCF Commencements, UCF basketball, UCF Volleyball, high school graduations, camps, homecoming events, concerts/ family shows, career fairs and other flat floor events. 12. Does the awarded vendor have any input on the design of the catering kitchen? Yes. They will collaborate with UCFCC and UCF Facilities Planning and Construction to design and build out.
13. Does the University allow any food vendors in the excluded areas such as mobile vendors and/or food trucks in the parking lot? If so, how have these services impacted the onsite concessionaire? Does the concessionaire have the opportunity to participate in these activities? Not sure what the excluded area is, but typically UCFCC does not allow food trucks/ mobile vendors at Knights Plaza and certainly does not allow mobile vendors to service indoor arena/ venue events, unless specifically authorized by the official UCFCC Concessionaire. UCF allows mobile vendors elsewhere on campus for certain events and under restricted conditions. Concessionaire may apply to UCF to provide food trucks for its events through UCF Business Services.
